Description
Claims (38)
- 閉じ込められた加圧気体を含有する複数の内部空隙を有する炭水化物粒子を含む、起泡粉末状無タンパク質可溶性組成物を含み、
前記組成物は、乾燥重量ベースで炭水化物を99%よりも多く含み、且つタンパク質を含まないことを特徴とする起泡組成物。 - 粉末状無タンパク質可溶性組成物は、乾燥重量ベースで炭水化物を本質的に100%含むことを特徴とする請求項1に記載の起泡組成物。
- 可溶性組成物は、液体に溶解したときに、前記組成物1g当たり気体を少なくとも2cc放出することを特徴とする請求項1に記載の起泡組成物。
- 可溶性組成物は、液体に溶解したときに、前記組成物1g当たり気体を少なくとも5cc放出することを特徴とする請求項1に記載の起泡組成物。
- 可溶性組成物は、糖、多価アルコール、糖アルコール、オリゴ糖、多糖、デンプン加水分解生成物、ガム、可溶性繊維、化工デンプン、化工セルロース、およびこれらの混合物からなる群から選択されることを特徴とする請求項1に記載の起泡組成物。
- 前記デンプン加水分解生成物は、マルトデキストリン、グルコースシロップ、コーンシロップ、高マルトースシロップ、高フルクトースシロップ、およびこれらの混合物からなる群から選択されることを特徴とする請求項5に記載の起泡組成物。
- 前記可溶性組成物は、非タンパク質界面活性剤をさらに含むことを特徴とする請求項1に記載の起泡組成物。
- 前記非タンパク質界面活性剤は、乳化剤であることを特徴とする請求項7に記載の起泡組成物。
- 炭水化物は、99から99.9重量%の量で存在し、乳化剤は、0.1から2重量%の量で存在することを特徴とする請求項8に記載の起泡組成物。
- 炭水化物は、99から99.8%の量で存在し、乳化剤は、0.2から2%の量で存在することを特徴とする請求項8に記載の起泡組成物。
- 前記乳化剤は、ポリソルベート、スクロースエステル、ステアロイルラクチレート、モノ/ジグリセリド、モノ/ジグリセリドの酒石酸ジアセチルエステル、リン脂質、アルギン酸プロピレングリコール、親油性化工デンプン、およびこれらの混合物からなる群から選択されることを特徴とする請求項8に記載の起泡組成物。
- 前記親油性化工デンプンは、オクテニルスクシネート置換デンプンであることを特徴とする請求項11に記載の起泡組成物。
- 乳化剤は、ポリマー乳化剤と低分子量乳化剤との混合物であることを特徴とする請求項8に記載の起泡組成物。
- ポリマー乳化剤は親油性化工デンプンであり、低分子量はステアロイル乳酸ナトリウムであることを特徴とする請求項13に記載の起泡組成物。
- ポリマー乳化剤はアルギン酸プロピレングリコールであり、低分子量乳化剤はポリオキシエチレンソルビタンモノラウレートであることを特徴とする請求項14に記載の起泡組成物。
- 前記可溶性組成物は、分散した脂肪をさらに含むことを特徴とする請求項1に記載の起泡組成物。
- 乾燥重量ベースで炭水化物を99%よりも多く含み、且つタンパク質を含まない無タンパク質可溶性起泡粒子を含む、起泡組成物であって、
前記起泡粒子は、閉じ込められた加圧気体を含有する複数の内部空隙を有し、
少なくともガラス転移温度となる温度にまで前記粒子を加熱する前にまたは加熱する間、大気圧を超える外部気体圧力に前記粒子を曝し、次いで前記内部空隙内に前記加圧気体を捕捉するのに有効な手法で、前記外部気体圧力を解除する前にまたは解除する間、前記ガラス転移温度よりも低い温度にまで前記粒子を冷却することによって形成された粒子
を含むことを特徴とする起泡組成物。 - 前記起泡粒子は、液体に溶解したときに、前記組成物1g当たり気体を少なくとも2cc放出することを特徴とする請求項17に記載の起泡組成物。
- 起泡粒子は、液体に溶解したときに、前記組成物1g当たり気体を少なくとも5cc放出することを特徴とする請求項18に記載の起泡組成物。
- 可溶性無タンパク質炭水化物および界面活性剤を含む粒子であって、液体に溶解したときに泡を形成する加圧気体を含有する、複数の内部空隙を有する粒子を含むことを特徴とする粉末状起泡組成物。
- 粒子は、前記粒子1g当たり気体を少なくとも2cc放出することを特徴とする請求項20に記載の粉末状起泡組成物。
- 粒子は、液体に溶解したときに前記粒子1g当たり気体を少なくとも5cc放出することを特徴とする請求項21に記載の粉末状起泡組成物。
- 前記炭水化物は、糖、多価アルコール、糖アルコール、オリゴ糖、多糖、デンプン加水分解生成物、ガム、可溶性繊維、化工デンプン、化工セルロース、およびこれらの混合物からなる群から選択されることを特徴とする請求項20に記載の粉末状起泡組成物。
- 前記デンプン加水分解生成物は、マルトデキストリン、グルコースシロップ、コーンシロップ、高マルトースシロップ、高フルクトースシロップ、およびこれらの混合物からなる群から選択されることを特徴とする請求項23に記載の粉末状起泡組成物。
- 前記界面活性剤は乳化剤であることを特徴とする請求項20に記載の粉末状起泡組成物。
- 前記乳化剤は、ポリソルベート、スクロースエステル、ステアロイルラクチレート、モノ/ジグリセリド、モノ/ジグリセリドの酒石酸ジアセチルエステル、リン脂質、アルギン酸プロピレングリコール、親油性化工デンプン、およびこれらの混合物からなる群から選択されることを特徴とする請求項25に記載の粉末状起泡組成物。
- 前記親油性化工デンプンは、オクテニルスクシネート置換デンプンであることを特徴とする請求項26に記載の粉末状起泡組成物。
- 粒子は、分散した脂肪をさらに含むことを特徴とする請求項20に記載の粉末状起泡組成物。
- 無タンパク質可溶性起泡粒子は、乾燥重量ベースで炭水化物を本質的に100%含むことを特徴とする請求項17に記載の粉末状起泡組成物。
- 乾燥重量ベースで炭水化物を99%よりも多く含み、タンパク質を含まず、かつ内部空隙を有する無タンパク質可溶性起泡粒子を20〜200℃の温度に加熱するステップと、
無タンパク質可溶性起泡粒子に、大気圧を超える外部圧力を加えるステップと、
無タンパク質可溶性起泡粒子を冷却するステップと、
外部気体圧力を解除し、それによって、内部空隙に保持される加圧気体をもたらすステップと
を含むことを特徴とする起泡組成物の製造方法。 - 前記外部圧力を加えるステップは、粒子を加熱する前に実施することを特徴とする請求項30に記載の方法。
- 前記外部圧力を加えるステップは、粒子を加熱する間に実施することを特徴とする請求項30に記載の方法。
- 前記無タンパク質可溶性起泡粒子を加熱するステップは、粒子の少なくともガラス転移温度である温度で実施することを特徴とする請求項30に記載の方法。
- 前記冷却するステップは、前記外部圧力を解除するステップの前に実施することを特徴とする請求項33に記載の方法。
- 前記冷却するステップは、前記外部気体圧力を解除するステップの間に実施することを特徴とする請求項33に記載の方法。
- 無タンパク質可溶性起泡粒子を形成するために、炭水化物を含有する水溶液を噴霧乾燥するステップをさらに含むことを特徴とする請求項30に記載の方法。
- 前記噴霧乾燥するステップは、水溶液に気体を注入することを含むことを特徴とする請求項30に記載の方法。
- 前記噴霧乾燥するステップは、水溶液に気体を注入せずに実施されることを特徴とする請求項30に記載の方法。
