Description
ここでいう未化工でん粉としては、例えば馬鈴薯でん粉、タピオカでん粉、サツマ芋でん粉等の地下系でん粉;コーンスターチやワキシーターチのトウモロコシでん粉、小麦粉でん粉、米でん粉等の地上系でん粉等が挙げられる。
当該リン酸架橋でん粉の粘度は、適度なバッター形成の点から、好ましくは200BU以上である(測定方法:ブラベンダーアミログラフ試験)。
ここで、エーテル化としては例えばヒドロキシプロピルエーテル化やヒドロキシエチルエーテル化等のヒドロキシアルキル化やカルボキシメチルエーテル化等が挙げられ、また有機酸によるエステル化としては、例えば酢酸エステル化やオクテニルコハク酸エステル化等が挙げられる。
この膨張剤のミックス全量中における含有率は、好ましくは2〜2.5質量%である。
この糖類のミックス全量中における含有率は、好ましくは4〜20質量%である。
具材としては、特に限定はなく、例えば肉類、魚介類、野菜類等が挙げられる。
下記表1の参考例1に示す、混合でん粉94質量部、ベーキングパウダー(商品名:アイコクベーキングパウダー NE−280、大宮糧食工業株式会社製)2質量部、ショ糖(商品名:グラニュー糖GH40、三井製糖株式会社製)4質量部を配合し、調製した水溶きタイプの唐揚げミックス100質量部に、水100質量部を加えて調製したバッターを鶏肉(具材)につけ、175℃のサラダ油で4分間油ちょうして、竜田揚げを得た。
混合でん粉(100質量%):エーテル化架橋馬鈴薯でん粉(商品名:ファリネックスVA70X、松谷化学工業株式会社製、粘度5175cps)90質量%:リン酸架橋タピオカでん粉(商品名:パインベークCC、松谷化学工業株式会社製、BU300 粘度62cps)10質量%。
表1に示すように実施例2〜5、比較例1〜2も同様に行った。
外観:表面の見栄え
5点:表面の凸凹感(散り)及び竜田揚げ様の粉吹き感が非常に良い
4点:表面の凸凹感(散り)及び竜田揚げ様の粉吹き感が良い
3点:表面の凸凹感(散り)及び竜田揚げ様の粉吹き感がやや良い
2点:表面の凸凹感(散り)及び竜田揚げ様の粉吹き感がやや少ない
1点:表面の凸凹感(散り)及び竜田揚げ様の粉吹き感がない
食感:サクミ
5点:サクミが非常に良く、衣が軽い
4点:サクミが良く、衣が軽い
3点:サクミがやや良く、衣が軽い
2点:サクミが悪く、衣がややべたつく
1点:サクミがなく、衣がべたつく
混合でん粉の配合割合を表2に示すように調製し、実施例4と同様に水溶きタイプの唐揚げミックスを調整し、これを用いて得られた唐揚げの外観及び食感の評価を行った。
また、混合でん粉中の各でん粉の配合割合を表3に示すように調製し、実施例4と同様に水溶きタイプの唐揚げミックスを調整し、これを用いて得られた唐揚げの外観及び食感の評価を行った。
さらに、ペーキングパウダーの配合割合を表4に示すように調製し、実施例4と同様に調製水溶きタイプの唐揚げミックスを調整し、これを用いて得られた唐揚げの外観及び食感の評価を行った。
また、ショ糖の配合割合を表5に示すように調製し、実施例4と同様に水溶きタイプの唐揚げミックスを調整し、これを用いて得られた唐揚げの外観及び食感の評価を行った。
Claims (3)
- 未化工の地下系でん粉を含まず、エーテル化架橋馬鈴薯でん粉とリン酸架橋でん粉とを1:3〜3:1の配合質量比で含有し、且つ当該リン酸架橋でん粉がリン酸架橋馬鈴薯でん粉及び/又はリン酸架橋タピオカでん粉であることを特徴とする水溶きタイプの唐揚げミックス。
- 請求項1に記載の水溶きタイプの唐揚げミックスと、水とを含有することを特徴とする唐揚げバッター。
- 前記請求項1に記載の水溶きタイプの唐揚げミックス又は前記請求項2に記載の唐揚げバッターを用いて得られた唐揚げ。
