Description
この「製品3」にブルーベリーエキスを加えて「製品5」が得られ、これらの組合せで多岐にわたる本発明の製品群を製造することができる。
20時間後、麹と黒大豆の煮汁の懸濁液に黒酢を容量に対して、7.5%になるように加えた。これを濾過して、濾液(液体)と残渣(固体)に分離した。平均で、濾液は原料1000gから約1800ml、残渣は約400〜600g得られた。
得られた濾液と残渣より得られた甘酢を混合して、クエン酸2.1%、グルコース31%、アントシアニン4.2mg/100mlを含有するクエン酸・酢酸含有飲料とした。これは図2中の製品3に相当する。
20時間後、麹と黒大豆の煮汁の懸濁液に黒酢を容量に対して、7.5%になるように加えた。これを濾過して、濾液(液体)と残渣(固体)に分離した。平均で、濾液は原料1000gから約1800ml、残渣は約400〜600g得られた。
Claims (3)
- 白米と黒米の混合米を原料とし、60〜120時間、培養した米麹に黒大豆の煮汁を加えて発酵させ、クエン酸を煮汁中に溶出させると同時に麹を自己消化させ、
黒大豆の煮汁に含まれる主にアントシアニンの成分により、酸性下で濃い赤味を呈するクエン酸含有懸濁液とし、
該クエン酸含有懸濁液を濾過して濾液と濾過残渣とし、
該濾過残渣をアルコール発酵させた後に、酢酸発酵させて濾過して得られた甘酢液体を前記濾液に対して混合したクエン酸・酢酸含有濾液をベースに調製して飲料とするクエン酸・酢酸含有飲料の製造方法。 - 請求項1記載のクエン酸・酢酸含有含有濾液とブルーベリー混合液体をベースに調製して飲料とするクエン酸・酢酸含有飲料の製造方法。
- 請求項1記載のクエン酸・酢酸含有濾液とブルーベリーペーストをベースに調製してアルコール含有飲料とするクエン酸・酢酸含有飲料の製造方法。
