Claims (23)
- 還元物質により架橋されたタンパク質、固形植物性脂肪および任意の補助剤のマトリックス中にカロテノイドおよび/または脂溶性ビタミンを含む食品組成物。
- 還元物質により架橋されたタンパク質、固形植物性脂肪および任意の補助剤のマトリックス中にカロテノイドを含む食品組成物。
- タンパク質がゼラチンである、請求項1または2記載の組成物。
- 還元物質が還元糖である、請求項1〜3のいずれか一項記載の組成物。
- マトリックスが5〜80重量%のタンパク質、5〜50重量%の還元物質および2〜30重量%の固形植物性脂肪を含む、請求項1〜4のいずれか一項記載の組成物。
- マトリックスが10〜40重量%のタンパク質、10〜35重量%の還元物質および5〜20重量%の固形植物性脂肪を含む、請求項1〜5のいずれか一項記載の組成物。
- 0.1〜30重量%のカロテノイドおよび/または脂溶性ビタミンを含む、請求項1〜6のいずれか一項記載の組成物。
- 1〜10重量%のカロテノイドおよび/または脂溶性ビタミンを含む、請求項1〜6のいずれか一項記載の組成物。
- カロテノイドが、α−もしくはβ−カロテン、8’−アポ−β−カロテナール、8’−アポ−β−カロテン酸エステル、カンタキサンチン、アスタキサンチン、リコペン、ルテイン、ゼアキサンチンまたはクロセチンあるいはそれらの混合物である、請求項1〜8のいずれか一項記載の組成物。
- 8’−アポ−β−カロテン酸エステルがエチルエステルである、請求項9記載の組成物。
- カロテノイドが、β−カロテン、ルテインまたはリコペンあるいはそれらの混合物である、請求項1〜10のいずれか一項記載の組成物。
- カロテノイドがβ−カロテンである、請求項1〜11のいずれか一項記載の組成物。
- カロテノイドが、リコペンとルテインとの混合物である、請求項1〜11のいずれか一項記載の組成物。
- 植物性脂肪が、ヒマワリ脂肪または硬化ナタネ油である、請求項1〜13のいずれか一項記載の組成物。
- グリセロールが補助剤として存在する、請求項1〜13のいずれか一項記載の組成物。
- 脂溶性ビタミンが、ビタミンA、ビタミンD、ビタミンEまたはビタミンKあるいはそれらの混合物である、請求項1記載の組成物。
- 請求項1〜16のいずれか一項記載の組成物を調製する方法であって、タンパク質、還元物質および任意の水溶性補助剤の水溶液を、カロテノイドおよび/または脂溶性ビタミン、固形植物性脂肪ならびに任意の脂溶性補助剤と一緒に乳濁物に形成すること;その乳濁物を乾燥粒子状形態に変換すること;およびその粒子を、タンパク質と還元物質との架橋を生じさせる条件に委ねることを含む方法。
- 食品用添加物としての請求項1〜16のいずれか一項記載の組成物の使用。
- 食品が植物性脂肪である、請求項18記載の使用。
- 食品がマーガリンである、請求項18記載の使用。
- 請求項1〜16のいずれか一項記載の組成物を含有する食品。
- 請求項1〜16のいずれか一項記載の組成物を含有する植物性脂肪。
- 請求項1〜16のいずれか一項記載の組成物を含有するマーガリン。
