Description

新的经稳定化处理的类胡萝卜素组合物
本发明涉及新的经稳定化处理的类胡萝卜素组合物。更具体说,本发明涉及含有类胡萝卜素和/或脂溶性维生素的组合物,其中所说的类胡萝卜素和/或脂溶性维生素存在于与还原性物质相交联的蛋白质、固体植物脂肪以及任选的辅剂的基质中。
本发明还涉及这种新组合物的制备方法以及该组合物作为添加剂、特别是作为食品、特别是植物脂肪的功能性保健成分的用途;本发明还涉及含有本发明新组合物的食品,特别是植物脂肪。
术语“功能性保健成分”是指用于补充或改进食品的营养价值的添加剂,如维生素强化用组合物。
本文中,术语“类胡萝卜素”包括天然或合成的胡萝卜素或者结构上相关的多烯化合物,这些化合物可以用作食品的功能性保健成分或着色剂,如α-或β-胡萝卜素;8′-阿朴-β-胡萝卜醛;8′-阿朴-β-胡萝卜酸(carotenoicacid)酯,如乙酯;角黄素;虾青素;番茄红素;叶黄素;玉米黄质或藏红花酸或其混合物。优选的类胡萝卜素是β-胡萝卜素、番茄红素和叶黄素及其混合物,特别是β-胡萝卜素。类胡萝卜素和/或脂溶性维生素在本发明组合物中的量可以是约0.1至约30wt.%,并且优选是约1至约10wt.%。
蛋白质优选是明胶,其可以是牛、猪或鱼的明胶或水解明胶。布卢姆凝胶强度测试值(bloom number)范围为差不多0至约300、特别是约50至约250的任何明胶都可以用于本发明的实践中。A型和B型明胶都可以使用。蛋白质在本发明组合物中的量可以是约5至约80wt.%,并且优选是约10至约40wt.%。
还原性物质优选是还原糖,如果糖、葡萄糖、乳糖、麦芽糖、木糖、阿拉伯糖、核糖,转化糖或者高果糖或葡萄糖糖浆。此外,醛类诸如戊二醛也可以用作还原性物质。
还原性物质在本发明组合物中的量可以是约5至约50wt.%,并且优选是约10至约35wt.%。
植物脂肪在室温(20-25℃)下应当是固体。这种脂肪的实例是植物脂肪和硬化(即,氢化)植物油,如硬化向日葵油(也称作向日葵脂肪)和硬化菜籽油。用于本发明的植物脂肪的其它实例是硬化蓖麻油、硬化棉籽油、椰子脂和棕榈脂肪。
固体植物脂肪在本发明组合物中的量可以是约2至约30wt.%,并且优选是约5至约20wt.%。
可以存在于本发明组合物中的脂溶性维生素是维生素A、D、E和K。这些维生素可以单独存在或以任何合意的组合形式存在或者以与如上所述的类胡萝卜素的组合形式存在。在一个优选的方面,本发明涉及含有类胡萝卜素的组合物,其中所说的类胡萝卜素存在于与还原性物质相交联的蛋白质、固体植物脂肪以及任选的辅剂的基质中。
本发明的组合物中还可以含有其它成分,例如辅剂,如抗氧化剂、乳化剂、保湿剂、增补剂、增溶剂和其它着色剂或具营养价值的试剂,例如,水溶性维生素,如维生素B1、B2、B6或C。抗氧化剂的实例是丁基化羟基苯甲醚、丁基化羟基甲苯和乙氧基喹。乳化剂可以是卵磷脂。保湿剂的实例是甘油、山梨糖醇、丙二醇和聚乙二醇。优选本发明的组合物中含有例如5wt.%至约30wt.%的甘油。
根据本发明,新组合物可以通过形成蛋白质、还原性物质和任选的水溶性辅剂的水溶液与类胡萝卜素和/或脂溶性维生素、固体植物脂肪以及任选的脂溶性辅剂的乳液,将乳液转化成干燥的颗粒形式并且将颗粒置于使蛋白质与还原性物质相交联的条件下来制备。
在本发明的一个实施方案中,将蛋白质,例如,明胶溶于水,如果必要的话,通过微微加热来溶解,然后将类胡萝卜素和其它脂溶性成分分散或乳化在蛋白质的溶液中。可以将类胡萝卜素和其它脂溶性成分原样添加,或者溶解在合适的有机溶剂例如氯化烃如氯仿中后添加。在添加类胡萝卜素以及其它任选的脂溶性成分之前或之后,可以将还原性物质以及任选的水溶性成分引入混合物中。将混合物通过常规技术例如搅拌、高压均质、高剪切乳化等匀化,并且通过喷雾到淀粉床上,将所得的乳液转化成干燥的颗粒形式,如粒状或珠状。如果使用了溶剂来溶解类胡萝卜素或任选的脂溶性试剂,则最好在喷雾干燥之前通过蒸发将这种溶剂从乳液中去除。
本方法中用来收集喷雾的乳液的淀粉可以完全由淀粉和/或化学改性淀粉的粉末组成。淀粉中还可以含有少量润滑剂或其它改性剂,如滑石、硅酸、面粉、氢化脂肪和高级脂肪酸的金属盐,例如,硬脂酸钙。淀粉粉末应当是基本上不溶于冷水的并且耐水润湿的;它应当具有明显的吸收和/或吸附水的能力并且应当是自由流动的。其含水量应当低于约10wt.%。合意类型的淀粉粉末是例如US 2,613,206中公开的淀粉以及可按“Dry-Flo”从National Stach Products,Inc.(New York)商购获得的淀粉。将根据本发明方法获得的乳液喷雾可以通过本领域已知的技术来完成,例如US 4,670,247中公开的技术,其内容引入本文作为参考。首选的技术是喷雾干燥联合流化床粒化(通常称为流化喷雾干燥或FSD)。适宜地调整喷雾条件(调整喷嘴口的口径,乳液中水分的百分比等等)以便产生能够穿过10目筛网且能够保留在200目筛网上的颗粒,优选颗粒的粒度在20-170目的范围内。
然后,将所获得的颗粒或珠状物置于可使蛋白质(例如,明胶)和还原性物质(糖)交联的条件下。交联可以通过热处理或通过用酶处理,例如,用转谷氨酰胺酶处理来实现。
优选通过热处理来实现交联。在本发明方法的一个实施方案中,将颗粒或珠状物加热至约60℃至约100℃下约10至约60分钟,例如加热至80℃约40分钟。如此获得的组合物呈不溶于沸水的粉末形式。
本发明的组合物可以具体用作植物脂肪如人造奶油的添加剂,由此与不含硬化植物脂肪的类似组合物相比,它们可使特定成分的稳定性得到提高。它们可以以能够提供约1至约2000ppm类胡萝卜素的量存在于例如植物脂肪中。
以下实施例将进一步举例说明本发明。
实施例
将44g明胶(布卢姆凝胶强度测试值140)、48g果糖、20g甘油和3g棕榈酸抗坏血酸酯溶解于60℃的水中。通过添加2.4ml 20%(wt/vol)氢氧化钠水溶液将pH调节至7.6,得到相I。加热回流下,将11g叶黄素饼状基料(cake base)(75%,Kemin Foods,Des Moines,Iowa,USA)、4.8g番茄红素(70%,LycoRed Natural Products Industries Ltd.,以色列)、20g向日葵脂肪和3g d,l-α-生育酚溶解于150ml氯仿中。由此获得相II。在45℃下使用转子-定子乳化器,将相II缓慢乳化至相I,以获得214nm内相的颗粒粒度。蒸除氯仿,并且将所得的乳液喷雾到流化的淀粉床中。将如此获得的珠状物筛选分离并在流化床中干燥。将如此获得的粉末转移至圆底烧瓶中,在旋转干燥器中在80℃油浴中加热40分钟。
将如此获得的产物以类胡萝卜素浓度为260ppm和2000ppm的量掺入人造奶油中。在4℃下储藏4周后,类胡萝卜素的保留率经分光光度法测定为100%。

Claims (23)

1、含有类胡萝卜素和/或脂溶性维生素的组合物,其中所说的类胡萝卜素和/或脂溶性维生素存在于与还原性物质相交联的蛋白质、固体植物脂肪以及任选的辅剂的基质中。
2、含有类胡萝卜素的组合物,其中所说的类胡萝卜素存在于与还原性物质相交联的蛋白质、固体植物脂肪以及任选的辅剂的基质中。
3、权利要求1或2的组合物,其中的蛋白质是明胶。
4、权利要求1-3任一项的组合物,其中的还原性物质是还原糖。
5、权利要求1-4任一项的组合物,其中的基质中含有约5至约80wt.%蛋白质、约5至约50wt.%还原性物质和约2至约30wt.%固体植物脂肪。
6、权利要求1-5任一项的组合物,其中的基质中含有约10至约40wt.%蛋白质、约10至约35wt.%还原性物质和约5至约20wt.%固体植物脂肪。
7、权利要求1-6任一项的组合物,含有约0.1至约30wt.%类胡萝卜素和/或脂溶性维生素。
8、权利要求1-6任一项的组合物,含有约1至约10wt.%类胡萝卜素和/或脂溶性维生素。
9、权利要求1-8任一项的组合物,其中的类胡萝卜素是α-或β-胡萝卜素;8′-阿朴-β-胡萝卜醛;8′-阿朴-β-胡萝卜酸酯,如乙酯;角黄素;虾青素;番茄红素;叶黄素;玉米黄质或藏红花酸或其混合物。
10、权利要求1-9任一项的组合物,其中的类胡萝卜素是β-胡萝卜素、叶黄素或番茄红素或其混合物
11、权利要求1-10任一项的组合物,其中的类胡萝卜素是β-胡萝卜素。
12、权利要求1-10任一项的组合物,其中的类胡萝卜素是番茄红素和叶黄素的混合物。
13、权利要求1-12任一项的组合物,其中的植物脂肪是向日葵脂肪或硬化菜籽油。
14、权利要求1-12任一项的组合物,其中存在甘油作为辅剂。
15、权利要求1的组合物,其中的脂溶性维生素是维生素A、D、E或K或其混合物。
16、权利要求1-15任一项组合物的制备方法,包括形成蛋白质、还原性物质和任选的水溶性辅剂的水溶液与类胡萝卜素和/或脂溶性维生素、固体植物脂肪以及任选的脂溶性辅剂的乳液,将乳液转化成干燥的颗粒形式并将颗粒置于使蛋白质与还原性物质相交联的条件下。
17、权利要求1-15任一项的组合物作为食品添加剂的用途。
18、权利要求17的用途,其中的食品是植物脂肪。
19、权利要求17的用途,其中的食品是人造奶油。
