Description
従って、本発明の目的は、基準化された形状をもつピタを提供することにある。本発明のもう1つの目的は、製造プロセスで最も重要なプロセスである造形プロセスに関連するエラーを最適化することによって大量生産方式でピタを製造する方法を提供することにある。
以下では説明の重複を避けるため、折りたたまれた生地について詳細に説明する。
生地シートの両側を切断する切断ナイフは好適には、直線ライン形状又は端で分かれたY形状をなす。

Claims (6)
- 適切な比率の成分のこねまぜプロセスと、こねまぜた生地の第1の発酵プロセスと、ポケット形状を作るための生地の造形プロセスと、ポケット形状の生地の第2の発酵プロセスと、オーブン中での焼きプロセスとを含む、大量生産方式でピタを製造する方法において、
生地シートが造形プロセスで造形枠の底と頂部に生地のシートを置くために折りたたまれ、
生地のシートが、生地シート間に造形枠をもつポケット形状の生地を提供するために、切断ナイフで造形枠の両側で連続的に切断され、そして
第2の発酵プロセスで所望のポケット形状の生地を作るために、10 乃至 25mm の深さをもつ凹状囲い場所内で発酵させられること、
を特徴とする方法。 - 造形枠より僅かに幅の広い生地の2つのシートが造形プロセスで造形枠の底と頂部に夫々置かれ、
生地のシートが、上記シート間に造形枠をもつポケット形状の生地を提供するために、切断ナイフで造形枠の両側で連続的に切断され、そして
得られたポケット形状の生地が、第2の発酵プロセスで所望のポケット形状の生地を作るために、凹状囲い場所内で発酵させられること、
を特徴とする請求項1に記載の大量生産方式でピタを製造する方法。 - 複数の造形枠が一定の幅と長さ方向に連続した長さをもつ生地のシート上に置かれ、生地のシートが造形プロセス中に規則正しい期間をおいて繰り返し作動する切断ナイフを用いて連続的に切断されることを特徴とする請求項1に記載の大量生産方式でピタを製造する方法。
- ピタを提供するために使用される造形枠が、頂部と3つの側面をつなぐ縁にあるゆるやかな湾曲と、底と側面をつなぐ縁にある丸味付けされ形状と、平らなかつ標準化された口を作るために上記3つの側面を除く他の側面にある垂直をなす壁とをもつことを特徴とする請求項1から3の何れか1項に記載の大量生産方式でピタを製造する方法。
- 上記切断ナイフは直線ライン形状か又は端で割れているY形状をもつことを特徴とする請求項1から3の何れか1項に記載の大量生産方式でピタを製造する方法。
- ポケット形状の生地が発酵させられそして、完全なポケット形状を与えかつ標準化されたピタを製造するために、ポケット形状の溝と10 乃至 25mm の深さをもつ凹状囲い場所内で焼かれることを特徴とする請求項1又は2に記載の大量生産方式でピタを製造する方法。
