Description
(A)非重合体カテキン類 0.07〜0.45重量%、
(B)アスコルビン酸またはアスコルビン酸の金属塩 0.06〜0.5重量%
(C)非重合体カテキンガレート体類を含有し、(A)非重合体カテキン類中の(C)
非重合体カテキンガレート体類含有重量比(C/A)が0.8〜1.0であり、pHが4.5〜7である容器詰飲料を提供するものである。
また、本発明は、(A)非重合体カテキン類を0.07〜0.45重量%含有し、(A)非重合体カテキン類中の(C)非重合体カテキンガレート体類含有重量比(C/A)が0.8〜1.0である容器詰飲料に、(B)アスコルビン酸またはアスコルビン酸の金属塩を0.06〜0.5重量%添加し、かつpHを4.5〜7に調整する容器詰飲料の色相変化抑制法、及び色相変化の抑制された容器詰飲料の製造法を提供するものである。
また本発明の(C)非重合体カテキンガレート体類とは、カテキンガレート、ガロカテキンガレート、エピカテキンガレート、エピガロカテキンガレートの4種を合わせての総称である。
一方、アスコルビン酸の金属塩としてはアスコルビン酸ナトリウム、アスコルビン酸カリウム等が挙げられるが、アスコルビン酸ナトリウムが好ましい。アスコルビン酸ナトリウム(C6H7O6Na)は生体内ではアスコルビン酸として作用するものと考えられている。アスコルビン酸ナトリウムの市販品としては、L−アスコルビン酸ナトリウム(第一ファインケミカル社製)などが挙げられる。
飲料をフィルター(0.8μm)でろ過し、島津製作所製、高速液体クロマトグラフ(型式SCL−10AVP)を用い、オクタデシル基導入液体クロマトグラフ用パックドカラム L−カラムTM ODS(4.6mmφ×250mm:財団法人 化学物質評価研究機構製)を装着し、カラム温度35℃でグラジエント法により行った。移動相A液は酢酸を0.1mol/L含有の蒸留水溶液、B液は酢酸を0.1mol/L含有のアセトニトリル溶液とし、試料注入量は10μL、UV検出器波長は280nmの条件で行った。
テアフラン90S(伊藤園社製)をそれぞれ0.2〜0.4重量%になるようにイオン交換水に溶かした。次に適当量のアスコルビン酸とアスコルビン酸ナトリウムでpHを調整した飲料を調製した。次に各飲料のL値(明るさ)とb値(黄色)を色差計(color Meter ZE2000、NIPPON DENSHOKU社製)で測定した。その結果を表1に示す。
Claims (4)
- 以下の成分(A)、(C)中の(C/A)が0.8〜1.0である緑茶抽出物の濃縮物を配合し、
次の成分(A)、(B)及び(C):
(A)非重合体カテキン類 0.07〜0.45重量%、
(B)アスコルビン酸またはアスコルビン酸の金属塩 0.06〜0.5重量%
(C)非重合体カテキンガレート体類を含有し、(A)非重合体カテキン類中の(C)非重合体カテキンガレート体類の割合(C/A)が0.8〜1.0であり、pHが4.5〜7である容器詰飲料。
- 容器が透明ペットボトルである請求項1記載の容器詰飲料。
- (A)非重合体カテキン類を0.07〜0.45重量%含有し、(A)非重合体カテキン類中の(C)非重合体カテキンガレート体類含有重量比(C/A)が0.8〜1.0である容器詰飲料に、(B)アスコルビン酸またはアスコルビン酸の金属塩を0.06〜0.5重量%添加し、かつpHを4.5〜7に調整する容器詰飲料の色相変化抑制法。
- (A)非重合体カテキン類を0.07〜0.45重量%含有し、(A)非重合体カテキン類中の(C)非重合体カテキンガレート体類含有重量比(C/A)が0.8〜1.0である容器詰飲料に、(B)アスコルビン酸またはアスコルビン酸の金属塩を0.06〜0.5重量%添加し、かつpHを4.5〜7に調整する色相変化の抑制された容器詰飲料の製造法。
