Abstract
Description
500g以下のコーヒーを保存するためのコーヒー保存用袋体であって、
フィルムの2つの端部が接合されている前記袋体の縁にほぼ平行に延びる幅5mm以上15mm以下の帯状シール部を備え、
前記帯状シール部が前記フィルムの2つの端部同士が接合されていない1本の非接合部を備え、
前記非接合部が前記袋体の内部と外部を連通させる1本の通気路を形成し、
前記通気路は、長さ100mm以上400mm以下、幅が0.5mm以上3mm以下である、
ことを特徴とするコーヒー保存用袋体が提供される。
袋体の表面を通しての酸素の進入も防止することができる。
前記通気路の面積と前記帯状シール部の面積の比が0.05以上0.50以下である。
この面積比とは、平面視における面積の比率である。
帯状シール部における接合強度の確保と二酸化炭素の排出とを両立させることができる。
前記帯状シール部が、超音波接合によりフィルムを接合することによって形成された超音波接合部である。
通気路の寸法形状が正確なものとなる。
上記いずれかの袋体内で60g以上500g以下のコーヒーを保存するステップを備えているコーヒーの保存方法が提供される。
前記保存ステップが、前記袋体内に窒素ガスを充填した状態で行なわれる。
内部に充填された窒素ガスによって、コーヒーの劣化をより効果的に防止することができる。
ここで、袋体内では二酸化炭素が発生したので、袋体内の気体中の酸素濃度が低下し、二酸化炭素濃度は上昇している。このため、袋体内のコーヒーは、酸素濃度が低い気体中で保存されることになり、その劣化(酸化)が抑制される。
さらに、上記寸法の通気路を1本とすることでコーヒーの劣化を充分に抑制できる。
まず、この製造方法の超音波溶着法に用いる溶着装置の構成について説明する。図2は、本実施形態の袋体の製造に使用される溶着装置(超音波接合機)30の構成を模式的に示す図面である。
尚、溝部をホーンの外周面に設けてもよい。この場合、アンビルの外周面が平坦な形状となる。
収容するコーヒーの量は80g以上450g以下が好ましく、100g以上400g以下が更に好ましい。コーヒーの量が60g以上とすることで、コーヒー豆の量に対する気体の量の割合が大きくなり過ぎることを防止できて、コーヒーの品質低下を抑制することが可能になる。また、500g以下とすることで、保存中に袋体が膨らんでしまうことを防止できる。
(実施例1)
幅30cm、長さ25cm、厚さ85μmのバリアフィルム(バリア層付きナイロンフィルム/低密度ポリエチレンの積層フィルム )を二つに折り、縦25cm、横15cmの袋体を形成した。ボトムシール部は、10mm幅のヒートシール部とした。
・帯状シール部の幅:10mm (フィルムの端から内方側約2mmの位置に形成)
・通気路の幅:1mm
・通気路の長さ:140mm
・通気路の数:1本
評価は以下の方法で行った。
充填後7日目に袋体の膨らみ具合を目視で観察した。
〇 : 袋体の膨らみがない
△ : 袋体が若干膨らんでいるが袋体どうしを重ねて置くことができる
× : 袋体が膨らんでいて、袋体を重ねて置くことができない
××: 袋体が著しく膨らんでいる
実用上、△以上が許容レベルである。
重点後28日目に袋体内の酸素濃度を測定した。

B 酸素濃度3体積%以上、6体積%未満
C 酸素濃度6体積%以上、10体積%未満
D 酸素濃度10体積%以上
通気路の位置、通気路の形状、通気路の数、通気路の幅、通気路の長さを表1のように変更したこと以外は実施例1と同様にして、実施例2~13の保管を実施した。
通気路の長さが100mm以上400mm以下、幅が0.5mm以上3mm以下を有する袋体に関して、酸素濃度の値および袋体の膨らみは、すべて実用レベルであることがわかった。また、窒素充填を行うことで更に低い酸素濃度の値を示した。

- 500g以下のコーヒーを保存するためのコーヒー保存用袋体であって、
フィルムの2つの端部が接合されている前記袋体の縁にほぼ平行に延びる幅5mm以上15mm以下の帯状シール部を備え、
前記帯状シール部が前記フィルムの2つの端部同士が接合されていない1本の非接合部を含み、
前記非接合部が前記袋体の内部と外部を連通させる1本の通気路を形成し、
前記通気路は、長さ100mm以上400mm以下、幅が0.5mm以上3mm以下であり、
ことを特徴とするコーヒー保存用袋体。 - 前記フィルムがバリアフィルムである、
