Abstract
Description
ドライフルーツに吸水を行わせる。この吸水工程では、ドライフルーツの乾燥質量に対して液体を1〜20倍の質量割合で配合して前記ドライフルーツに吸水を行わせるようにすることができる。
吸水工程後、粉砕工程を行って、吸水工程後の前記ドライフルーツを粉砕して吸水工程後の前記ドライフルーツが所定の大きさに粉砕されているペーストにする。
粉砕工程後のペーストを引き続いて乾燥粉末化してドライフルーツパウダーを製造する。
Claims (6)
- ドライフルーツに吸水を行わせる吸水工程、
吸水工程後の前記ドライフルーツを粉砕して吸水工程後の前記ドライフルーツが所定の大きさに粉砕されているペーストにする粉砕工程、
前記粉砕工程後の前記ペーストを乾燥粉末化する工程
を備えているドライフルーツパウダーを製造する方法。 - 前記吸水工程が開始されるときの前記ドライフルーツの含有水分値が20%以下である請求項1記載のドライフルーツパウダーを製造する方法。
- 前記ドライフルーツが果皮、種子を含む果実を乾燥させたものである請求項1又は2記載のドライフルーツパウダーを製造する方法。
- 前記吸水工程は、前記ドライフルーツと所定の水温になっている液体とを配合して所定の時間にわたって前記吸水工程を行うものである請求項1乃至請求項3のいずれか一項に記載のドライフルーツパウダーを製造する方法。
- 前記ペーストにおける吸水工程後の前記ドライフルーツが粉砕されている所定の大きさが1mm以下である請求項1乃至請求項4のいずれか一項に記載のドライフルーツパウダーを製造する方法。
- 前記粉砕工程では、粗粉砕機による粉砕工程と、引き続く微粉砕機による微粉砕工程とが行われる請求項5記載のドライフルーツパウダーを製造する方法。
