Abstract
Description
(1)ヒドロキシプロピルメチルセルロース(HPMC)水溶液の製造
500mL容量のビーカに、下記表1に示されているようなヒドロキシプロピルメチルセルロース(HPMC)10.0gを投入した。次に、80℃の水250gを、前記ビーカに追加して投入した後、ビーカ内容物を、撹拌機で230rpmの速度で、30分間撹拌した。その後、最終ビーカ内容物の重さが500gになるように、室温の水を投入し、2重量%の濃度を有するヒドロキシプロピルメチルセルロース水溶液を製造した。その後、前記ビーカ内容物を、撹拌機で230rpmの速度で30分間撹拌した後、自然冷却した。
精製糖(refined sugar)、甘味料(Daepyung Co.,Ltd.、酵素処理ステビア)、前記(1)で製造されたヒドロキシプロピルメチルセルロース水溶液、及び精製水を下記表2に示された比率で混合した後、室温(約25℃)で撹拌機で、300rpmの速度で30分間撹拌した。結果として、飲料組成物を得た。ただし、本材料を添加せずとも、甘味料とセルロースエーテルとの添加効果を確認するには、何らの問題もないために、前記飲料組成物に、本材料を添加していない。
<評価例1:5点尺度法による飲料組成物の物性評価>
前記実施例1〜8及び比較例1,2で製造された飲料組成物の不快味強度、甘味強度及びボディ感を、下記のような方法で評価し、その結果を下記表4に示した。本明細書で、「ボディ感(body viscosity)」とは、口中全体で感じられる重みまたは質感を意味する。
(1)評価人数:10人(訓練された官能検査要員)
(2)評価方法:
前記各飲料組成物の不快味強度、甘味強度及びボディ感について、官能検査を下記のような方法で実施した。具体的には、前記官能検査は、前記各飲料組成物を製造した後、10分以内に進めた。すなわち、非常に劣悪(1点)、劣悪(2点)、普通(3点)、良好(4点)及び非常に良好(5点)と尺度を定め、官能検査を実施した。
前記各飲料組成物の熱量に対し、下記のような方法で実施し、その結果を、 下記表4に示した。具体的には、前記各飲料組成物の熱量は、アトウォーターインデックス(Atwater index)を使用して計算した。このとき、熱量栄養素(calorie nutrient)は、熱量計(calorimeter)で燃焼するときと、人体内で燃焼するときとの発熱量が異なる。熱量計内では、炭水化物は、1g当たり4.1kcal、脂肪は、1g当たり9.45kcal、タンパク質は、1g当たり5.65kcalの熱量を発生させる。しかし、体内の吸収過程で、炭水化物は平均98%、脂肪は95%、タンパク質は92%だけが体内に吸収されるので、実際に栄養素を摂取したときに生じる熱量は、炭水化物の場合は、1g当たり4kcal、脂肪の場合は、1g当たり9kcal、タンパク質の場合は、1g当たり4kcalである。下記表3は、精製糖、甘味料(酵素処理ステビア)、ヒドロキシプロピルメチルセルロース各100g当たりの一般的栄養組成を示している。下記表3に基づいた下記表4の熱量を計算した。
Claims (8)
- 水、本材料、40以上の甘味度を有する甘味料、及びセルロースエーテルを含む飲料組成物。
- 前記本材料は、炭酸、アルコール、果汁、牛乳成分、食餌性纎維、着色剤、着香料、クエン酸、コーヒー成分、ビタミン、豆乳成分、チョコレート成分及び植物抽出液、またはそれらの組み合わせを含み、前記本材料の含量は、前記飲料組成物100重量部に対して、0.01〜10重量部であることを特徴とする請求項1に記載の飲料組成物。
- 前記甘味料は、アスパルテーム、アセスルファムカリウム、ネオヘスペリジンDC、ネオテーム、サッカリン、スクラロース、アリテーム、タウマチン、シクラメート、グリシリジン、またはそれらの組み合わせを含む人工甘味料;及びステビオシド、酵素処理ステビア、レバウジオシドA、またはそれらの組み合わせを含む天然甘味料;からなる群から選択された少なくとも1種の化合物を含むことを特徴とする請求項1に記載の飲料組成物。
- 前記甘味料の含量は、前記飲料組成物100重量部に対して、0.01〜0.5重量部であることを特徴とする請求項1に記載の飲料組成物。
- 前記セルロースエーテルは、ヒドロキシプロピルメチルセルロース(HPMC)、メチルセルロース(MC)、カルボキシメチルセルロース(CMC)、またはそれらの組み合わせを含むことを特徴とする請求項1に記載の飲料組成物。
- 前記ヒドロキシプロピルメチルセルロースは、ヒドロキシプロポキシ基の含量が4〜12重量%であり、メトキシ基の含量が19〜30重量%であり、粘度が3〜100,000cpsであることを特徴とする請求項5に記載の飲料組成物。
- 前記セルロースエーテルの含量は、前記飲料組成物100重量部に対して、0.01〜2重量部であることを特徴とする請求項1に記載の飲料組成物。
- 前記飲料組成物は、40kcal/100ml以下の熱量を有することを特徴とする請求項1に記載の飲料組成物。
