Abstract
Description
納豆菌aの増殖曲線の対数期の終わり(発酵開始後11時間、12時間である添加(6),(7)付近)以降の添加時期において、製品完成された納豆におけるオルニチンの含有量が143.9mg/100gを超えてより増量されることが明らかになっている。また、このオルニチンの増量傾向は、発酵は終了している添加(11)まで継続されている。

Claims (2)
- 大豆に納豆菌を接種して発酵させる発酵工程における納豆菌の増殖曲線の対数期の中頃をすぎてから製品完成までの間にアルギニンを添加することを特徴とするオルニチンを富化した納豆の製造方法。
- 請求項1の納豆の製造方法において、アルギニンの添加量は大豆100g当たり600mg以下で添加することを特徴とするオルニチンを富化した納豆の製造方法。
