Abstract
【解決手段】本発明は、気体混入された食料品を生産する方法であって、少なくとも1つの多孔性拡散器を通じて気体を食料処理媒体の流れ内に導入して気体/食料混合物を得る工程と、前記気体/食料処理媒体混合物を静止混合器内で混合作用にかける工程とを含む方法に関する。この方法によって得られる製品にも関する。

試料の調製:
調製は必須ではない。例外的に、高分解能を達成する目的で、当初の試料寸法を小さくする必要があるかもしれない。各試料は、三重で(in triplicate)測定される。
試料の分析(ソフトウェアCTan 1.81が使用された)
分析のための異なるステップ:
・再構成された生画像のデータセットを分析ソフトウェアのメモリにリロードする。
・関心領域(ROI)又は領域体積(VOI)を評価のために決定
(ROI又はVOIは全試料セットについて等しくなるべきである)
・バイナリ像の生成:再構成された像を密度差に基づいてグレースケール像に変換する;グレースケールの選択に基づいて、像内の異なる構造を決定できる。
・カスタム処理:プログラムがVOI内の全ての物体(すなわち気泡)を同定し、各物体の体積を計算する。気泡の分析は、全ての粒子が球状であるという仮定の下に行われる。各気泡の体積値に基づいて、孔寸法半径が計算される。数値分布のために、気泡は異なる孔半径群に分類され、そこで孔の数が集計される。体積分布は、全体積の比例する割り当て(proportional share)を示し、これは異なる寸法分類によって得られる。
近似:結果は、3つの異なる試料のスキャンの3つの分析結果の平均値を表す。
孔寸法1〜5μmの微小孔拡散器と、交差する複数の羽根をDN25輸送管路の内側に有する静止混合器とを含む装置を使用し、窒素及び二酸化炭素を充填した微小室ウェハースを製造した。
交差する複数の羽根を有する静止混合器のみを含む設備が、窒素及び二酸化炭素を充填した同じ処方のウェハースの気体混入のために用いられた。静止混合器が対応する横断面積を有する製品管内に挿入され、チェック弁を有する気体注入口が静止混合器の上流に設置された。両方の気体について、5%より高い特定の質量の減少を設定した工程では、激しい揺れと、製品排出の一貫性のない速度という結果となり、これは処理媒体中で気体拡散が効果的でないこと、すなわちウェハース充填物内の大きな気体袋の存在を示すものであった。
Claims (9)
- 気体混入された食料品を生産する方法であって、
I.少なくとも1つの多孔性拡散器を通じて気体を食料処理媒体の流れ内に導入して気体/食料混合物を得る工程と、
II.前述の気体/食料処理媒体混合物を静止混合器内で混合操作にかける工程と、
を含む方法。 - 気体が、食用に適する気体、不活性気体、食用に適する又は不活性気体又はそれらの混合物である、請求項1に記載の方法。
- 気体が、香料、添加物等のような流動性の食料成分である、請求項1又は請求項2に記載の方法。
- 気体混入された食料品が10から25体積%の気体を含有するように、気体が添加される、前述の請求項のいずれか1項に記載の方法。
- 請求項1から5のいずれか1項により得られる製品。
- 平均で5から30μmの室寸法を有する請求項5に記載の製品。
- 請求項5又は請求項6に記載の製品を含有する菓子。
- 請求項5又は請求項6によって製造された製品を含有する複合食料品。
- 多孔性拡散器及び静止混合器を含む請求項5から8に記載の気体混入食料品を生産するための装置であって、多孔性拡散器が静止混合器の上流に位置づけられ、気体が、静止混合器を通過する食料媒体より前に、微小孔拡散器を通って食料媒体に添加され得るようになっている装置。
