Abstract

Description
項1. 下記工程(i)及び(ii)を含有する、豚肉を使用した霜降り状の食肉製品又は食肉の製造方法:
(i)豚肉を塩漬処理又は調味処理する工程、及び
(ii)前記工程(i)で得られた塩漬肉又は調味肉に、乳化油脂液を注入し、タンブリング処理する工程。
項2. 豚肉を使用した霜降り状の食肉製品の製造方法であり、更に下記工程(iii)を含有する、項1に記載の製造方法:
(iii)前記工程(ii)の後に加熱及び/又は乾燥処理を行う工程。
項3. 豚肉を使用した霜降り状の加熱食肉製品の製造方法であり、更に下記工程(iii)を含有する、項1に記載の製造方法:
(iii)前記工程(ii)の後に加熱処理を行う工程。
項4. 豚肉を使用した霜降り状の乾燥食肉製品の製造方法であり、更に下記工程(iii)を含有する、項1に記載の製造方法:
(iii)前記工程(ii)の後に乾燥処理を行う工程。
項5. 豚肉を使用した霜降り状の食肉の製造方法であり、下記工程(i)及び(ii)を含有する、項1に記載の製造方法:
(i)豚肉を調味処理する工程、及び
(ii)前記工程(i)で得られた調味肉に、乳化油脂液を注入し、タンブリング処理する工程。
項6. 項1又は2の製造方法で製造される、霜降り状の食肉製品又は食肉。
項7. 項3の製造方法で製造される、霜降り状の加熱食肉製品。
項8. 項4の製造方法で製造される、霜降り状の乾燥食肉製品。
項9. 項5の製造方法で製造される、霜降り状の食肉。
約3kgのカナダ産豚ロース肉に、300gの塩漬液(亜硝酸ナトリウム0.15重量%、塩16重量%含有)をハム製造用のインジェクターを用いて注入した。次いで、ハム製造用の回転ドラム(ロータリーマッサージ機)を用いて、5℃、760mmHgで17時間タンブリングを行った。
約3kgのカナダ産豚ロース肉に、1050gの乳化油脂を含む塩漬液(食用動物性油脂14重量%、カゼインナトリウム0.7重量%、亜硝酸ナトリウム0.05重量%、塩4.5重量%含有)をハム製造用のインジェクターを用いて注入した後、ハム製造用の回転ドラム(ロータリーマッサージ機)を用いて、5℃、760mmHgで17時間タンブリングを行った。
約3kgのカナダ産豚ロース肉に、300gの調味液(塩16重量%含有)をハム製造用のインジェクターを用いて注入した。次いで、ハム製造用の回転ドラム(ロータリーマッサージ機)を用いて、5℃、760mmHgで17時間タンブリングを行った。
Claims (3)
- 下記工程(i)及び(ii)を含有する、豚肉を使用した霜降り状の食肉製品又は食肉の製造方法:
(i)豚肉を塩漬処理又は調味処理する工程、及び
(ii)前記工程(i)で得られた塩漬肉又は調味肉に、乳化油脂液を注入し、タンブリング処理する工程。 - 豚肉を使用した霜降り状の食肉製品の製造方法であり、更に下記工程(iii)を含有する、請求項1に記載の製造方法:
(iii)前記工程(ii)の後に加熱及び/又は乾燥処理を行う工程。 - 請求項1又は2の製造方法で製造される、霜降り状の食肉製品又は食肉。
