【構成】二次発酵工程に換えて、氷点下以下のイースト菌活動停止温度と氷点の間の温度で氷温熟成させたパン生地を得ることによって熟成時間を長くする。

Description
図1は「フルーツパン」「冷凍パン」「従来品」「本発明品」の製造工程の比較を示したフロー図である。ミキシング〜一次発酵〜分割・丸めまでの工程は4者とも概ね同じであるが、本発明の最大の特徴は二次発酵にある。
Claims (2)
- 小麦粉又は米粉を主原料にして、氷点下以下のイースト菌活動停止温度と氷点の間の温度で氷温熟成させたパン生地及びこれを焼成したパン。
- 小麦粉又は米粉を主原料にして、氷点下以下のイースト菌活動停止温度と氷点の間の温度で氷温熟成させることにより、二次発酵時間を長時間化させることを可能にしたパン生地の製造方法。
