Description
Claims (1)
- 【特許請求の範囲】 1.a)懸濁ミネラルを含み、懸濁ミネラルを含めた総固形分が約5〜約35重 量%である液体栄養混合物と、 b)約10〜約500ppmの濃度で液体栄養組成物中に存在するゲランガムか ら主に構成される安定化系を含む液体栄養組成物。 2.前記ゲランガムの前記濃度が約20〜400ppmである請求項1に記載の 液体栄養組成物。 3.前記ケランガムの前記濃度か約50〜約100ppmである請求項2に記載 の液体栄養組成物。 4.前記ゲランガムの前記濃度が約75ppmである請求項2に記載の液体栄養 組成物。 5.前記ゲランガムがKelcoGel(登録商標)ゲランガムとして知られる ケランガムの群から選択される請求項1に記載の液体栄養組成物。 6.a)懸濁ミネラル(但し懸濁ミネラルを含めた総固形分は約10〜約30重 量%とする)と、 b)約175〜約350ppmの濃度で液体栄養組成物中に存 在するケランガムから構成される安定化系と、 c)食物繊維、大豆多糖及びココア末を含む群から選択される少なくとも1種の ミネラルを含む請求項1に記載の液体栄養組成物。 7.大豆多糖を含む食物繊維が0.5〜5重量%存在しており、ココア末が0. 5〜5重量%存在している請求項6に記載の液体栄養組成物。 8.前記液体栄養組成物が約500cl/l〜約2000cal/lの熱量をも つ請求項1に記載の液体栄養組成物。 9.前記液体栄養組成物が約10〜20%タンパク、25〜40%脂肪及び40 〜60%炭水化物の熱量分布をもつ請求項1に記載の液体栄養組成物。 10.a)i)懸濁ミネラルを含み、前記懸濁ミネラルを含めた栄養混合物の総 固形分が約10〜約35重量%である液体栄養混合物と、ii)約10〜500 ppmの濃度で前記液体栄養組成物中に存在するゲランガムを含む混合物を調製 する段階と、 b)前記段階a)から得られた液体栄養組成物を殺菌処理条件にかける段階と、 その後、 c)実質的に沈殿のない前記液体栄養組成物を無菌パッケージングする段階を含 む液体栄養組成物の製造方法。 11.前記液体栄養組成物が更にカラゲナンを含む請求項10に記載の方法。 12.改善された物理的安定性をもつ完全栄養液体製剤であって、前記液体製剤 が安定化系を含み、前記安定化系は前記液体製剤が約0.1〜約1.0dyn/ cm2の実測降伏応力値をもつに+分低く且つ最小限の沈殿でミネラル、繊維及 びフレーバー剤を懸濁するに+分高い濃度である10〜500ppmの濃度のゲ ランガムを含む前記製剤。 13.約5〜約35重量%の濃度で懸濁ミネラルを含む請求項12に記載の完全 栄養液体製剤。 14.懸濁ミネラルが約10〜約30重量%の濃度で存在する請求項13に記載 の完全栄養液体製剤。 15.前記安定化系がカルボキシメチルセルロースとカラゲナンから選択される 1員を更に含み、前記ゲランガムの濃度が前記安定化系の約5重量%未満である 請求項14に記載の完全栄養液体製剤。 16.沈殿の少ない完全栄養液体食品であって、少なくとも1: 4のゲランガム対カラゲナン重量比でゲランガムとカラゲナンを含み、前記ゲラ ンガムが約10〜約500ppmの濃度であり、前記液体食品が0.05Pa. s未満の粘度をもつ前記食品。 17.前記ゲランガムの濃度が約50〜約100ppmであり、ゲランガムとカ ラゲナンの重量比が少なくとも1:5であり、前記製剤の粘度が0.04Pa. s未満である請求項16に記載の完全栄養食品。 18.完全栄養液体製剤の沈殿低減方法であって、 a)ゲランガムを緩衝系で水和する段階と、 b)タンパクスラリー、炭水化物スラリー、脂肪スラリー及びその混合物から選 択されるスラリーと前記水和ゲランガムを混合し、ゲランガムスラリーを形成す る段階と、c)前記ケランガムを1種以上のスラリー及び/又はプレミックスと 混合し、約10〜約35重量%の総固形分を含み、約0.1〜約1.0dyn/ cm2の降伏応力をもつ完全栄養液体製剤を形成する段階を含む前記方法。 19.a)約50〜90重量%のタンパク水解物と、約50重量%以下の1種以 上の無傷のタンパクから構成されるタンパク 系と、 b)脂肪源と、 c)炭水化物系と、 d)175〜350ppmの濃度のゲランガムを含む安定剤系を含む液体栄養剤 。 20.前記タンパク水解物が大豆水解物、乳タンパク水解物及びその混合物の群 から選択される請求項19に記載の栄養剤。 21.前記脂肪源がキャノーラ油、中鎖トリグリセリド、海産物油、植物油及び その混合物から選択される請求項20に記載の栄養剤。 22.炭水化物系が澱粉、麦芽デキストリン、スクロース、大豆多糖及びその混 合物の群から選択される請求項20に記載の栄養剤。 23.安定剤系が濃度225〜275ppmのケランガムから主に構成され、前 記ゲランガムがKelcoGel F(登録商標)である請求項19に記載の栄 養剤。 24.完全栄養液体製剤へのゲランガムの添加方法であって、 a)(i)ゲランガムの水中分散液又は(ii)ケランガムと糖の水中分散液を 形成する段階と、 b)a)で形成した分散液に金属イオン封鎖剤を加え、溶液を形成する段階と、 c)付加成分を加え、完全栄養液体製剤を形成する段階を含む前記方法。 25.段階a)(i)におけるゲランガムと糖の重量比が1:20〜1:10で あり、金属イオン封鎖剤がクエン酸ナトリウムである請求項24に記載の方法。
