Description
Claims (1)
- 【特許請求の範囲】 1.加熱調理室と、加熱調理物質の特性に関する加熱調理状態変数の値を検出す るための測定装置とを備えた加熱機器内で、加熱調理するための方法であって、 この加熱調理状態変数の値が加熱調理プロセスに基づいて変化し、加熱調理プロ セスが加熱調理状態変数の少なくとも1つの測定値に従って行われる、方法にお いて、加熱調理プロセスが加熱調理プロセス中の加熱調理状態変数の時間による 微分商の1つまたは複数の値に従って行われることを特徴とする方法。 2.加熱調理中に、加熱調理プロセスに影響を及ぼす加熱調理機器の調節変数の 少なくとも1つの値が、加熱調理中の加熱調理状態変数の時間による微分商に従 って決定されることを特徴とする請求項1記載の方法。 3.加熱調理中に、加熱調理機器の調節変数の1つの値または時間的に連続する 複数の値が、加熱調理状態変数の最後に検出された値と、時間によるその第1次 の微分商の値に従って決定されることを特徴とする請求項2記載の方法。 4.加熱調理状態変数の時間による第1次の微分商がほぼ零である時間に依存し て、調節変数の1つの値または複数の値が決定されることを特徴とする請求項2 または3記載の方法。 5.熱調理室内の温度およびまたは湿度が加熱調理機器の調節変数であり、加熱 状態変数の時間による微分商に依存してこの調節変数の値が決定されることを特 徴とする請求項2〜4のいずれか一つに記載の方法。 6.加熱調理の終了時点が、加熱調理プロセス中にいろいろな時点で求められた 少なくとも1つの加熱調理状態変数の値と、加熱調理の終了時の加熱調理状態変 数の設定された最終値とに基づいて定められることを特徴とする請求項1〜5の いずれか一つに記載の方法。 7.加熱調理の終了時点が、最後に検出された加熱調理状態変数の値と、この値 の時間による第1次と第2次の微分商の値と、加熱調理の終了時の加熱調理状態 変数の設定された最終値とに基づいて演算されることを特徴とする請求項1〜6 のいずれか一つに記載の方法。 8.加熱調理の終了時点が、いろいろな時点で、その都度最後に検出した測定値 を考慮に入れて決定されることを特徴とする請求項6または7記載の方法。 9.加熱調理の決定された終了に対して予め定めた時間的な間隔を有する時点か ら、加熱調理機器の1つまたは複数の調節変数が、前もって定められた値または 時間的に連続する複数の値に調節されることを特徴とする請求項6〜8のいずれ か一つに記載の方法。 10.加熱調理物質の中心部温度が加熱調理状態変数であり、この加熱調理状態変 数の時間的な変化に依存して、調節変数の1つの値が定められることを特徴とす る請求項1〜9のいずれか一つに記載の方法。 11.加熱状態変数の微分の1つの値または複数の値に依存するある時点で、加熱 調理機器の運転方法が変更されることを特徴とする請求項1〜10のいずれか一 つに記載の方法。 12.加熱調理物質の特性に関する少なくとも1つの加熱状態変数の値を検出する ための少なくとも1つの測定値検出要素を備え、この加熱状態変数の値が加熱調 理プロセスに基づいて変化し、更に、加熱調理プロセスの自動的なガイドのため の制御装置を備え、この制御装置が入力信号として、測定値検出要素の出力信号 を受け取る、加熱調理室を有する加熱調理機器において、加熱調理プロセスが請 求項1〜11のいずれか一つに記載の方法に従って行われるように、制御装置が 調整されていることを特徴とする加熱調理機器。 13.加熱調理物質およびまたは加熱調理プロセスに関するパラメータ値を入力お よび記憶するための装置を備え、制御装置が加熱調理プロセスを行うための入力 変数としてこのパラメータ値の1つまたは複数を用いることを特徴とする請求項 12記載の加熱調理機器。 14.加熱調理プロセスの終わりに達成すべき最終中心部温度およびまたは加熱プ ロセスの終わりの加熱調理室内の温度が入力可能であることを特徴とする請求項 13記載の加熱調理機器。 15.加熱調理プロセスの終了時の加熱調理室内の湿度の値が入力可能であること を特徴とする請求項13または14記載の加熱調理機器。 16.加熱調理機器の調節変数の目標値に対する、加熱調理状態変数の時間による 少なくとも1つの微分商の値の割り当てを記憶する記憶ユニットを備え、制御装 置がこの調節変数の目標値を決定する際に記憶ユニットにアクセスすることを特 徴とする請求項12〜15のいずれか一つに記載の加熱調理機器。 17.目標値が記憶ユニットに記憶され、アドレスデータを提示することによって 取出し可能であり、この目標値が加熱調理状態変数の第1次の微分商のための値 を含んでいることを特徴とする請求項16記載の加熱調理機器。 18.加熱調理機器が調節変数に手動で影響を及ぼすように調整され、加熱調理機 器が、加熱調理状態変数の関連する測定値およびまたは時間によるこの測定値の 1つまたは複数の微分商と共に、制御装置または操作人によって設定された調節 変数の値を記憶するための装置を備え、それによって制御装置がその前の加熱調 理プロセスの記憶されたデータと、現在の加熱調理プロセスで1個または複数の 測定値検出要素によって検出された測定値とに基づいて、その前のプロセスの調 節変数の連続する値を再現可能であることを特徴とする請求項16または17記 載の加熱調理機器。
