Butter.-For making butter, cream or whole milk is subjected to vacuum such that boiling takes place, the lowtemperature ebullition working the cream into butter. The cream may be drawn from a centrifugal machine by a skimming pipe 5 and led through chambers 7, 9 and pipes 8, 12 to a butter-collecting receptacle 13, 14 in communication with the vacuum pump 20. Or the cream may be drawn through a zig-zag coil en. closed, if desired, in a receptacle for cooling water; or the skimming pipe may lead to a helical coil or to a system of parallel tubes connecting two headers.
