Abstract
L'invention concerne un nouveau procédé de production d'un extrait de levure contenant des 5'-nucléotides aromatisants et ayant une consistance ou un corps améliorés. Le procédé de l'invention comprend les étapes suivantes : 1 degrés autolyse de cellules de levure en présence d'un stimulateur d'autolyse à un pH constant de 6,0 à 6,6, de préférence de 6,2 à 6,4 et à une température de 30 à 60 degrés C pendant 10 à 30 h; 2 degrés chauffage de la suspension autolysée de cellules de levure à une température de 9 à 100 degrés C, pendant 1,0 à 3,0 h, pour extraire le RNA résiduel et effectuer ensuite les étapes suivantes dans n'importe quel ordre approprié; 3** degrés hydrolyse du RNA extrait par la 5'-phosphodiestérase et, si on le désire, conversion de l'AMP en IMP par l'AMP-désaminase ; et 4 degrés séparation de l'extrait limpide résultant du résidu insoluble.
