Abstract

L'invention décrit une composition concentrée de micro-organismes et son application au traitement de la viande pour la production, notamment, de saucisses et saucissons. On utilise Micrococcus varians (producteur très médiocre d'acide lactique) en mélange avec Pediococcus cerevisiae NRRL-B-5627 et/ou avec d'autres bactéries de fermentation de la viande pouvant produire de l'acide lactique, pour abaisser le pH. En présence d'un nitrate et/ou nitrite comestible, la composition bactérienne développe la pleine couleur rouge vif des saucissons et autres viandes fermentées. La composition bactérienne est de préférence distribuée sous forme d'un concentré congelé de cellules à stocker et à décongeler ensuite pour l'appliquer au traitement de viandes à faire un peu fermenter pour en améliorer le goût.
