Abstract
Procédé de conservation d'un produit d'oeufs liquide à base de sel, ou de sucre, ou à la fois de sel et de sucre, non concentré ou concentré, selon lequel a on ajoute de façon homogène au produit d'oeufs liquide initial concentré ou non, du sel en une quantité d'au moins 5 % et de préférence 7 % en poids par rapport au produit final, ou du sucre en une quantité d'au moins 30 et de préférence 35 % en poids par rapport au produit final, ou à la fois du sel et du sucre jusqu'à l'obtention d'un poids osmotique d'au moins 20 et de préférence 25 atmosphères ; b qu'on élimine les gaz dissous jusqu'à l'obtention d'une teneur en oxygène inférieure à 3 ppm et de préférence inférieure à 1 ppm par rapport au poids du produit d'oeufs final, les stades a et b pouvant être effectués dans un ordre quelconque ; c qu'on effectue éventuellement un traitement thermique du produit obtenu après les stades a et b, à une température inferieure à la température de coagulation; et d qu on place éventuellement le produit dans un emballage étanche sous un vide poussé ou en présence d'un gaz neutre alimentaire autre que le gaz carbonique; la température ne dépassant jamais la température de coagulation du produit d'oeuf au cours du traitement. Ce procédé concerne la conservation prolongée des produits d'oeufs liquides provenant de toute espèce d'oeufs utilisables dans l'alimentation humaine ou dans toute autre application.
