Abstract

Bakery oven comprises a heated space surrounded by tubular heating frames arranged transversely perpendicular to the oven axis, the constituent tubes of which contain a vaporising liquid, e.g. glycerin-water, and are heated at their lower parts by combustion gases from a burner aligned with the oven axis. Spec. the combustion chamber, independently of the heated space, consists of a central cylindrical metal tube, open at one end and carrying the burner at the other end and installed coaxially in an internal metal cylindrical shell, permitting circulation of combustion gases to its two ends and itself arranged within an external coaxial metal shell to form an annular space in which the lower parts of the tubular frame are situated. The annular space is divided into two by a partition in the central region of the oven and is connected with means arranged in the periphery of the external cylindrical shell, for the discharge of combustion gases.
