Claims (12)
1. Förfarande för framställning av jästa alkohol-produkter med lag diacetylhalt genom fermentering av ett 5 kolhydrathaltigt substrat med mikroorganismer, känne-t e c k n a t därav, att det fermenterande eller fermen-terade substratet behandlas med ett acetolaktatomvandlaride enzym under eller efter fermentationen.
2. Förfarande enligt patentkravet 1, känne- 10 tecknat därav, att det acetolaktatomvandlande enzymet är ett acetolaktatdekarboxylas.
3. Förfarande enligt patentkravet 2, känne-tecknat därav, att ett acetolaktatdekarboxylas an-vänds som isolerats ur mikroorganismen Aerobacter aerogenes. 15
4. Förfarande enligt patentkravet 1, känne- tecknat därav, att det acetolaktatomvandlande enzymet är ett isomeras.
5. Förfarande enligt patentkravet 1, känne-tecknat därav, att det acetolaktatomvandlande enzy- 20 met är ett reduktoisomeras.
6. Förfarande enligt nägot av patentkraven 1-5, varvid substratet utsätts för en huvudsaklig fermenterings-process och en mognadsprocess, kännetecknat därav, att behandlingen med det acetolaktatomvandlande 25 enzymet utföres under mognadsprocessen.
7. Förfarande enligt patentkravet 6, kännetecknat därav, att substratet är vört.
8. Förfarande enligt patentkravet 6 för framställning av vin, kännetecknat därav, att mognads- 30 processen omfattar en malonsyra-mjölksyrafermentering, under vilken behandlingen med det acetolaktatomvandlande enzymet utföres.
9. Förfarande enligt nägot av patentkraven 1-8, kännetecknat därav, att det acetolaktatomvand- 35 lande enzymet används i ett immobiliserat tillständ. li
