Abstract
Un procedimiento para tratar una mezcla de gluten de trigo vital y almidón de trigo, que contiene al menos aproximadamente 25% de proteínas, con objeto de separar el gluten vital y obtener como segundo producto un almidón solubilizado; que comprende someter la mezcla, en medio acuoso, a la acción de una alfa-amilasa bacteriana en condiciones en las que una cantidad sustancial del almidón se solubiliza sin sufrir gelatinización, estando comprendida la temperatura durante la solubilización dentro del intervalo que va desde aproximadamente 45ºC a aproximadamente 60ºC, el pH dentro del intervalo de aproximadamente 5 a aproximadamente 7, y no excediendo el tiempo de tratamiento de aproximadamente 6 horas, y separar después de ello el gluten vital del almidón solubilizado.
