Abstract
Procedimiento para preparar un producto proteínico, como un aislado y en forma de micelas proteínicas, a partir de materiales proteínicos, caracterizados porque comprende: (a) estractar dichas proteínas sometiendo el material proteínico de origen a un tratamiento con una solución acuosa de sal de calidad alimenticia, a una temperatura de 15 a 35ºC aproximadamente, una concentración de sal de al menos 0,2 de concentración iónica y un pH de 5,5 a 6,5 aproximadamente; y (b) recuperar las proteínas solubilizadas en sal como micelas proteínicas, reduciendo la concentración iónica a menos de 0,1 y recogiendo las micelas precipitadas.
