Abstract

1377798 Soluble protein MILES LABORATORIES Inc 12 April 1972 [26 April 1971] 16880/72 Heading C3H [Also in Division C6] Soluble proteins are obtained by heating an aqueous suspension of a protein material at pH 1-3À5 and at about 105‹ C. to partially solubilize such proteins and then treating the acidtreated protein with a proteolytic enzyme to further hydrolyse the material. Preferred protein sources are soybean protein concentrate, cottonseed, and corn gluten and these may be hydrolysed with Bacillus subtilis alkaline protease, and Rhizopus niveus acid protease, preferably at pH 7À5 to 8À5 using Ca(OH) 2 as buffer followed by treatment with phosphoric acid to remove the calcium and improve the final flavour of the product.
