Abstract

1414634 Hydrolysis of skin rag proteins KYOWA HAKKO KOGYO KK 30 Oct 1972 [28 Oct 1971] 49975/72 Heading C3H A process for the production of an incomplete hydrolysate of skin rag (i.e. skin material from all animals, e.g. cows, horses, goats, pigs and sheep) containing more than 50% by weight of oligopeptides, which comprises hydrolysing the said skin rag by the action of from 0-1 to 5 wt. per cent based on the weight of the skin rag of a neutral or alkaline protease, other than collagenase, which protease is capable of decomposing collagen, at a pH of from 7-12 and at 20-70‹ C. for a period such that the incomplete hydrolysate thus formed contains more than 80% by weight of oligopeptides. The protein element of the skin rag may be denatured prior to hydrolysis with the protease, e.g. by heating. The protease may be derived from the Streptomyces or Bacillus geneva.
