Abstract
PURPOSE: To obtain an improved pickle solution, by using a hydrolyzate substantially containing no amino acid, prepared by hydrolyzing an unused protein material, as a protein material for the pickle solution.
CONSTITUTION: Protein or a protein-containing material (the white, milk casein, protein separated from soybeans, milk whey, skim milk, wheat gluten, etc.) is hydrolyzed with an acid, an alkali, or enzyme, to give a protein hydrolyzate having an average molecular weight of several hundredsWtens of thousands, which is adjusted to a pH of 5W8, concentrated or dried, so that it is powdered. This powder is blended with an organic carboxylic acid (citric acid or malic acid) or phytic acid (Na), to give a pickle solution for processing animal meat.
