Abstract

Procedimiento de elaboración y conservación de pasta de aceitunas. Permite obtener un aceite de oliva instantáneo de máxima calidad, manteniendo intactas sus propiedades organolépticas (sabor, olor y color) originales, así como sus propiedades dietéticas (antioxidantes), para su consumo en cualquier momento del año y situación geográfica. El procedimiento de la invención comprende las fases de: a) recolección de aceitunas en su punto óptimo de maduración; b) almacenamiento de las aceitunas; c) lavado de las aceitunas; d) triturado de las aceitunas para la obtención de una pasta; e) primer envasado de la pasta en una bolsa aséptica alimentaria; f) congelación de la pasta envasada; g) liofilización de la pasta congelada; y h) envasado final de la pasta liofilizada en cápsulas monodosis.
