TRAS EL OPORTUNO LAVADO DE LA PATATA PELADA Y TROCEADA, ESTA SE MEZCLA CON UNA SOLUCION ACUOSA EN LA QUE PARTICIPA UNA COMBINACION DE TRES AGENTES ANTIOXIDANTES, CONCRETAMENTE METABISULFITO POTASICO, BISULFITO SODICO Y DISULFITO SODICO, UN AGENTE BLANQUEANTE, CONCRETAMENTE SULFITO CALCICO, Y ACIDO DL. ASCORBICO. LA COMBINACION DE AGENTES ANTIOXIDANTES PARTICIPA EN 1 GRAMO POR LITRO DE AGUA, MIENTRAS QUE LOS OTROS DOS COMPONENTES LO HACEN, CADA UNO DE ELLOS, EN UNA PROPORCION DE 0,1 GRAMO POR LITRO DE AGUA. LA DISOLUCION ACUOSA EN SU CONJUNTA PARTICIPA EN 1 LITRO POR CADA KILOGRAMO DE PATATA Y EL TRATAMIENTO, QUE SE REALIZA A TEMPERATURA AMBIENTE, TIENE UNA DURACION COMPRENDIDA ENTRE 2 Y 5 MINUTOS. ENVASANDO FINALMENTE LAS PATATAS AL VACIO, SE CONSIGUE QUE LAS MISMAS MANTENGAN SUS CARACTERISTICAS ORGANOLEPTICAS DURANTE UN TIEMPO DEL ORDEN DE 50 DIAS.
