Abstract
PROCEDIMIENTO PARA LA CONSERVACION DE PATATAS FRESCAS PELADAS. LAS PATATAS, UNA VEZ PELADAS Y TROCEADAS O NO, SE MEZCLAN CON UNA SOLUCION ACUOSA EN LA QUE PARTICIPA UNA COMBINACION DE DOS AGENTES ANTIOXIDANTES, CONCRETAMENTE METABISULFITO POTASICO Y DISULFITO SODICO, ASI COMO UN AGENTE HUMECTANTE, CONCRETAMENTE SORBITOL, Y UN AGENTE SINERGICO, CONCRETAMENTE ACIDO D.L. ASCORBICO, EXISTIENDO ANTES DE INTRODUCIR LAS PATATAS PELADAS EN ESA SOLUCION ACUOSA UNA FASE INTERMEDIA DE HUMECTACION EN UN BAÑO DE AGUA Y DURANTE UN TIEMPO DE APROXIMADAMENTE 30 MINUTOS. LOS AGENTES ANTIOXIDANTES PARTICIPAN EN 0,6 GRAMOS POR LITRO DE AGUA, EL AGENTE HUMECTANTE EN 0,1 GRAMOS POR LITRO DE AGUA, Y EL ACIDO D.L. ASCORBICO EN 0,3 GRAMOS POR LITRO DE AGUA. LAS PATATAS, UNA VEZ MANTENIDAS DE 2 A 5 MINUTOS EN LA SOLUCION ACUOSA SON ESCURRIDAS Y FINALMENTE ENVASADAS, BIEN EN ATMOSFERA NORMAL O EN ATMOSFERA MODIFICADA O AL VACIO, CONSIGUIENDOSE QUE MANTENGAN SUS CARACTERISTICAS ORGANOLEPTICAS DURANTE UN TIEMPO DEL ORDEN DE 21 DIAS Y 50 DIAS EN EL CASO DE LA PATATA ENTERA.
