Couteau selon une des revendications 8 à 10, caractérisé en ce que la première partie (11) peut pivoter, à partir d'une position de base, dans une première direction (u2) dans une position d'utilisation afin de placer l'unité de lame dans une position de coupe, et dans une deuxième direction (u1) dans une position d'ouverture afin de placer l'unité de lame dans une position de changement de lame.
  12. Couteau selon une des revendications précédentes, caractérisé en ce que l'unité de lame, lors du déplacement entre la position d'extrémité arrière et la position d'extrémité avant, n'effectue qu'un faible mouvement de rotation de α ≤ 45° ou de α ≤ 30° ou de α ≤ 10° ou de α ≤ 5°.
