Description
- Die vorliegende Erfindung betrifft ein Messer zum Anschneiden von Lebensmittelprodukten, insbesondere von Würsten, gemäß dem Oberbegriff von Anspruch 1. Ferner betrifft die Erfindung eine Schneidvorrichtung zum Anschneiden von Lebensmittelprodukten sowie eine Vorrichtung und ein Verfahren zum Bearbeiten von Lebensmittelprodukten.
- Messer der eingangs genannten Art sind bekannt und werden zum Anschneiden von Lebensmittelprodukten wie etwa Würsten, Fleisch oder Käse verwendet. Insbesondere in der Lebensmittelindustrie werden bekannte Messer beispielsweise im Zusammenhang mit Pellstationen für stangenförmige Würste eingesetzt, um bei einer zu pellenden Wurst einen definierten Anschnitt zu schaffen. Der Anschnitt wird dabei z.B. in einem endseitigen Kuppenabschnitt der Wurst geschaffen, indem bei Zuführung der zu pellenden Wurst zu einer Pellstation die Wurst an einem Messer der eingangs genannten Art vorbeibewegt und durch das Messer ein Endstück von der Wurst abgetrennt wird. Aufgrund des definierten Anschnitts, der mit dem Messer geschaffen wurde, lässt sich die Wurst weiterverarbeiten. Insbesondere können durch den definierten Anschnitt Greifer der Pellstation die Pelle der Wurst fassen. Die Wurst wird dann relativ zu den Greifern in der Pellstation gefördert und dabei wird die Pelle von der Wurst abgezogen. Die gepellte Wurst kann dann beispielsweise einem Slicer zugeführt werden, der die Wurst dann in Scheiben schneidet. Die

- Gelöst wird die Aufgabe durch die Merkmale des unabhängigen Patentanspruchs 1. Weiterbildungen und Ausführungsformen der Erfindung sind in den Unteransprüchen angegeben.
- Es wird ein Messer zum Anschneiden von Lebensmittelprodukten angegeben, mit einem Messerkörper, an dem eine Schneide angeordnet ist, welche zwei Teilschneiden aufweist, die in einer gekrümmten Fläche aufeinander zulaufend angeordnet sind, und mit einem Halter, an dem das Messer um eine Drehachse drehbar angeordnet ist. Der Messerkörper ist bereichsweise teilkugelförmig oder schalenförmig ausgebildet und das Messer ist um die Drehachse derart drehbar angeordnet, dass durch eine Drehbewegung des Messers von einem Produkt, dessen Längsachse im Wesentlichen senkrecht zur Drehachse des Messers orientiert ist, ein Endstück abtrennbar ist.
- Durch das erfindungsgemäße Messer lässt sich ein Produkt besonders zuverlässig anschneiden und eine Pelle, die das Produkt umgibt, lässt sich besonders zuverlässig durchstoßen. Vorteilhaft an dem erfindungsgemäßen Messer ist zudem, dass sich damit ein besonders glatter Anschnitt an einem Lebensmittelprodukt realisieren lässt. Dadurch wird insbesondere nur eine geringfügige oder gar keine Verschmutzung an dem anzuschneidenden Produkt verursacht, so dass die Gefahr der Verkeimung der durch den Anschnitt geschaffenen Produktoberfläche minimiert wird.
- Ferner wird aufgrund der Form des erfindungsgemäßen Messers ein besonders kleines Produktende vom Produkt abgetrennt. Da das Produktende in der Regel als Abfall anfällt, lässt sich bei Verwendung des erfindungsgemäßen Messers zur Schaffung des Anschnitts der anfallende Abfall reduzieren.
- Bevorzugt bilden die Teilschneiden, welche insbesondere gleich lang sind, in der gekrümmten Fläche eine Spitze. Mittels der Spitze kann besonders zuverlässig eine das Produkt umgebende Pelle durchstoßen werden, um einen Anschnitt zu schaffen.
- Das erfindungsgemäße Messer weist einen Messerkörper auf, an dem die Schneide angeordnet ist. Der Messerkörper ist zumindest bereichsweise teilkugelförmig oder schalenförmig ausgebildet. Insofern ergibt sich die gekrümmte Fläche durch die Form des Messerkörpers.
- Bevorzugt ist der Messerkörper aus einem festen Werkstoff, insbesondere aus Metall, hergestellt. Durch die Teilkugelform oder Schalenform einerseits und durch die Verwendung eines festen Werkstoffes andererseits lässt sich ein besonders stabiles Messer realisieren, dessen Messerkörper sich auch bei starker Beanspruchung nicht über ein zulässiges Maß hinaus verformt.
- Nach einer weiteren bevorzugten Ausführungsform der Erfindung sind die Teilschneiden an einer spitz zulaufenden Erweiterung des teilkugel- oder schalenförmigen Bereichs des Messerkörpers ausgebildet. Insbesondere ist das Messer bezüglich einer Ebene, in der eine Spitze liegt, die von den Teilschneiden gebildet wird, symmetrisch ausgebildet.
- Nach einer weiteren bevorzugten Ausführungsform der Erfindung weist das Messer Mittel zum drehbaren Anbringen des Messers an dem Halter auf.
- Dieses Messer eignet sich besonders gut, um einen Anschnitt an einem Produktende herzustellen. Insbesondere kann alleine aufgrund der Drehbewegung des Messers um die Drehachse in ein im Wirkungsbereich des Messers angeordnetes Produkt eingedrungen und das Produktende mit den beiden Teilschneiden abgetrennt werden. Hierbei ist vorteilhaft, dass außer einer Mechanik für die Drehbewegung des Messers relativ zum Produkt keine weiteren Einrichtungen zur Herstellung eines Anschnitts benötigt werden.
- Ferner wird eine Schneidvorrichtung zum Anschneiden von Lebensmittelprodukten angegeben, die ein erfindungsgemäßes Messer und den Halter, an dem das Messer drehbar angeordnet ist, aufweist. Die erfindungsgemäße Schneidvorrichtung ist so ausgebildet, dass durch eine Drehbewegung des Messers von einem insbesondere stangenförmigen Lebensmittelprodukt, wie beispielsweise einer Wurst, dessen Längsachse im Wesentlichen senkrecht zur Drehachse des Messers orientiert ist, ein Endstück abtrennbar ist.
- Vorteilhaft an der erfindungsgemäßen Schneidvorrichtung ist, dass alleine durch eine Drehbewegung des Messers relativ zu einem im Wirkungsbereich des Messers angeordneten Produkt ein Anschnitt hergestellt werden kann.
- Bevorzugt weist das Messer eine Schneide zum Abtrennen des Endstücks auf, die in Bezug auf die Richtung der Drehbewegung an einem Frontbereich des Messers angeordnet ist.
- Insbesondere weist das Messer eine Schneide zum Abtrennen des Endstücks auf, die von der Drehachse des Messers beabstandet angeordnet ist und eine Ausdehnung in Richtung der Drehachse aufweist. Bildlich gesprochen ist damit die Schneide derart relativ zur Drehachse angeordnet, dass sich die Schneide bei drehendem Messer zumindest teilweise längs einer Oberfläche eines imaginären Körpers bewegt und dabei längs dieser Oberfläche ein Produkt durchtrennt.
- Bevorzugt weist das Messer eine Schneide zum Abtrennen des Produktendstücks und zwei voneinander beabstandete, die Drehachse des Messers definierende Lagerabschnitte auf, die in Gegenabschnitten des Halters drehbar gelagert sind. Die Schneide ist dabei bevorzugt zwischen den Lagerabschnitten angeordnet.
- Nach einer weiteren bevorzugten Ausführungsform der Erfindung weist die Schneidvorrichtung einen Haltebügel für ein aufzuschneidendes Produkt auf. Durch den Haltebügel lässt sich das Produkt beim Abtrennen des Endstücks zumindest in einer Richtung in einer vorgegebenen Position halten bzw. es lässt sich die Bewegbarkeit des Produkts in dieser Richtung begrenzen.
- Bevorzugt ist der Haltebügel in Form einer ringförmigen Manschette ausgebildet. Die Manschette weist bevorzugt einen Innendurchmesser auf, welcher kleiner ist als der Außendurchmesser eines anzuschneidenden Lebensmittelprodukts. Die ringförmige Manschette kann somit einerseits als Aufnahme für ein kuppenförmiges Endstück des Lebensmittelprodukts und andererseits als Anschlag für das Lebensmittelprodukt dienen.
- Ferner wird eine Vorrichtung zum Bearbeiten von Lebensmittelprodukten mit einem erfindungsgemäßen Messer und/oder einer erfindungsgemäßen Schneidvorrichtung angegeben. Bevorzugt weist die erfindungsgemäße Vorrichtung ferner eine Produktzuführeinrichtung auf. Die Produktzuführeinrichtung ist dazu ausgebildet, ein Produkt in einen Wirkungsbereich des Messers zu bringen, um mit dem Messer ein Endstück von dem Produkt abzutrennen. Insbesondere ist die Produktzuführeinrichtung dazu ausgebildet, das Produkt mit im Wesentlichen senkrecht zu einer Drehachse des Messers orientierter Produktlängsachse zu bewegen. Ferner wird ein Verfahren zum Bearbeiten eines Lebensmittelprodukts, insbesondere zum Anschneiden einer Wurst, mittels einer erfindungsgemäßen Schneidvorrichtung angegeben, bei dem mittels einer Produktzuführeinrichtung ein insbesondere stangenförmiges Produkt, dessen Längsachse im Wesentlichen senkrecht zur Drehachse des Messers orientiert ist, in den Wirkungsbereich des in einer Warteposition befindlichen Messers gebracht wird. Anschließend wird das Messer ausgehend von der Warteposition um die Drehachse gedreht und durch die Drehbewegung wird mittels des Messers ein Endstück von dem Produkt abgetrennt. Bevorzugt wird das angeschnittene Produkt, insbesondere unmittelbar nach dem Abtrennen des Endstücks, gepellt.
- Nachfolgend wird die Erfindung beispielhaft anhand vorteilhafter Ausführungsformen und unter Bezugnahme auf die beigefügten Zeichnungen beschrieben. Es zeigen:

Fig. 1 bis 4 gezeigte Schneidvorrichtung 1 weist ein Messer 2 und einen Halter 3 auf, an dem das Messer 2 drehbar angeordnet ist. - Das Messer 2 weist einen Messerkörper 4 auf, der schalenförmig ausgebildet ist und an dem an einer spitz zulaufenden Erweiterung 5 zwei Teilschneiden 6 angeordnet sind (
Fig. 3 und4 ). - Durch die schalenförmige Ausbildung des Messerkörpers 4 und der spitz zulaufenden Erweiterung 5 liegen die beiden Teilschneiden 6 in einer gekrümmten Fläche und laufen in Richtung einer Spitze 7 der sich verjüngenden Erweiterung 5 aufeinander zu. Die beiden Teilschneiden 6 sind dabei jeweils gleich lang.
- Am Messerkörper 4 sind ferner zwei voneinander beabstandete Lagerzapfen 8 angeordnet, die in dafür vorgesehenen Aufnahmen 9 des Halters 3 gelagert sind, so dass das Messer 2 um die von den Lagerzapfen 8 definierte Drehachse 10 drehbar gelagert ist. Zum Antreiben des Messers 2 ist ein insbesondere elektrischer Antrieb 11 vorgesehen, der an einem Flansch 12 des Halters 3 angeordnet ist.
- Bei der in
Fig. 1 gezeigten Ansicht befindet sich das Messer 2 in einer Warteposition. Eine in denFig. 1 bis 4 nicht näher dargestellte Produktzuführeinrichtung fördert eine Wurst 13, deren Längsachse senkrecht zur Drehachse 10 des Messers 2 ausgerichtet ist, längs der inFig. 1 gekennzeichneten Förderrichtung F. Dadurch gelangt ein Endstück 14 der Wurst 13 in den Wirkungsbereich des Messers 2, was inFig. 2 gezeigt ist. - Die Wurst 13 kann von einer Pelle umgeben sein, so dass die Wurst 13 dem Messer 2 zugeführt wird, um durch Abtrennen des Endstücks 14 mittels des Messers 2 einen definierten Anschnitt zu schaffen, an welchem Greifer 22 einer Pellstation 20 (vgl. insbesondere
Fig. 7 ) die Pelle greifen und von der Wurst 13 entfernen können. Ein Vorteil der Erfindung ist, dass bei einem mittels des erfindungsgemäßen Messers 2 geschaffenem Anschnitt eine abzuziehende Pelle besonders sicher und zuverlässig von automatischen Greifern 22 erfasst werden kann. - Das Messer 2 wird in Bezug auf die in
Fig. 1 bis 4 gezeigten Ansichten entgegen dem Uhrzeigersinn um die Drehachse 10 gedreht. Dabei durchstößt die Spitze 7 die Pelle der Wurst 13 und die beiderseits der Spitze 7 angeordneten Teilschneiden 6 trennen das Endstück 14 von der Wurst 13 ab, was insbesondere aus denFig. 3 und4 ersichtlich ist. - Um die Wurst 13 in der gewünschten Position zu halten und/oder zu verhindern, dass die Wurst 13 nach oben ausweicht, weist der Halter 3 einen Haltebügel 15 auf, der einen Anschlag für die Wurst 13 bildet. Insbesondere bildet der Haltebügel 15 einen Anschlag für die Wurst 13 in Bezug auf die Förderrichtung F. Dadurch lässt sich das Endstück 14 der Wurst 13 in einer vorgegebenen Position und in reproduzierbarer Art und Weise relativ zu dem in der Warteposition angeordneten Messer 2 positionieren.
- Wie insbesondere aus
Fig. 4 ersichtlich ist, ist das Endstück von der Wurst 13 abgetrennt, nachdem das Messer 2 ausgehend von der inFig. 1 gezeigten Warteposition seinen Wirkungsbereich durchlaufen hat. Anschließend kann das Messer 2 - gegebenenfalls mit einem Stopp in einer Warteposition - weiter gedreht werden, um die nächste Wurst anzuschneiden. - Nachdem das Endstück 14 abgetrennt ist, wird die angeschnittene Wurst 13 entgegen der Förderrichtung F bewegt, insbesondere um anschließend die angeschnittene Wurst 13 in einer Querrichtung zur Förderrichtung F bewegen zu können, ohne dass die angeschnittene Wurst 13 mit dem Haltebügel 15 in Kontakt kommt. Beispielsweise wird die angeschnittene Wurst 13 nach der Abtrennung des Endstücks 14 durch weitere Förderbewegungen der bereits oben erwähnten Pellstation zugeführt, die die Wurst 13 ausgehend von dem Anschnitt pellt.
- Die in
Fig. 5 bis 7 gezeigte erfindungsgemäße Vorrichtung 21 umfasst eine an einem Gehäuse 16 angeordnete erfindungsgemäße Schneidvorrichtung, wie sie in denFig. 1 bis 4 beispielhaft beschrieben ist. Ferner besitzt die Vorrichtung 21 eine Produktzuführeinrichtung 17 und eine daran angeordnete Aufnahme 18. Auf die Aufnahme 18 gelegte Würste gelangen aufgrund eines Gefälles in der Aufnahme 18 nacheinander in die Produktzuführeinrichtung 17. - Die Produktzuführeinrichtung 17 ist dazu ausgebildet, die Wurst 13 (vgl.
Fig. 5 ) in Förderrichtung F zu fördern, wobei die Wurst 13 senkrecht zur Drehachse des Messers der an dem Gehäuse 16 angeordneten erfindungsgemäßen Schneidvorrichtung orientiert ist. Nachdem ein Endstück 14 von der Wurst 13 durch die erfindungsgemäße Schneidvorrichtung abgetrennt wurde, wie vorstehend z.B. in Bezug auf dieFig. 1 bis 4 beschrieben wurde, übergibt die Produktzuführeinrichtung 17 die angeschnittene Wurst 13 an ein Förderband 19, das die angeschnittene Wurst 13 in Förderrichtung F der Pellstation 20 zum Pellen der Wurst 13 zuführt. Die Pellstation 20 umfasst die Greifer 22, welche die Pelle in dem geschaffenen Anschnitt der Wurst 13 greifen. Die Wurst 13 wird dann unter den Greifern 22 hindurchgefördert, wobei die Pelle von der Wurst 13 entfernt wird. - Mit dem erfindungsgemäßen Messer bzw. der erfindungsgemäßen Schneidvorrichtung lassen sich grundsätzlich auch andere Lebensmittelprodukte als Würste anschneiden. Die Anwendung der Erfindung beschränkt sich außerdem nicht auf eine Vorbereitung zum Pellen. Das Anschneiden kann vielmehr auch anderen Zwecken dienen.
- Wie aus den
Fig. 8 bis 10 besonders gut zu erkennen ist, ist der Messerkörper 4 des Messers 2 teilschalenförmig ausgebildet und umfasst die spitz zulaufende Erweiterung 5 mit der Spitze 7 und den beiden Teilschneiden 6. Ferner ist ersichtlich, dass das Messer 2 bezüglich einer Ebene symmetrisch ausgebildet ist. Die Spitze 7 liegt dabei in der Ebene und die von den Lagerzapfen 8 definierte Drehachse des Messers 2 verläuft senkrecht zu dieser Ebene. - Die in den
Fig. 11 bis 13 gezeigte Schneidvorrichtung 1 kann an der in denFig. 5 bis 7 gezeigten Vorrichtung 21, insbesondere an dem Gehäuse 16, angeordnet sein. Zur Montage der Schneidvorrichtung 1 an dem Gehäuse 16 dient insbesondere eine Halteeinrichtung 24, welche an dem Gehäuse 16 fixiert ist (vgl.Fig. 6 ) und die zum Halten von Trägern 25 dient, an denen die Schneidvorrichtung 1 fixiert ist. Die Träger 25 können relativ zur Halteeinrichtung 24 in Förderrichtung F und entgegen der Förderrichtung F einer Wurst 13 beweglich sein. - Bei beweglichen Trägern 25 kann die Schneidvorrichtung 1, wie in
Fig. 11 gezeigt, in einer Parkposition angeordnet werden. Dabei sind die Träger 25 soweit in die Halteeinrichtung 24 eingefahren, dass der Halter 3 für das Messer 2 nahezu an der Halteeinrichtung 24 anschlägt. - Zur Schaffung eines Anschnitts an einer Wurst 13 können die Träger 25 aus der Halteeinrichtung 24 herausgefahren werden. Die Schneidvorrichtung 1 wird dabei entgegen der Förderichtung F der Wurst 13 bewegt, bis das Endstück 14 der Wurst 13 in den Wirkungsbereich des in Warteposition befindlichen Messers 2 gelangt ist (vgl.
Fig. 12 ). Alternativ oder ergänzend kann - wie in Bezug auf dieFig. 1 bis 4 beschrieben - die Wurst 13 in Förderrichtung F gefördert werden, um diese in den Wirkungsbereich des Messers 2 zu bringen. - Nachdem das Endstück von der Wurst 13 abgetrennt ist, kann die Wurst 13 - wie oben beschrieben - hin zu der Pellstation 20 (vgl.
Fig. 5 bis 7 ) gefördert werden. Ferner kann die Schneidvorrichtung 1 wieder durch Bewegung der Träger 25 entgegen der Förderrichtung F bewegt werden, bis die Schneidvorrichtung 1 erneut in die Parkposition gelangt ist (vgl.Fig. 13 ). - Bei der in
Fig. 14 gezeigten Ansicht der Schneidvorrichtung 1 ist die Wurst 13 in den Wirkungsbereich des in Warteposition befindlichen Messers 2 gelangt. Der Haltebügel 15 bildet dabei einen Anschlag für die Wurst 13. Das Messer 2 wird dann aus der Warteposition herausgedreht. - Bei der in
Fig. 15 gezeigten Ansicht hat die Spitze 7 die Wurst 13 bereits durchstoßen und die Teilschneiden 6 haben schon teilweise ein Endstück von der Wurst 13 abgetrennt. Bei der inFig. 16 gezeigten Ansicht hat das Messer 2 das Endstück von der Wurst 13 abgetrennt. Anschließend kann die Wurst 13 - wie weiter oben beschrieben - zu einer Pellstation gefördert werden, um die Wurst 13 ausgehend von dem geschaffenen Anschnitt zu pellen. -

Claims (14)
- Messer zum Anschneiden von Lebensmittelprodukten (13), insbesondere Würsten, mit einem Messerkörper (4), an dem eine Schneide angeordnet ist, die zwei Teilschneiden (6) aufweist, wobei die Teilschneiden (6) in einer gekrümmten Fläche aufeinander zulaufend angeordnet sind, und mit einem Halter (3), an dem das Messer (2) um eine Drehachse (10) drehbar angeordnet ist, dadurch gekennzeichnet, dass
der Messerkörper (4) zumindest bereichsweise teilkugelförmig oder schalenförmig ausgebildet ist, und
dass das Messer (2) um die Drehachse (10) derart drehbar angeordnet ist, dass durch eine Drehbewegung des Messers (2) von einem Produkt (13), dessen Längsachse im Wesentlichen senkrecht zur Drehachse (10) des Messers (2) orientiert ist, ein Endstück (14) abtrennbar ist. - Messer nach Anspruch 1,
dadurch gekennzeichnet, dass
die Teilschneiden (6) in der gekrümmten Fläche eine Spitze (7) bilden. - Messer nach Anspruch 1 oder 2,
dadurch gekennzeichnet, dass
die Teilschneiden (6) gleich lang sind. - Messer nach einem der vorstehenden Ansprüche,
dadurch gekennzeichnet, dass
die Teilschneiden (6) an einer spitz zulaufenden Erweiterung (5) des teilkugel- oder schalenförmigen Bereiches des Messerkörpers (4) ausgebildet sind. - Messer nach einem der vorstehenden Ansprüche,

das Messer (2) bezüglich einer Ebene, in der eine von den Teilschneiden (6) gebildete Spitze (7) liegt, symmetrisch ausgebildet ist. - Messer nach einem der vorstehenden Ansprüche,

das Messer (2) Mittel (8) zum drehbaren Anbringen des Messers (2) an dem Halter (3) aufweist. - Schneidvorrichtung zum Anschneiden von Lebensmittelprodukten (13), insbesondere Würsten, mit einem Messer (2) nach einem der vorstehenden Ansprüche.
- Schneidvorrichtung nach Anspruch 7,
dadurch gekennzeichnet, dass
die Schneide (6) des Messers (2) zum Abtrennen des Endstücks (14) vorgesehen ist, wobei die Schneide (6) in Bezug auf die Richtung der Drehbewegung an einem Frontbereich des Messers (2) angeordnet ist. - Schneidvorrichtung nach Anspruch 7 oder 8,
dadurch gekennzeichnet, dass
die Schneide (6) des Messers (2) zum Abtrennen des Endstücks (14) vorgesehen ist, wobei die Schneide (6) von der Drehachse (10) des Messers (2) beabstandet angeordnet ist und eine Ausdehnung in einer Richtung parallel zur Drehachse (10) aufweist. - Schneidvorrichtung nach einem der Ansprüche 7 bis 9,
dadurch gekennzeichnet, dass
die Schneide (6) des Messers (2) zum Abtrennen des Endstücks (14) vorgesehen ist und das Messers (2) zwei voneinander beabstandete Lagerabschnitte (8) aufweist, welche die Drehachse (10) des Messers (2) definieren, wobei die Lagerabschnitte (8) in Gegenabschnitten (9) des Halters (3) drehbar gelagert sind, wobei bevorzugt sich die Schneide (6) zwischen den Lagerabschnitten (8) befindet. - Schneidvorrichtung nach einem der Ansprüche 7 bis 10,
dadurch gekennzeichnet, dass
die Schneidvorrichtung (1) einen Haltebügel (15) für ein aufzuschneidendes Produkt (13) aufweist, der dazu ausgebildet ist, das Produkt (13) beim Abtrennen des Endstücks (14) zumindest in einer Richtung in einer vorgegebenen Position zu halten. - Vorrichtung zum Bearbeiten von Lebensmittelprodukten (13), insbesondere zum Anschneiden von Würsten, mit einem Messer (2) nach zumindest einem der Ansprüche 1 bis 6 und/oder mit einer Schneidvorrichtung (1) nach zumindest einem der Ansprüche 7 bis 11, wobei vorzugsweise die Vorrichtung außerdem zum Pellen der angeschnittenen Würste ausgebildet ist.
- Vorrichtung nach Anspruch 12,
dadurch gekennzeichnet, dass
eine Produktzuführeinrichtung (17) vorgesehen ist, die dazu ausgebildet ist, das Produkt (13) in einen Wirkungsbereich des Messers (2) zu bringen, um mit dem Messer (2) das Endstück (14) von dem Produkt (13) abzutrennen, wobei vorzugsweise die Produktzuführeinrichtung (17) ferner dazu ausgebildet ist, das Produkt (13) mit im Wesentlichen senkrecht zu einer Drehachse (10) des Messers (2) orientierter Produktlängsachse zu bewegen. - Verfahren zum Bearbeiten eines Lebensmittelprodukts (13), insbesondere zum Anschneiden einer Wurst, mittels einer Schneidvorrichtung (1) nach zumindest einem der Ansprüche 7 bis 11, bei dem- mittels einer Produktzuführeinrichtung (17) das Produkt (13), dessen Längsachse im Wesentlichen senkrecht zur Drehachse (10) des Messers (2) orientiert ist, in den Wirkungsbereich des in einer Warteposition befindlichen Messers (2) gebracht wird,- das Messer (2) ausgehend von der Warteposition um die Drehachse (10) gedreht wird, und- mit dem Messer (2) das Endstück (14) von dem Produkt (13) abgetrennt wird,- wobei vorzugsweise das angeschnittene Produkt (13) gepellt wird, insbesondere unmittelbar nach dem Abtrennen des Endstücks (14).
