Description

Die Erfindung betrifft ein rotierend antreibbares Schneidmesser, insbesondere für mit hoher Schnittfolge arbeitende Vorrichtungen zum Aufschneiden von Lebensmittelprodukten wie Schinken, Wurst, Käse und dergleichen, mit einem zentralen Befestigungsbereich und einem als Schneide dienenden Außenumfang.
An derartige Messer, die insbesondere bei so genannten Slicern zum Aufschneiden von Lebensmittelprodukten Verwendung finden, werden hinsichtlich Steifigkeit und Festigkeit sehr hohe Anforderungen gestellt. Diese Forderungen führen dazu, dass diese Messer in aufwändigen Herstellungsverfahren gefertigt werden müssen und dabei relativ hohes Gewicht aufweisen.
Aufgabe der Erfindung ist es, ein Messer der eingangs angegebenen Art zu schaffen, das sich im Vergleich zu herkömmlichen Messern durch höhere Steifigkeit bei gleichzeitig geringerem Gewicht auszeichnet und das überdies kostengünstig gefertigt werden kann.
Gelöst wird diese Aufgabe nach der Erfindung im wesentlichen dadurch, dass zwischen dem im wesentlichen eben ausgebildeten und zumindest eine mittige Durchbrechung aufweisenden zentralen Befestigungsbereich und einem Randbereich, dessen Außenumfang als Schneidkante ausgebildet ist, ein Stabilisierungsbereich in Form von mindestens einer umlaufenden Auswölbung vorgesehen ist.
Die insbesondere wulstförmig gestaltete, umlaufende Auswölbung führt bei vergleichsweise geringer Materialstärke zu einer hohen Steifigkeit des Messers und beeinträchtigt dabei in keiner Weise die randseitige Messergestaltung, insbesondere die Ausbildung der Schneidkante.
Besonders vorteilhafte Ausgestaltungen der Erfindung sind in den Unteransprüchen angegeben.
Ein Ausführungsbeispiel der Erfindung wird unter Bezugnahme auf die Zeichnung erläutert, deren einzige Figur eine schematische Axialschnittansicht einer Ausführungsform eines erfindungsgemäßen Messers zeigt.
Das zur Verwendung bei Slicern bestimmte Messer umfasst einen zentralen, im wesentlichen eben ausgebildeten Befestigungsbereich 1 mit einer mittigen Durchbrechung 2. Diese Durchbrechung 2 dient im Falle eines Kreismessers zu Befestigungszwecken und im Falle eines Sichelmessers zur Zentrierung, wobei bei einem derartigen Sichelmesser mit radialem Abstand zur Durchbrechung 2 mehrere um die Durchbrechung 2 herum verteil angeordnete Befestigungsöffnungen vorgesehen sind.
Radial nach außen geht dieser zentrale Befestigungsbereich 1 in eine Auswölbung 7 über, die einen Stabilisierungsbereich bildet. Die im Querschnitt kontinuierlich gekrümmte Auswölbung 5 umgibt den zentralen Befestigungsbereich 1, so dass dieser praktisch vertieft in einer Mulde liegt.
An die Auswölbung 5 schließt sich radial nach außen ein Randbereich 3 an, dessen Umfang als Schneidkante 4 ausgebildet ist. Legt man einerseits durch die Schneidkante 4 eine Basisebene 6 und durch den Scheitel der Auswölbung 5 eine Topebene 7, dann befindet sich der zentrale Befestigungsbereich 1 zwischen diesen beiden Ebenen 6, 7, wobei die Auswölbung 5 und die Neigung des Randbereichs 3 bezüglich der erwähnten, zueinander parallelen Ebenen so gewählt ist, dass im Regelfall der Abstand der zentralen Befestigungsebene 1 bezüglich der Basisebene 6 geringer ist als bezüglich der Topebene 7.
Das erfindungsgemäße Prinzip der Erhöhung der Festigkeit bzw. Steifigkeit des Messers unter gleichzeitiger Minimierung des Gewichts lässt sich sowohl bei Messern verwenden, deren Schneidkante auf einem Kreis liegt, als auch bei Messern, deren Schneidkante sichelförmig bzw. über den Umfang mit zunehmendem Radius verläuft.
Bei ringförmiger, in sich geschlossener Auswölbung 5 lässt sich der sichelförmige Schneidkantenverlauf durch entsprechende Gestaltung des Randbereichs 3 erzielen, aber es ist auch möglich, die Auswölbung 5 über den Umfang dem Verlauf der Schneidkante folgen zu lassen, so dass der Randbereich 3 auch bei einem Sichelmesser über seinen Umfang eine im wesentlichen gleiche radiale Erstreckung aufweist.

Claims (8)

  1. Rotierend antreibbares Schneidmesser, insbesondere für mit hoher Schnittfolge arbeitende Vorrichtungen zum Aufschneiden von Lebensmittelprodukten wie Schinken, Wurst, Käse und dergleichen, mit einem zentralen Befestigungsbereich (1) und einem als Schneide dienenden Außenumfang, wobei zwischen dem im wesentlichen eben ausgebildeten und zumindest eine mittige Durchbrechung (2) aufweisenden zentralen Befestigungsbereich (1) und einem Randbereich (3), dessen Außenumfang als Schneidkante (4) ausgebildet ist, ein Stabilisierungsbereich in Form von mindestens einer umlaufenden Auswölbung (5) vorgesehen ist,
    dadurch gekennzeichnet, dass die Auswölbung (5) im Querschnitt wulstförmig und kontinuierlich gekrümmt ausgebildet ist,
    dass die Schneidkante (4) in einer im Axialschnitt des Schneidmessers die untere Begrenzung des Schneidmessers bildenden Basisebene (6) gelegen ist, und
    dass die Ebene des zentralen Befestigungsbereichs (1) in Axialrichtung betrachtet zwischen der Basisebene (6) und einer durch den Scheitel der kontinuierlich gekrümmten Auswölbung (5) verlaufenden Topebene (7) gelegen ist,
    wobei der Abstand des zentralen Befestigungsbereichs (1) von der Basisebene (6) und der Topebene (7) jeweils größer als die Materialdicke des Schneidmessers ist.
  2. Schneidmesser nach Anspruch 1,
    dadurch gekennzeichnet, dass der Abstand des zentralen Beiestigungsbereichs (1) von der Basisebene (6) geringer ist als ihr Abstand von der Topebene (7).
  3. Schneidmesser nach einem der vorhergehenden Ansprüche,
    dadurch gekennzeichnet, dass der Randbereich (3) unter einem spitzen Winkel zur Basisebene (6) verläuft.
  4. Schneidmesser nach einem der vorhergehenden Ansprüche,
    dadurch gekennzeichnet, dass die radiale Erstreckung der Auswölbung (5) etwa der radialen Erstreckung des Randbereichs (3) entspricht.
  5. Schneidmesser nach einem der vorhergehenden Ansprüche,
    dadurch gekennzeichnet, dass der Außenumfang des mit der Schneidkante (4) versehenen Randbereichs (3) kreisförmig ist.
  6. Schneidmesser nach einem oder mehreren der Ansprüche 1 bis 4,
    dadurch gekennzeichnet, dass bei sichelförmig verlaufender Schneidkante (4) die Auswölbung (5) in Umfangsrichtung des Messers dem Schneidkantenverlauf zumindest im wesentlichen folgt.
  7. Schneidmesser nach einem oder mehreren der Ansprüche 1 bis 4,
       dadurch gekennzeichnet, dass bei sichelförmig verlaufender Schneidkante (4) die Auswölbung (5) konzentrisch zur Messerachse (9) verläuft.
  8. Schneidmesser nach Anspruch 6 oder 7,
    dadurch gekennzeichnet, dass die mittige Durchbrechung (2) eine Zentrieröffnung bildet und dass mit radialem Abstand zu dieser Zentrieröffnung und um die Zentrieröffnung herum verteilt BefestigungsöShungen vorgesehen sind.
