Description
- Die Erfindung betrifft ein Verfahren zum Reinigen von Geschirr.
- Im gewerblichen Bereich (Gastronomie, Großküchen, etc.) wird Geschirr in der Regel maschinell gespült. Gewerbliche Geschirrspülmaschinen weisen kurze Spülzyklen auf, da das Geschirr schnell für eine weitere Benutzung zur Verfügung stehen soll. Die Entfernung angetrockneter, verkrusteter oder eingebrannter Nahrungsmittelreste und sonstiger Verschmutzungen ist schwierig, da weder ein mechanisches Einwirken mit Bürsten oder dergleichen beim maschinellen Geschirrspülen möglich ist, noch eine lange Einwirkdauer chemischer Reinigungsmittel (wie beispielsweise bei Haushaltsspülmaschinen) möglich ist. Es ist daher aus offenkundiger Vorbenutzung bekannt, besonders verschmutzte Geschirrteile wie beispielsweise Töpfe, Pfannen oder Backbleche in einem separaten Behälter in einer Reinigerlösung vorzuweichen, erst anschließend wird die übliche maschinelle Reinigung durchgeführt. Dies ist aufwendig.

WO A 96/15710 - Der Erfindung liegt die Aufgabe zugrunde, ein Verfahren zum Reinigen von Geschirr zu schaffen, das ein sicheres Entfernen auch hartnäckiger Verunreinigungen ermöglicht. Das erfindungsgemäße Verfahren wird in Anspruch 1 definiert.
- Zunächst seien einige im Rahmen der Erfindung verwendete Begriffe erläutert.
- Der Begriff Geschirr umfasst alle im Küchenbereich verwendete Gegenstände, die einer maschinellen Reinigung zugänglich sind, einschließlich Töpfe, Tabletts, Pfannen, Brat-und Backblechen, etc.
- Dieses Geschirr wird erfindungsgemäß mit einer alkalischen Reinigerlösung besprüht. Die Reinigerlösung ist die anwendungsfertige Lösung, die in der Regel aus einem flüssigen Reinigerkonzentrat oder einem fest (insbesondere pulverförmig) formulierten Reiniger mit Wasser hergestellt wird. Es kann sich hierbei um übliches Leitungswasser (Stadtwasser), enthärtetes oder vollentsalztes Wasser handeln.
- Bei dem erfindungsgemäßen Besprühen handelt es sich vorzugsweise um ein feines nebelartiges Besprühen, das die Oberfläche des Geschirrs mit der Reinigerlösung benetzt, ohne mechanisch (in Form harter Wasserstrahlen) auf diese Oberfläche einzuwirken. Das Besprühen soll somit ein chemisches Einwirken der Reinigerlösung und damit ein Einweichen der Verunreinigungen ermöglichen. Erfindungsgemäß ist es jedoch auch möglich, dieses Besprühen mit großen Mengen Reinigerlösung und sog. harten Sprühstrahlen durchzuführen, insbesondere dann, wenn die alkalische Reinigerlösung in einem Tank einer Spülmaschine ständig umgewälzt wird.
- Das Hauptreinigen erfolgt erfindungsgemäß mit einer enzymatischen Reinigerlösung. Diese enthält Enzyme als reinigungsaktive Wirkstoffe, vorzugsweise proteolytische Enzyme wie beispielsweise Amylasen oder Proteasen.
- Die Erfindung beruht auf der überraschenden Erkenntnis, dass die Kombination eines hochalkalischen Vorreinigens mit einem enzymatischen Hauptreinigen zu einer guten und schnellen Entfernung auch hartnäckiger Verunreinigungen wie beispielsweise angebrannter Nahrungsmittelreste führt.
- Der pH-Wert der alkalischen Reinigerlösung liegt bei wenigstens 11.
- Das bevorzugte feine Besprühen mit entsprechend fein verteilten Tröpfchen kann erfindungsgemäß mit verhältnismäßig geringen Mengen alkalischer Reinigerlösung pro Zeiteinheit erfolgen. In einer typischen gewerblichen Geschirrspülmaschine betragen die auf diese Weise versprühten Mengen an Reinigerlösung zwischen 0,3 und 20 l/min, vorzugsweise 0,5 bis 10 l/min, weiter vorzugsweise 1 bis 5 l/min Reinigerlösung. Wenn eine alkalische Reinigerlösung durch das Umpumpsystem der Spülmaschine umgewälzt und dabei mit harten Sprühstrahlen auf das Geschirr gesprüht wird, liegen die so versprühten Reinigerlösungsmengen üblicherweise bei einigen hundert l/min, typisch sind beispielsweise 300 bis 400 l/min.
- Die alkalische Reinigerlösung wirkt zwischen 60 und 180 s auf das Geschirr ein. Dieses Einwirken kann unter fortlaufendem weiteren Besprühen des Geschirrs (entweder mit nebelartigem Besprühen oder harten Sprühstrahlen) geschehen. Bevorzugt ist es jedoch, nach dem vollständigen Benetzen der Oberfläche des Geschirrs eine Einwirkzeit vorzusehen, in der kein weiteres gezieltes und absichtliches Besprühen des Geschirrs mit alkalischer Reinigerlösung stattfindet.
- In der alkalischen Reinigerlösung beträgt die Alkalikonzentration (berechnet als Kaliumhydroxid) 0,2 bis 2 Gew.-%.
- Das erfindungsgemäße Verfahren wird in sog. Eintank-Spülmaschinen durchgeführt. In Eintank-Spülmaschinen verbleibt das Geschirr stationär in der Spülmaschine und die verschiedenen Spül- und Reinigungsschritte werden sequentiell durchgeführt. In einer Eintank-Spülmaschine wird daher bei einem Einwirken ohne weitere Besprühung das entsprechende Düsensystem vollständig abgeschaltet. Von besonderem Vorteil ist es bei einer Eintankmaschine, zum Aufsprühen der alkalischen Reinigerlösung das sowieso vorhandene Düsensystem zu nutzen, das zum Aufbringen des Klarspülers und/oder Nachspülwassers verwendet wird. Auf diese Weise kann erfindungsgemäß eine übliche Eintank-Spül-maschine verwendet werden, ohne dass diese umoder ausgebaut werden müsste mit einem separaten Düsensystem. Bei einer Mehrtank-Maschine durchläuft das Geschirr auf einer Transporteinrichtung (in der Regel einem Transportband) verschiedene sog. Tanks, in denen sämtliche Reinigungs- und Spülschritte (je einer pro Tank) gleichzeitig ablaufen.
- In der Praxis kann beispielsweise ein Einsprühen für 12 s gefolgt von einer Einwirkzeit (ohne weiteres Einsprühen) von 120 s vorgesehen sein.
- An das erfindungsgemäße Besprühen schließt sich ein Hauptreinigen mit einer enzymatischen Reinigerlösung an. Dieses Hauptreinigen kann unmittelbar im Anschluss an das Besprühen (und das Einwirken) erfolgen, die noch auf der Geschirroberfläche befindliche alkalische Reinigerlösung wird dann von dem enzymatischen Reiniger abgewaschen. Alternativ kann eine Zwischenspülung vorgesehen sein, um die Alkalität von der Geschirroberfläche weitgehend zu beseitigen. Arbeitet man ohne Zwischenspülung, wird an der Oberfläche anhaftende alkalische Reinigerlösung in den Hauptreinigungsschritt verschleppt, so dass ggf. enzymatischer Reiniger in entsprechend größeren Mengen nachdosiert werden muss, um die gewünschte Zusammensetzung der Hauptreinigerlösung aufrecht zu erhalten. Dies ist insbesondere dann der Fall, wenn der verwendete enzymatische Reiniger gemäß einer bevorzugten Ausführungsform der Erfindung einen schwach sauren bis schwach alkalischen pH-Wert von insbesondere 4 bis 9, vorzugsweise 5 bis 9, weiter vorzugsweise 6 bis 8 aufweist. In diesem pH-Bereich besitzen die verwendeten Enzyme ihre beste Wirkung.
- Das enzymatische Hauptreinigen dauert 5 bis 15 min. Die Temperatur beim Hauptreinigen liegt bevorzugt zwischen 30 und 70° C, weiter vorzugsweise 40 bis 60° C. In diesem Temperaturbereich sind die in der Regel hitzelabilen Enzyme besonders wirksam.
- Die enzymatische Hauptreinigerlösung kann bevorzugt enthalten 0,08 bis 2 Gew.-% Tenside, beispielhaft genannt seien N-C8-C12-Alkylpyrrolidone. Ferner können darin enthalten sein 0,005 bis 0,125 Anson-Einheiten wenigstens einer Protease und/oder 0,1 bis 6 Kilo-Novo-Einheiten wenigstens eine Amylase pro Liter Reinigungslösung. Der gewünschte pH-Wert wird durch geeignete Puffersysteme wie beispielsweise das Carbonat/Hydrogencarbonat-Puffersystem oder Citronensäure/Citrat oder dergleichen eingestellt. Ggf. können übliche Lösevermittler wie beispielsweise kurzkettige Sulfonate, Sulfate oder dergleichen, weitere Tenside wie beispielsweise Addukte von Ethylenoxid und Propylenoxid an Fettalkohole, Konservierungsmittel, Härte-Dispergatoren und dergleichen enthalten sein. Diese Aufzählung möglicher Bestandteile ist nicht abschließend.
- Bei dem erfindungsgemäßen Verfahren ist das Besprühen mit alkalischer Reinigerlösung und das anschließende Hauptreinigen keine abschließende Aufzählung der Verfahrensschritte. Es können übliche Vorspülschritte (beispielsweise ein sog. Vorabräumen) vorgesehen sein, zwischen alkalischen Besprühen und enzymatischem Hauptreinigen kann eine bereits genannte Zwischenspülung vorgesehen sein. In der Regel schließt sich an das Hauptreinigen noch ein Nach- oder Klarspülen an, dass mit einer üblichen Klarspüllösung geschehen kann.
- Ausführungsbeispiele der Erfindung werden nachfolgend erläutert. Alle Angaben sind Gewichtsteile.
- Ein alkalisches Reinigerkonzentrat wird gemäß folgender Rezeptur hergestellt:
Natriumhydroxid, 45 % 65,00 Kaliumhydroxid, 45% 19,00 Natriumhydroxid, fest 10,00 DTMP1, Na-Salz 3,00 PBTC2 3,00 1 Diethylentriaminpentamethylenphosphorsäure
2 Phosphonobutantricarbonsäure - Eine enzymatische Reinigerlösung wird wie folgt angesetzt:
- 25 g eines handelsüblichen Blockadduktes von 5 mol Ethylenoxid und 4 mol Propylenoxid an einen technischen C12/C14-Fettalkohol, 1 g N-n-Octylpyrrolidon, 5 g einer handelsüblichen wässrigen Lösung eines Gemisches von Amylasen und Proteasen mit einer Aktivität von 1,5 Anson-Einheiten bzw. 50 Kilo-Novo-Einheiten pro Liter, 0,4 g Natriumbicarbonat und 0,1 g Natriumcarbonat werden mit 100 ml Hamburger Stadtwasser angesetzt. Ein üblicher Polyacrylat-Dispergator wird bis zu einer Konzentration von 100 ppm zugegeben.
- In eine Eintank-Behälterspülmaschine werden verschmutzte Bratbleche gelegt. In einem ersten Schritt werden diese Bleche 12 s lang mit einer 1%igen wässrigen Lösung des alkalischen Reinigers gemäß Beispiel 1 besprüht. Dieses Besprühen geschieht durch Einspeisen der Lösung in die Zufuhrleitungen zu den Nachspüldüsen, die nach Abschluss des Reinigens die Klarspüllösung aufsprühen. Die Oberfläche der Bratbleche wird dabei vollständig benetzt.
- Die alkalische Lösung wird 120 s lang einwirken gelassen, ohne dass dabei ein weiteres Besprühen stattfindet. Anschließend erfolgt ein Reinigen mit einer um den Faktor 10 mit Wasser verdünnten enzymatischen Reinigerlösung des Beispiels 2. Diese Reinigerlösung wird während 10 min in der Spülmaschine unter dauerndem Besprühen und Bespülen der Bratbleche umgewälzt. Die Temperatur der Reinigerlösung beträgt 60° C.
- Nach Abschluss des Hauptreinigens wird ein Klarspülen mit einem üblichen Klarspüler durchgeführt (Dauer des Klarspülschrittes 12 s) .
- Angebrannte und verkrustete Nahrungsmittelreste können auf diese Weise vollständig von den Bratblechen entfernt werden.
Claims (5)
- Verfahren zum Reinigen von Geschirr in einer Eintank-Spülmaschine mit den Schritten:a) Besprühen des Geschirrs mit einer alkalischen Reinigerlösung, die einen pH-Wert von wenigstens 11 aufweist und deren Alkalikonzentration (berechnet als KOH) 0,2 - 2 Gew.-% beträgt, wobei zum Aufsprühen der Reinigerlösung das Düsensystem der Spülmaschine verwendet wird, das auch zum Aufbringen des Klarspülers und/oder Nachspülwassers verwendet wird,b) Einwirkenlassen der alkalischen Reinigerlösung über einen Zeitraum von 60 - 180 s,c) Hauptreinigen mit einer enzymatischen Reinigerlösung über einen Zeitraum von 5 - 15 min.
- Verfahren nach Anspruch 1, dadurch gekennzeichnet, dass in Schritt a) 0,3 - 20 l/min, vorzugsweise 0,5 - 10 l/min, weiter vorzugsweise 1 - 5 l/min Reinigerlösung versprüht werden.
- Verfahren nach Anspruch 1 oder 2, dadurch gekennzeichnet, dass die in Schritt c) verwendete enzymatische Reinigerlösung einen pH-Wert von 4 - 9, vorzugsweise 5 - 9, weiter vorzugsweise 6 - 8 aufweist.
- Verfahren nach einem der Ansprüche 1 bis 3, dadurch gekennzeichnet, dass der enzymatische Reiniger proteolytische Enzyme enthält.
- Verfahren nach einem der Ansprüche 1 bis 4, dadurch gekennzeichnet, dass das Hauptreinigen bei einer Temperatur von 30 - 70°C, weiter vorzugsweise 40 - 60°C stattfindet.
