Claims (16)

  1. Dispositif de ventilation (1) pour un four de cuisson (2) à chariot (3), par moyens de ventilation et au moins un moteur (4), caractérisé par au moins un canal de ventilation (5) pour l'extraction de l'air frais et des vapeurs, avec au moins un premier raccord d'écoulement (6) pour l'extraction d'un flux de vapeurs (7) du chariot (3) et au moins un second raccord d'écoulement (8) pour l'extraction d'un flux d'air frais (9) dans l'environnement extérieur (10) du chariot (3), le moteur (4) entraínant à la fois un premier ventilateur (11) pour le flux d'air frais (9) et un second ventilateur (12) pour le flux de vapeurs (7).
  2. Dispositif selon la revendication 1, caractérisé en ce que le ventilateur (11) pour le flux d'air frais (9) est un ventilateur axial.
  3. Dispositif selon l'une quelconque des revendications 1 ou 2, caractérisé en ce que le ventilateur (12) pour le flux de vapeurs (7) est un ventilateur radial.
  4. Dispositif selon l'une quelconque des revendications 1 à 3, caractérisé en ce que les ventilateurs (11, 12) sont conçus de manière que le rapport entre le flux d'air frais et le flux de vapeurs = 20 : 1.
  5. Dispositif selon l'une quelconque des revendications 1 à 4, caractérisé en ce que les deux ventilateurs (11, 12) sont montés sur un même arbre (13).

  7. Dispositif selon l'une quelconque des revendications 1 à 6, caractérisé en ce que le moteur (4) est placé entre les deux ventilateurs (12, 13) et qu'il intègre l'arbre commun (13).
  8. Dispositif selon l'une quelconque des revendications 1 à 7, caractérisé en ce que le moteur (4) est placé dans flux d'air frais (9).
  9. Dispositif selon l'une quelconque des revendications 1 à 8, caractérisé en ce que le canal de ventilation (5), un canal au minimum, est placé à la partie supérieure du chariot (3) et qu'il débouche à la partie avant du four (2).
  10. Dispositif selon l'une quelconque des revendications 1 à 9, caractérisé en ce que le canal de ventilation (5) prend la forme d'un conduit commun pour l'extraction à la fois de l'air frais et des vapeurs.
  11. Dispositif selon l'une quelconque des revendications 1 à 10, caractérisé en ce que dans la zone du raccord d'écoulement (6, 8) chacun des deux flux est mené, sur une section prédéterminée, par des canaux distincts (canal d'air frais 14, canal des vapeurs 15).
  12. Dispositif selon l'une quelconque des revendications 11, caractérisé par une zone de mélange (16) où les vapeurs et l'air frais se mélangent.
  13. Dispositif selon l'une quelconque des revendications 1 à 12, caractérisé en ce que le moteur (4) est fixé sur une plaque (17) dans le canal de ventilation (5).
  14. Dispositif selon l'une quelconque des revendications 1 à 13, caractérisé en ce que le boítier spiralé du ventilateur radial fait saillie sous la plaque (17).
