Abstract

L'invention concerne un procédé de production de bière filtrée à froid, selon lequel la bière est filtrée à travers une membrane filtrante pouvant absorber des ions calcium. Après filtration, la membrane filtrante est nettoyée et rincée avec des substances aqueuses. La membrane filtrante ainsi nettoyée et rincée peut alors être utilisée en vue d'une nouvelle filtration. Ce procédé se caractérise en ce que pour le rinçage, on utilise une substance aqueuse acide d'un pH inférieur à 5,0 ou que la substance utilisée pour le rinçage est soumise à un traitement afin de réduire la teneur en ions calcium. Ce procédé permet de produire de la bière dont la tendance au bouillonnement est réduite.
