Definitions

  • the invention relates to a roasting device according to the preamble of claim 1.
  • a method for roasting potato slices is known from US 4 91 9 965. This method provides that potato slices are placed continuously on a first conveyor belt, on which they pass under a seasoning device into an intermediate container. Lingering in the intermediate container enables the spice to be absorbed as desired. From the intermediate container, the potato slices continuously arrive on a second conveyor belt, which feeds them to a heating device.
  • the heating device comprises two conveyor belts provided with cooking surfaces. The potato slices are pressed and roasted by the heating device between the conveyor belts during transport and then reach a packaging station via a third conveyor belt. This method is not suitable for providing individual portions that are consumed directly in the warm state as required.
  • a system with a large number of conveyor belts and a correspondingly large space requirement is required to carry out the method, which is suitable for use in a food factory, but not in a restaurant operation.
  • An automatic device has now become known from WO 83/02883, which admixes water with a dehydrified potato mass, and forms the mass in portions into particles - for example into sticks (“particles”) or slices ("chips chips") - which can be tilted Conveyor for preparation in a heater and after preparation from the heater to an output opening.
  • the heating device is designed as a frying device with heated oil, the potato material is not roasted but fried.
  • the conveyor is tilted so that an end area with the particles is immersed in the oil.
  • the Conveyor can be moved out of the oil by an opposite tilting movement. Oil can drip from the particles into the heater through openings in the conveyor.
  • a heater designed as a fryer has the disadvantage that the oil must be kept at a high temperature throughout, which is associated with energy losses.
  • the oil adhering to the particles makes them difficult to digest and leads to an oil loss in the heating device, which must be replaced.
  • a refill device is necessary for regular oil replacement.
  • the known device has several disadvantages.
  • the oil is oxidized over time, and draining the oil well is time-consuming.
  • the tiltable conveyor and the refill device lead to a complicated structure.
  • the object of the invention is now to describe a simple device which, shortly after a triggering operation, delivers high-quality grilled or roasted dishes which are perfect from the point of view of food hygiene.
  • roasting is mentioned below, this also always includes grilling or roasting.
  • the food should therefore be roasted (or grilled or - if possible free of fat - fried) and should not be prepared to float in a liquid, such as oil.
  • the solution according to the invention provides that the roastable material, possibly pre-cooked / sterilized or moistened again after dehydration, is stored in at least one storage container.
  • at least one stirring element is optionally provided in each storage container.
  • the at least one stirring element is driven by at least one drive and a transmission device.
  • a portion discharge device is assigned to each storage container, optionally a roller with recesses or a cellular wheel, but preferably a passage metering device.
  • the storage container may be designed as a cooling container. Due to the cooling, a deterioration in the quality of the food can be prevented during the storage until the roasting process. For example, a chilled potato mass remains essentially unchanged in color and / or taste and from a hygienic point of view for at least one day.
  • the heating device comprises at least one pair of heating plates assigned to one another, at least one first heating plate being movable at least between a receiving position in the portion discharge device and a heating position. After the mass has reached the first heating plate in the portion discharge device, it is moved against the second heating plate. During the roasting, the two heating plates should lie opposite each other in a roasting position on either side of a space which absorbs the mass and is variable in size.
  • the first and / or second heating plate can optionally be moved towards one another essentially perpendicular to their surface.
  • the heating plates may be located in a baking chamber during roasting, into which the first heating plate can be moved through a closable baking chamber opening.
  • a clearing device which may include a slide that can be moved over the first heating plate, but preferably consists of a scraper, which is arranged such that the first heating plate can be moved past just below the scraper , so that roasted material located thereon is stripped off.
  • the roasted material passes from the heating device, preferably through a guide and / or a tearing device, into at least one receptacle, which can be positioned at the at least one outlet opening.
  • a guiding device can be designed in such a way that the roasted material in the form of a pancake arrives at a receptacle.
  • a tearing device is provided if the roasted material is not to be cut into whole pieces (for example a chop steak) or pita or cake shape, but in a loosened form into the receptacle or on a plate, for example.
  • An extremely simple roasting device is created by directly transferring the material to be roasted from the discharge device onto a heating plate and removing it after roasting by means of a slide or a scraper. Only a movable first heating plate is required to move the roasting material into the roasting position and to discharge it. When roasting between the two heating plates, there is no need for oil in the oil and thus also no refill device. Without draining the oil, a high-quality food is ready a short time after the trigger is pressed. Until the guide and / or tearing device is reached, essentially only the contact surfaces of the heating plates come into contact with the food. The cleaning effort is thus small.
  • the heating device comprises at least one movable transport surface, onto which the material to be roasted is conveyed by the discharge device, and at least one heating element.
  • the heat required for roasting reaches the roasting material directly from the heating element and / or via the at least one transport surface.
  • the at least one transport surface is formed by a continuous conveyor belt or by plates or elements of an endless conveyor.
  • the heating element - it may also be an electrical or gas infrared radiator or a microwave heater - is arranged on a section of the conveyor above and / or below the transport surface. If necessary, the heating elements are firmly attached to the transport surface.
  • the roasting area can be arranged between two parallel transport surfaces, so that the roasted material rests on a lower transport surface and adjoins an upper transport surface at the top.
  • the lower conveyor extends under the discharge device on a first side and up to a discharge area on a second side.
  • the upper conveyor which may be provided, leaves an access area between the discharge device and the lower conveyor on the first side, so that discharged goods can fall unhindered from the discharge device onto precisely this free area of the lower conveyor.
  • depressions are provided, for example, which lead to the formation of individual roasted material portions, such as flatbreads, dumplings or cylinders.
  • a moving or fixed contact surface is provided which bears against the transport surface with recesses in a given conveying region.
  • the discharge device is matched to the roasted product or the roasting process.
  • a portion-dispensing discharge device such as a cellular wheel, is preferably used. If necessary, a continuously discharging element, such as a screw discharge, is provided, but then additives are required to form the portions.
  • Embodiments are also provided in which treatment devices are arranged between the discharge device and the lower transport surface, which, for example, form the goods to be roasted and / or add ingredients to the goods.
  • treatment devices are arranged between the discharge device and the lower transport surface, which, for example, form the goods to be roasted and / or add ingredients to the goods.
  • flatbreads or dumplings can be formed, which may be coated with ingredients or filled.
  • a vertical cylinder for example, is conceivable, on the upper, optionally funnel-shaped opening of which dough and possibly filling material are added, and in the lower area thereof a suction device for sucking in the dough is provided so that the mass emerging from the cylinder reaches the transport surface in the form of dumplings.
  • a filling can be introduced or applied before the dough is folded into a dumpling.
  • the dumpling is then roasted or cooked in the (semi-) spherical recesses of movable heating plates according to the invention or on conveyor belt surfaces.

  • a tearing device is provided if the roasted material is to be released into the receptacle in a loosened form. Given- if the guiding device is also designed in such a way that the roasted material in flat form reaches a receptacle, for example a plate.
  • the device according to the invention can be cleaned well and quickly provides high-quality roasted side dishes with constant roasting from the point of view of food hygiene.
  • each preparation line includes its own means of transport.
  • the control is preferably connected to a control panel via which the number of desired inserts is entered and the preparation process is triggered.
  • a sensor arrangement is preferably provided which detects the presence of a receptacle and forwards it to the control for releasing the preparation and / or dispensing process. If necessary, the preparation process is triggered directly by inserting a receptacle.
  • the control of the roasting device depends on its area of application. In restaurants and snack bars, the device is operated by the staff and supplies side dishes which are served, for example, on plates with other parts of a dish.
  • the receptacles or plates are guided by the personnel to the outlet opening of the guiding device, so that it may be advantageous if the preparation can also be started without an inserted receptacle, but only exiting from the guiding device when the receptacle is inserted Vessel done.
