Claims (7)
- Verwendung einer Mischeinrichtung, die aus einer Trommel (12) mit einer darin in einer einzigen Umlaufrichtung (13) drehbar gelagerten mit Antriebsmitteln versehenen Welle (11) besteht, zum Conchieren, insbesondere von Schokoladenmassen, wobei an dieser Welle (11) mehrere Mischwerkzeuge (10) befestigt sind, die in geringem Abstand von der Trommelinnenoberfläche (18) enden, wobei die Mischwerkzeuge (10), in der Umlaufrichtung (13) der Mischwerkzeuge (10) gesehen, im vorderen Bereich (19) weiter von der Trommelinnenoberfläche (18) beabstandet sind als im hinteren Bereich (20), so daß mit dieser Anordnung der Mischwerkzeuge (10) zur Trommelinnenoberfläche (18) ein flächenhaft über die gesamte Trommellänge verteilter hoher Energieeintrag in das zu behandelnde Produkt möglich ist.
- Verwendung nach Anspruch 1, dadurch gekennzeichnet, daß die Mischwerkzeuge (10) konkav oder konvex ausgebildete Seitenwände (26, 27; 29, 32) aufweisen, die im vorderen Bereich (19) spitz aufeinander zulaufend und in einer Schnittlinie (37; 38) enden und jedoch im hinteren Bereich (20) sich weitend enden, daß die beiden Seitenwände (26, 27; 29, 32) im unmittelbaren Abstand von der Trommelinnenoberfläche (18) über eine der Trommelrundung weitgehend angepaßte Bodenwand (28) miteinander verbunden sind, die die Seitenwände (26, 27; 29, 32) glatt und absatzfrei miteinander verbindet.
- Verwendung nach einem der Ansprüche 1 oder 2, dadurch gekennzeichnet, daß die Mischwerkzeuge (10) derart auf der Welle (11) angeordnet sind, daß das oder die Bodenwände (28) bei einer Umdrehung der Welle (11) von 360° die gesamte Trommelinnenoberfläche (18) überstreichen.
- Verwendung nach einem der Ansprüche 1 bis 3, dadurch gekennzeichnet, daß die Mischwerkzeuge (10) im Innenbereich der Trommel (12) als Vollmischwerkzeuge (23) symmetrisch zu einer Achse (25) ausgebildet sind.
- Verwendung nach Anspruch 1, dadurch gekennzeichnet, daß die Mischwerkzeuge (10) auf einer Welle (11) in einer Trommel (12) mit Stirnwänden (21) angeordnet sind, die die weitgehend horizontal ausgerichtete Trommel (12) begrenzen, und daß die Mischwerkzeuge (10), die unmittelbar den Stirnwänden (21) benachbart sind, Halbmischwerkzeuge (24) sind, die im vorderen Bereich (35) weiter von der Stirnwandinnenoberfläche beabstandet sind als im hinteren Bereich (36).
- Verwendung nach einem der Ansprüche 2 bis 5, dadurch gekennzeichnet, daß die Bodenwand oder die Bodenwände (28, 31) eine zusätzliche Materialbeschichtung aufweisen.
- Verwendung nach Anspruch 5 oder 6, dadurch gekennzeichnet, daß die den Stirnwänden (21) der Trommel (12) ummittelbar gegenüberliegenden Seitenflächen der Mischwerkzeuge (10) den Stirnwänden (21) angepaßt und von diesen beabstandet sind, und die zum Innenbereich (22) der Trommel (12) hinweisenden Seitenflächen der Mischwerkzeuge (10) konkav bzw. konvex verlaufend ausgebildet sind.
