- the moist caterpillar is tightly packed in a water vapor-tight foil bag and stored for approx. 1 month. There is no mold infestation.
- Sausage meat of the noble salami type is then filled into these caterpillars.
- the finished sausages are inoculated with mold spores to demonstrate the fungicidal effect of glycerol monolaurate and stored under normal conditions. Even after a storage period of 6 weeks, no growth of undesirable molds can be observed.
- the casing material of the invention has the advantage that the fungicidal action is maintained over long periods of time, even if the material comes into intensive contact with water. However, no preservative effect of the fungicidal agent on the food packaged with the casing material can be determined. Likewise, a negative influence on the physical properties of the casing material by the fungicidal agent is not detectable. There is also no concern that the fungicide will be ingested by humans with the food.
- Glycerol monolaurate is also an easily accessible compound and is commercially available. It can be applied to the casing material by simple procedural measures.
