Claims (11)

1. Enveloppe pour saucisses et saucissons résistant aux moisissures, en forme de gaine, à base de cellulose régénérée, le cas échéant renforcée de fibres, caractérisée par une teneur en fongicide d'au moins 50, de préférence d'au moins 80 mg de monolaurate de glycérol par m2 de la face externe, opposée à l'aliment à emballer, de l'enveloppe pour saucisses et saucissons.
2. Enveloppe pour saucisses et saucissons suivant la revendication 1, caractérisée en ce qu'elle contient des sels de métaux alcalins d'acides gras, des alkyl-, aryl- et/ou alkylaryl- sulfonates comme émulsionnant pour le monolaurate de glycérol, en particulier en une quantité de 2 à 12, de préférence de 3 à 10 % en poids par rapport au monolaurate de glycérol, sur la face externe de l'enveloppe pour saucisses et saucissons.
3. Enveloppe pour saucisses et saucissons suivant la revendication 1 ou 2, caractérisée par une couche imperméable à la vapeur d'eau sur la face interne de la gaine.
4. Enveloppe pour saucisses et saucissons suivant l'une des revendications 1 à 3, caractérisée en ce qu'elle présente une teneur en eau de plus de 20 % en poids par rapport à l'enveloppe.
5. Enveloppe pour saucisses et saucissons suivant l'une des revendications 1 à 4, caractérisée en ce qu'elle est retroussée.
6. Procédé de fabrication d'une enveloppe pour saucisses et saucissons suivant l'une des revendications 1 à 5, dans lequel on extrude de la viscose, sous la forme d'une gaine, le cas échéant sur un corps fibreux, on la coagule et la régénère en hydrate de cellulose sous forme de gel, puis on la sèche pour donner de la cellulose régénérée, caractérisé en ce qu'on applique sur l'hydrate de cellulose en forme de gaine, le cas échéant renforcé de fibres, avant le séchage sous forme de gel, ou sur la cellulose régénérée après le séchage, sur la face externe, une émulsion homogène de monolaurate de glycérol.
7. Procédé suivant la revendication 6, caractérisé en ce qu'on applique sur l'hydrate de cellulose sous forme de gel une émulsion qui comprend de 1 à 3,5, en particulier de 1,5 à 2 % en poids de monolaurate de glycérol.
8. Procédé suivant la revendication 6, caractérisé en ce qu'on applique sur la cellulose régénérée séchée (teneur en eau inférieure à 15 % en poids par rapport au poids total) une émulsion qui comprend de 0,5 à 2,5, en particulier de 0,8 à 1,5 %, en poids de monolaurate de glycérol.
9. Utilisation de monolaurate de glycérol comme agent fongicide sur la face externe opposée aux aliments à emballer d'enveloppes pour saucisses et saucissons en forme de gaine à base de cellulose, la teneur en fongicide étant d'au moins 50, de préférence d'au moins 80 mg de monolaurate de glycérol par m2 de surface externe de l'enveloppe pour saucisses et saucissons.
10. Utilisation suivant la revendication 9, caractérisée en ce que l'enveloppe pour saucisses et saucissons est retroussée et à une teneur en humidité supérieure à 20 % en poids par rapport à l'enveloppe pour saucisses et saucissons.
11. Utilisation de monolaurate de glycérol comme agent fongicide sur la face externe d'enveloppes pour saucisses et saucissons suivant la revendication 9, caractérisée en ce que l'enveloppe pour saucisses et saucissons, après le remplissage avec de la chair à saucisses, est soumise à un traitement par l'eau chaude.
