Abstract

Настоящее изобретение относится к способу получения картофельного продукта для окончательного обжаривания, производственной линии для осуществления такого способа и к картофельному продукту для окончательного обжаривания. Способ по изобретению включает стадии поставки определённого количества картофеля сорта с весом клубней под водой, равным или меньше 300 г/5 кг; промывки, очистки от кожуры и нарезки поставленного картофеля с получением базового картофельного продукта; бланширования базового картофельного продукта с получением бланшированного картофельного продукта; сушки бланшированного картофельного продукта; нанесения покрытия на бланшированный и просушенный картофельный продукт с получением картофельного продукта с покрытием и предварительного обжаривания картофельного продукта с покрытием с получением предварительно обжаренного картофельного продукта, в котором стадии обеспечивают картофельный продукт, энергетическая ценность которого составляет менее 190 ккал/100 г после окончательного обжаривания.
