Abstract
Согласно этому изобретению обеспечен ячмень с полной потерей функциональных липоксигеназных ферментов LOX-1 и LOX-2 и полученные из него продукты растения, такие как солод, приготовленный с использованием зерен ячменя, дефектных в синтезе диоксигенирующих жирные кислоты ферментов LOX-1 и LOX-2. Указанные ферменты ответственны за основные активности, связанные с диоксигенированием линолевой кислоты до 9- и 13-гидропероксиоктадекадиеновой кислоты соответственно. 9-Гидропероксиоктадекадиеновая кислота представляет метаболит пути LOX, который посредством дополнительных ферментативных или спонтанных реакций может приводить к появлению транс-2-ноненаля (T2N). Это изобретение позволяет технологам по производству пива производить пиво, имеющее незначительные уровни затхлых Т2N-специфических привкусов даже после продолжительного хранения этого напитка.
