Claims (12)

1. Maltotriosyl-transferase, der virker på polysaccharider og oligosaccharider med a-1,4 glucosidbindinger til at overføre maltotriose-enheder til saccharider, kendetegnet ved at virke på maltotetraose som substrat for at give et forhold mellem maltoheptaose-produktionsraten og maltotriose-produktionsraten på 9:1 til 10:0 ved en hvilken som helst substratkoncentration i området fra 0,67 til 70 % (w/v); og omfattende aminosyresekvensen fremsat i SEQ ID NO: 8 eller en aminosyresekvens med mindst 70 % identitet med aminosyresekvensen fremsat i SEQ ID NO: 8.
2. Enzymprodukt omfattende maltotriosyl-transferasen ifølge krav 1 som en aktiv ingrediens.
3. Mikroorganisme med en evne til at producere maltotriosyl-transferase ifølge krav 1, hvor mikroorganismen er Geobacillus sp. APC9669 (accessionsnummer NITE BP-770).
4. Maltotriosyl-transferase-gen omfattende et hvilket som helst af DNA valgt fra gruppen bestående af de følgende (a) til (d): (a) DNA, der koder for aminosyresekvensen fremsat i SEQ ID NO: 7 eller 8; (b) DNA, der omfatter sekvensen fremsat i SEQ ID NO: 6; (c) DNA, der hybridiserer med den komplementære sekvens af sekvensen fremsat i SEQ ID NO: 6 under stringente forhold og der koder for en maltotriosyl-transferase, kendetegnet ved at virke på maltotetraose som substrat for at give et forhold mellem maltoheptaose-produktionsraten og maltotriose-produktionsraten på 9:1 til 10:0 ved en hvilken som helst substratkoncentration i området fra 0,67 til 70 % (w/v); (d) DNA, der er degenereret fra DNA-sekvensen af sekvensen fremsat i SEQ ID NO: 6.
5. Rekombinant vektor omfattende maltotriosyl-transferase-genet ifølge krav 4, der fortrinsvis er en ekspressionsvektor.
6. Ikke-human transformant, der indeholder den rekombinante vektor ifølge krav 5.
7. Transformanten ifølge krav 6, hvilken er en bakteriecelle, en gærcelle eller en svampecelle.
8. Fremgangsmåde til fremstilling af en maltotriosyl-transferase, omfattende de følgende trin (1) og (2), eller trinnene (i) og (ii): (1) at dyrke mikroorganismen ifølge krav 3 og (2) at indsamle maltotriosyl-transferasen fra kulturopløsningen og/eller bakteriecellerne efter dyrkning; eller (i) at dyrke transformanten ifølge krav 6 eller 7 under forhold egnede til produktionen af proteinet kodet for af maltotriosyl-transferase-genet; og (ii) at indsamle det derved producerede protein.
9. Anvendelse af enzymet ifølge krav 1 eller enzymproduktet ifølge krav 2 til fremstilling og behandling afen fødevare, der indeholderet polysaccharid eller oligosaccharid med a-1,4 glucosidbindinger.
10. Fremgangsmåde til fremstilling af fødevare eller fødevareingrediens omfattende at udsætte en fødevare, der indeholder et polysaccharid eller oligosaccharid med α-1,4 glucosidbindinger, for maltotriosyl-transferasen ifølge krav 1 eller enzymproduktet ifølge krav 2.
11. Fremgangsmåden ifølge krav 10, hvilken udføres i højtemperatur-miljø.
12. Anvendelse af enzymet ifølge krav 1, eller enzym produktet ifølge krav 2 til at forbedre fødevare eller fødevareingrediens i sin funktion.
