(A)長時間経過後も、表面のパサつきが抑制される。

(C)長時間経過後も、ほぐれに優れる。
(D)長時間経過後も、出来立ての風味に優れる。

なお、ここでいう長時間とは、製造直後を0時間として6~48時間程度経過した状態をいう。
酵素として、α-アミラーゼ(A1:至適温度は約70℃)、マルトトリオヒドロラーゼ(A2:至適温度は約50℃)及び4-α-グルカノトランスフェラーゼ(A3:至適温度は約50℃)の各種酵素製剤を用いて、これら酵素を単独で米飯に含有させた場合と2種以上を併用して含有させた場合とで、長期保管後の米飯についての品質改善効果並びに炊飯時の対流改善効果を比較した。

本試験では、評価試験1において最も高い効果が示された、3種の酵素を1:1:1の比率で含有する場合について、表2のように含有量を変化させた白飯を作製し、効果を比較した。
本試験では、3種の酵素を全て含有する場合において、各酵素の比率を表3のように変化させた白飯を作製し、効果を比較した。
生米当たりの酵素の合計添加量を表3記載のとおり調整し、それぞれの合計添加量に占める各酵素の比率を変化させたこと以外は、評価試験1と同様にして、白飯のシャリ玉を作製し、20℃で24時間、及び48時間保管後に官能評価を行った(実施例16~25)。なお、参考のために、酵素を添加せずに同様にして白飯のシャリ玉を作製し、同様に評価した結果を、比較例1として示す。
精米450gと表4に示す含有割合の酵素を用いて、評価試験1と同様にして炊飯した。炊き立ての白飯に、すし酢(酸度2.87w/v%)を99ml(生米当たり220ml/kg)添加して酢合わせを行うことで、酢飯(酸度0.26w/v%)を得た。なお、すし酢の組成は、醸造酢(酢酸酸度6.46w/v%)36%、ショ糖55%、食塩9%(いずれも質量比)とした。

Claims (18)
- (a)4-α-グルカノトランスフェラーゼ、(b)α-アミラーゼ及び(c)マルトトリオヒドロラーゼを、炊飯前又は炊飯時に添加することにより得られた米飯。
- 前記(a)、(b)及び(c)を、同時に又は混合して添加する、請求項1に記載の米飯。
- 炊飯前が浸漬後炊飯前である、請求項1又は2に記載の米飯。
- 前記(a)、(b)及び(c)を、炊飯時の温度上昇の過程で米の澱粉に作用させることにより得られた、請求項1~3のいずれか1項に記載の米飯。
- 前記(a)、(b)及び(c)を、炊飯工程において加熱調理が開始される前までに添加することで、前記酵素が失活する前に、米の澱粉に作用させることにより得られた、請求項1~4のいずれか1項に記載の米飯。
- 前記(a)、(b)及び(c)の合計添加量が、乾燥状態の生米に対して0.003質量%以上である、請求項1~5のいずれか1項に記載の米飯。
- 前記(a)、(b)及び(c)の合計添加量に占める前記(a)の割合が10質量%以上80質量%以下である、請求項1~6のいずれか1項に記載の米飯。
- 前記米飯が、白飯又はすし飯である、請求項1~7のいずれか1項に記載の米飯。
- 食酢を含有する、請求項1~8のいずれか1項に記載の米飯。
- (a)4-α-グルカノトランスフェラーゼ、(b)α-アミラーゼ及び(c)マルトトリオヒドロラーゼを、炊飯前又は炊飯時に添加する、米飯の製造方法。
- 炊飯時の温度上昇の過程で前記酵素を米の澱粉に作用させる、請求項10に記載の米飯の製造方法。
- (a)4-α-グルカノトランスフェラーゼ、(b)α-アミラーゼ及び(c)マルトトリオヒドロラーゼを含有する、炊飯前又は炊飯時に添加するための炊飯用調味液又は米飯改良剤。
- 前記(a)、(b)及び(c)の合計添加量が、乾燥状態の生米に対して0.003質量%以上となるように添加される、請求項12に記載の炊飯用調味液又は米飯改良剤。
- 前記(a)、(b)及び(c)の合計含有量に占める前記(a)の割合が10質量%以上80質量%以下である、請求項12又は13に記載の炊飯用調味液又は米飯改良剤。
- 炊飯工程において加熱調理が開始される前までに添加される、請求項12~14のいずれか1項に記載の炊飯用調味液又は米飯改良剤。
- 請求項12~15のいずれか1項に記載の炊飯用調味液又は米飯改良剤を、炊飯前又は炊飯時に添加する、米飯の製造方法。
- 請求項12~15のいずれか1項に記載の炊飯用調味液又は米飯改良剤を、炊飯前又は炊飯時に添加することにより得られた米飯。
- (a)4-α-グルカノトランスフェラーゼ、(b)α-アミラーゼ及び(c)マルトトリオヒドロラーゼを、炊飯前又は炊飯時に添加することによる、炊飯時の加熱ムラを改善する方法。
