Abstract
La presente invención se relaciona con un método para elaborar un producto de origen vegetal, dicho método comprende a) mezclar en agua una fibra dietética de gelificación por fijado en frío, preferentemente fibra de psyllium; un ingrediente de origen vegetal de gelificación por termofijado, preferentemente harina; y opcionalmente sal de calcio para formar una fase acuosa aglutinante; b) añadir lípido a la fase acuosa de aglutinante y homogeneizar para formar un aglutinante de gel de emulsión; y c) mezclar el extracto vegetal con el aglutinante de gel de emulsión, opcionalmente añadir grasa sólida y opcionalmente moldear para formar un análogo de carne.
