饱和脂肪或部分氢化的油与功能组分的比率可在宽范围内变动并且仍提供对所述与组分相关的不良口感有效的消除。该比率可从约1/1到约1/0.1变动。优选的是应用比率为1.0/0.6~1.0/0.15的饱和脂肪或部分氢化的植物油与功能组分的比。此外,尽管硬糖组合物中的饱和脂肪或部分氢化的植物油的量至多可占所述组合物重量的5%,合适地约0.5~约5.0%,但优选的量在0.5%~3.5%的范围内,尤其是0.75%~3.0%。
优选的产品应用了熔点为约95°F(35℃)~约150°F(65.5℃)(即室温下呈固态)的饱和脂肪或部分氢化的植物油。一种优选的部分氢化的植物油是部分氢化的棉籽油。优选的饱和脂肪是棕榈仁油和奶油。

硬糖组合物一般具有由糖和其它碳水化合物填充剂的混合物(保持呈无定形态或玻璃态,优选含约0.5%~约3.0%水分)构成的糖果基料。该基料一般可能含蔗糖和葡萄糖,糖含量至多约90%蔗糖和至多约70%葡萄糖浆。还可添加其它组分,例如调味剂、甜味剂、酸化剂、胶凝剂、着色剂等。硬糖还可从不可发酵的糖(例如山梨糖醇、甘露糖醇、木糖醇、麦芽糖醇、异麦芽糖醇、赤藓糖醇、氢化淀粉水解物等)制备。
在本发明的实施中,当掺入较高含量的矿物质或矿物盐时,优选在糖果配方中包括乳化剂。在生产过程中任选应用乳化助剂。乳化剂包括但不限于:单酸甘油酯的二酰基(diactyl)酒石酸酯,例如PANODAN(Danisco的注册商标),卵磷脂,甘油单硬脂酸酯和甘油单油酸酯。
