Abstract
本发明涉及身体脂肪量调整剂及含有该身体脂肪量调整剂的身体脂肪量调整用食品。所述身体脂肪量调整剂是不限制饮食、不担心副作用、可简便使用的含有中等链甘油三酯的身体脂肪量调整剂,中等链甘油三酯的构成脂肪酸的90质量%以上为碳数8和10的饱和脂肪酸,碳数8和10的饱和脂肪酸的质量比率为60/40~85/15,且在甘油三酯2位结合的全部脂肪酸中的碳数8的饱和脂肪酸比例为60~85质量%。
Description
发明背景
本发明涉及以调整身体脂肪量为目的的组合物,具体地,涉及将人的身体脂肪量安全且容易地降低到适当范围的身体脂肪量调整剂及含有该调整剂的身体脂肪量调整用食品。
众所周知,超体重和身体脂肪过多蓄积的肥胖容易招致糖尿病、高脂血症等代谢异常和高血压、缺血性心脏病等循环器官疾病为主的很多疾病。根据日本厚生省进行的国民营养调查结果,由成年人7人中1人是肥胖者这一事实,超体重和肥胖不只是欧美等国的问题,而且在我国也成为切身问题。
反之,我们知道,身体脂肪过少也对健康带来不良影响。例如,已经表明,高血压病和糖尿病等肥胖度高其发病频率高,肥胖度低,即身体脂肪量过少其发病率也高(肥胖症:诊断、治疗、指导指南,日本肥胖学会肥胖症诊断指南编集委员会,11~12页、医齿药出版,1993年)。
由此现状,BMI(body mass index(体格指数)作为指标时,BMI值22为最理想,正常体重kg是(身长m)×(身长m)×22(同书,17~18页)。
可是,肥胖和超体重除遗传或病态外,一般是摄取卡路里过剩引起的(同书,1~3页)。为此,以前的瘦身方法多半是通过限制摄取卡路里而控制饮食,这么作伴随精神上的困难而实行起来难,另外作过头引起营养障碍,有可能过多地减少身体脂肪量。进而,有时出现所谓拒食症的病症的危险性。另外,虽有服用药物防止肥胖方法,但是,必须考虑效果的同时考虑其副作用,所以难说是一种个人预防肥胖的安全且简便使用的方法。
为了克服这些状况,例如,已开发低热量油脂(脂肪代用品)。然而,这些中间从安全性、物性、烹调适合性与风味方面看,现状是没有十分满足的脂肪代替品。例如,由于蔗糖脂肪酸酯不被消化道吸收直接从粪便中排泄,而公开了作为低热量油使用(美国专利第3600186号说明书)。在美国国内,成味快餐点心为对象被许可使用,使用蔗糖脂肪酸酯的土豆片已在市场上销售,但在使用蔗糖脂肪酸酯的商品中有义务表示出“虽然有可能引起腹部痉摩与软便”、“阻碍脂溶性维生素的吸收”。蛋白质和碳水化合物的能量密度是脂肪的一半以下。为此,提供一种通过把蛋白质和碳水化合物加工成脂肪样物性和风味的低卡路里的脂肪代用品已被人知晓(营养学评论,第4卷,第4号,23~33页,1996年)。通过利用这些脂肪代用品可以制作低卡路里化的冰淇淋、甜点等。然而,这些脂肪代用品存在风味差、对热无耐性而不适合加热烹调等缺点。另外,其本身不具备适当调节身体脂肪量的功能。
中等链甘油三酯由于氧化稳定性高、凝固点和粘度低、接近无色透明和溶解性高,因此利用于食品用油溶性香料、色素的溶剂、食品用脱模油、润滑油或医药品原料等。并且,由于吸收性好,与糖类比较能量比率高,所以也被利用在以高效率的能量补给为目的的经肠营养剂原料。
有报导在动物饲料中通过中等链甘油三酯代替脂肪,可以降低身体脂肪的蓄积(Andrea等,Life Sciences,第62卷,1203~1215页,1998年)。然而,还未表明中等链甘油三酯具有调整身体脂肪量的功能。进而,对于依据药剂中的中等链甘油三酯含有量或构成中等链甘油三酯的脂肪酸残基的种类及其比率、脂肪酸残基的结合位置调整身体脂肪量的功能的发现,全然不清楚。
另外,在特开平2000-309794号公报中,虽然公开了由甘油三酯构成的油脂组合物,是一种在全部脂肪酸中所占的中等链脂肪酸的比例为5~23质量%,且分子内具有2个中等链脂肪酸残基的甘油三酯占全部甘油三酯的比例为1~20质量%的油脂组合物,但是,尚未公开对中等链甘油三酯作为主要成分的身体脂肪量调整剂。
发明内容
本发明目的是,提供一种不限制饮食、不担心副作用而且可简便使用的身体脂肪量调整剂。
本发明另外的目的是,提供一种含有上述身体脂肪量调整剂的身体脂肪量调整用食品。
本发明是基于中等链甘油三酯具有调整身体脂肪量在理想水平的功能这一见解上完成的。
也就是,本发明提供含有中等链甘油三酯的身体脂肪量调整剂,其特征在于,构成中等链甘油三酯的脂肪酸90质量%以上为碳数8和10的饱和脂肪酸,碳酸8和10的饱和脂肪酸质量比率为60/40~85/15,而且在甘油三酯2位结合的全部脂肪酸中的碳数8的饱和脂肪酸的比例为60~85质量%。
本发明还提供一种身体脂肪量调整剂,其特征在于,含有中等链甘油三酯40质量%以上。
本发明还提供一种用于使BMI值为23以上的人的身体脂肪蓄积量得以调整的上述身体脂肪量调整剂的使用。
本发明还提供一种身体脂肪量调整用食品,其特征在于,含有上述身体脂肪量调整剂。
具体实施方式
本发明的中等链甘油三酯是指将中等链脂肪酸作为构成脂肪酸的甘油三酯,即指三酰基甘油。本发明中,作为中等链脂肪酸,优选碳数6~12的脂肪酸,特别是饱和脂肪酸,更优选偶数碳数的饱和脂肪酸。例如,可举己酸、辛酸、癸酸、月桂酸,优选碳数8~10饱和脂肪酸的辛酸及癸酸。另外,中等链甘油三酯的构成脂肪酸90质量%以上(更优选95~100%)为碳数8和10的饱和脂肪酸,优选碳数8和10的饱和脂肪酸质量比率为60/40~85/15(更优选为7∶3~8∶2),而且,在甘油三酯2位结合的脂肪酸组成中,优选碳数8的饱和脂肪酸比例为60~85重量%(更优选65~80%)。
对于这样的中等链甘油三酯的制造方法没有特别的限定,例如,可通过将来自棕榈仁油和椰子油的中等链脂肪酸与甘油作原料进行酯结合反应得到。酯结合反应条件也没有特别的限定,例如,在无催化剂且无溶剂下加压反应得到。当然,根据使用催化剂和溶剂的反应也可以得到中等链甘油三酯。在混合比率上想办法,混合中等链甘油三酯与中等链脂肪酸,具有位置特异性的脂肪酶,例如,通过使用名糖产业制“脂肪酶PL”,可以得到构成脂肪酸90质量%以上为碳数8和10的饱和脂肪酸,碳数8和10的饱和脂肪酸质量比率为60/40~85/15,而且,在甘油三酯2位结合的脂肪酸组成中,碳数8的饱和脂肪酸比例为60~85质量%的中等链甘油三酯。另外,从基因重组植物含有种子中得到中等链甘油三酯本身,或者从基因重组植物含有种子得到的中等链脂肪酸作原料也可以制造中等链甘油三酯。
在本发明中,身体脂肪量调整是指身体脂肪过多蓄积时使身体脂肪量降低,身体脂肪量正常时对身体脂肪量不给予影响,身体脂肪量不足时增加脂肪量的身体脂肪量调整功能。
本发明身体脂肪量调整剂,优选含有上述中等链甘油三酯5质量%以上,特别优选5~100质量%,更优选含有40~99.95质量%。
本发明还提供含有一般的中等链甘油三酯40质量%以上为特征的身体脂肪量调整剂。在该身体脂肪量调整剂中,优选含有40~99.95质量%,特别优含有48~99.95质量%。
作为本发明品的身体脂肪量调整剂可以含有中等链甘油三酯以外的成分。作为这样的成分没有特别的限定,可列举通常的食用油,例如,大豆油、菜籽油、玉米油、芝麻油、芝麻色拉油、紫苏油、亚麻仁油、花生油、红花油、高油酸红花油、葵花油、高油酸葵花油、棉籽油、葡萄种子油、澳洲坚果油、榛子油、南瓜种子油、核桃油、山茶子油、山茶油、茶油、琉璃苣籽油、橄榄油、米糠油、小麦胚芽油、棕榈油、棕榈仁油、椰子油、可可豆脂、牛脂、猪油、鸡脂、乳脂、鱼油、海豹油、藻类油、通过改良品种低饱和化的它们的油脂及它们的氢化油脂、分级油脂等。另外,也可以添加以维生素E和植物甾醇为主的多甘油脂肪酸酯、蔗糖脂肪酸酯、山梨糖醇脂肪酸酯、抗坏血酸脂肪酸酯、木聚糖、辅酶Q、磷脂、谷维醇(oryzanol)、甘油二酯等。
它们中优选含有选自动植物油、维生素E及植物甾醇中的一种以上。含有动植物油的场合,优选含有全体的60质量%以下,更优选5~55质量%,特别优选5~50质量%。另外,含有维生素E的场合,优选是全体的0.01~5质量%,更优选0.01~2质量%。另外,含有植物甾醇的场合,优选含有0.5~6质量%,更优选1~4质量%。
本发明的身体脂肪量调整剂的形态没有特别的限定,可以是胶囊、片剂等剂型,另外在食品、加工食品、饮料、调味料、糕点等中也可以添加,例如,可以添加到明胶胶囊、食用油、调味汁、人造奶油、调制人造奶油、脂肪涂抹食品、奶油、冰淇淋、蛋黄酱、面包、点心、炸面圈、松饼、烤饼、油炸食品、快餐食品、流动食品等。
本发明能够提供既有效性高、安全且容易实施的身体脂肪量调整剂及食品。
通过使用本发明的身体脂肪量调整剂,例如把人的身体脂肪量用BMI(体格指数)衡量时,可以调整至21.5~22.5左右,特别是调整至约22。BMI用于医学上判定肥胖的数值,详细记载在《肥胖症:诊断、治疗、指导指南》(日本肥胖学会肥胖症诊断指南编集委员会编,医齿药出版,1993年)14~24页。身体脂肪量的测定有体密度法(水中法、空气置换法)、体内K40测定法、电阻抗法、骨密度测定法等多种方法,但由于测定时费时、需要设备等原因,一般使用体重与身长测定值的BMI值来进行。BMI值是从体重kg/(身长m)/(身长m)求得的数值,其数值越低表示“镀”,即表示身体脂肪量少,而数值越高脂肪量就多,BMI值22时最为理想。
下面用实施例说明本发明,但是,本发明不只限于这些实施例。
实施例1
在日清制油公司制的中等链甘油三酯(商品名:ODO)500g中,混合日清制油公司制的菜籽油500g,得到身体脂肪量调整剂1。另外,在日清制油公司制的中等链甘油三酯(商品名:ODO)900g中,混合雪印公司制的猪油100g混合,得到身体脂肪量调整剂2。该中等链甘油三酯的构成脂肪酸的99.9质量%为碳数8和10的饱和脂肪酸,碳数8和10的饱和脂肪酸的质量比率为7.4∶2.6。另外,在甘油三酯2位结合的脂肪酸组成中,碳数8的饱和脂肪酸比例为73质量%。另外,甘油三酯2位结合的脂肪酸的比例是按照Brockerhoff法(Brockerhoff,H.,Journal of Lipid Research,Vol.6,p10,1965)求得。
实施例2
在日清制油公司制的中等链甘油三酯(商品名:ODO)999g中,添加日清制油公司制的生育酚(商品名:生育酚85)1g,充分搅拌、溶解,得到身体脂肪量调整剂3。中等链甘油三酯的构成脂肪酸的99.9质量%为碳数8和10的饱和脂肪酸,碳数8和10的饱和脂肪酸的质量比率为7.4∶2.6。另外,在甘油三酯2位结合的脂肪酸组成中,碳数8的饱和脂肪酸的比例为73质量%。
实施例3
在980g身体脂肪量调整剂中,添加来自米油的植物甾醇20g,充分搅拌、混合,得到身体脂肪量调整剂4。
实施例4
使用实施例2的身体脂肪量调整剂3,如下要领调制面包卷(身体脂肪量调制食品1)。另外,该身体脂肪量调制食品每1个中,含有身体脂肪量调整剂3为5g。
配合比例(质量份)
硬质面粉90份、软质面粉10份、上等砂糖12份、食盐1.7份、整个鸡蛋15份、脱脂奶粉4份、酵母4份、乳化剂0.5份、身体脂肪量调整剂24份及水41份。
调制方法:
调制法:直接法、最终捏和温度:28℃、发酵时间:60分、分割:42g、台架试验时间:20分、烘炉:37℃下50分钟、烘烤:205℃下10分钟。
实施例5
使用实施例4的身体脂肪量调制食品1进行身体脂肪量调整效果试验。将78名受试者分成2组,其中一组摄取身体脂肪量调整食品1每天早晨2个,连续12周摄取。另一组作为对照,服用含有同量的调合色拉油的面包卷。在试验期间中,总能量摄取量以2200千卡,总脂质摄取量是60g作为目标进行用餐指导。在试验前、试验后8周及12周后进行体重、身体脂肪、腰部、内脏脂肪的测定。身体脂肪是使用日本光电公司制的MAB-1000,内脏脂肪量是从把胴体切成内片的CT扫描画像求得脂肪面积。试验结果示于表1。另外,结果分成BMI23以上和不足23的,进行统计学处理。

如表1所示,可看出对BMI23以上的受试者通过摄取本发明身体脂肪量调整食品,体重、身体脂肪、腰围及腹部脂肪面积都显著地减少。由此可知,含有本发明的身体脂肪量调整剂的身体脂肪量调整食品1可调整BMI23以上的人的身体脂肪量。
Claims (12)
1.身体脂肪量调整剂,其含有中等链甘油三酯,其特征在于,构成中等链甘油三酯的脂肪酸具有6~12个碳原子,中等链甘油三酯的构成脂肪酸的90质量%以上是碳数8和10的饱和脂肪酸,碳数8和10的饱和脂肪酸的质量比率为60/40~85/15,且甘油三酯2位结合的全部脂肪酸中的碳数8的饱和脂肪酸比例为60~85质量%。
2.根据权利要求1所述的身体脂肪量调整剂,其中,中等链甘油三酯的含量为5质量%以上。
3.根据权利要求1所述的身体脂肪量调整剂,其特征在于,含有中等链甘油三酯40质量%以上。
4.权利要求1~3的任一项所述的身体脂肪量调整剂,其含有动植物油。
5.权利要求1~3的任一项所述的身体脂肪量调整剂,还含有维生素E。
6.权利要求4所述的身体脂肪量调整剂,还含有维生素E。
7.权利要求1~3或6的任一项所述的身体脂肪量调整剂,还含有植物甾醇。
8.权利要求4所述的身体脂肪量调整剂,还含有植物甾醇。
9.权利要求5所述的身体脂肪量调整剂,还含有植物甾醇。
10.权利要求1~9的任一项所述的身体脂肪量调整剂的使用,用于调整BMI值为23以上的人的身体脂肪蓄积量。
11.身体脂肪量调整用食品,其特征在于,含有权利要求1~9的任一项所述的身体脂肪量调整剂。
12.根据权利要求11所述的身体脂肪量调整用食品,其中,食品是食用油、蛋黄酱、人造奶油、调配人造奶油、脂肪涂抹食品、调味品、面包、冰淇淋、奶油、点心、炸面圈、松饼、烤饼或油炸食品。
