Abstract
本发明公开了卵黄油的提取工艺,是将离心分离出蛋白的蛋黄干燥,再用醇作一次萃取后,减压蒸出醇,即为产品卵黄油。卵黄油具有降血脂,降低胆固醇,增细细胞活力,防治衰老、健脑、美容等特殊功能,故除工业用途以外,可以用于人类保健的良药。
Description
本发明涉及卵黄油的提取工艺。
现已有不少研究表明新鲜蛋类中所含的卵黄油是一种极好的保健良药。它有降血脂,降低胆固醇,促进血液循环的特殊功效,有“血管的清道夫”之称,对高血压、心脏病、动脉硬化等心血管疾病有惊人的疗效,还有增加细胞活力,防治衰老、健脑、美容、回春等特殊功效。但卵黄油仅存在于3-5天的新鲜蛋中,因此开发和利用卵黄油是人类健康的福音。现有资料报导从卵黄中提取卵黄油采用丙酮萃取法,但需要进行多次萃取,工艺复杂,成本高,且在产品中混入了有毒的丙酮,对产品的保鲜和应用有很大影响,故仅限于实验室研究,未形成工业化生产。
本发明的目的在于提供一种只需要一次萃取、工艺流程简单、产率高、成本低,对设备要求不高,可以形成工业化生产的从蛋类中提取卵黄油的提取工艺。
本发明的工艺包括以下步骤:
(1)蛋类的选择:选择出生7天以内的鸭蛋、鸡蛋或其他蛋类;
(2)破壳,将蛋液在<100转/分速度下离心20-40分钟以分离卵黄和蛋白;
(3)在30℃~50℃温度下恒温干燥卵黄;
(4)用醇(加助剂酮)一次萃取卵黄油:萃取比为干卵黄∶醇(加1%~2%助剂酮)=1∶4~7,萃取温度为30℃~50℃,萃取时间1~2小时;
(5)真空抽滤分离萃取液;
(6)在真空度为700~730mmHg、温度30℃~50℃范围以内,减压蒸出萃取液后,获产品卵黄油,产率为40%左右。
本发明的工艺流程简单,只需要一次萃取,产率高,对设备要求不高,投资少,完全可以实现工业化生产。
实施例:
(1)选择出生7天以内的土鸡蛋1kg;
(2)破壳,将蛋液在50转/分离心20分钟,倒出上清蛋白液,留下卵黄;
(3)在45℃恒温干燥卵黄2小时,得干燥卵黄0.36kg;
(4)在0.36kg干卵黄中加入1.6kg乙醇+0.2kg丙酮在40℃萃取1.5小时;
(5)真空抽滤,分离卵黄及醇;
(6)在720mmHg、40℃减压蒸馏醇,得卵黄油0.14kg。
Claims (1)
1、卵黄油的提取工艺其特征在于包括以下步骤:
(1)蛋类的选择:选择出生7天以内的鸭蛋、鸡蛋或其他蛋类;
(2)破壳,将蛋液在<100转/分速度下离心20-40分钟以分离卵黄和卵白;
(3)在30℃~50℃温度下恒温干燥卵黄;
(4)用醇(加助剂酮)一次萃取卵黄油:萃取比为干卵黄∶醇(加1%~2%助剂酮)=1∶4~7,萃取温度为30℃~50℃,萃取时间1~2小时;
(5)真空抽滤分离萃取液;
(6)在真空度为700~730mmHg,温度30℃~50℃范围以内,减压蒸出萃取液后,获产品卵黄油。
