本发明属于食品技术领域,具体涉及一种成人特殊医学用途全营养配方食品及其制备方法。
背景技术
特殊医学用途配方食品(Foods for Special Medical Purpose,FSMP),是指为了满足进食受限、消化吸收障碍、代谢紊乱或特定疾病状态人群对营养素或膳食的特殊需要,专门加工配制而成的配方食品。这类食品的营养素和(或)其他营养成分的含量与可类比的普通食品有显著不同,必须在医生或临床营养师指导下,单独食用或与其他食品配合食用。全营养配方食品是指可作为单一营养来源满足目标人群营养需求的特殊医学用途配方食品。
特殊医学用途配方食品应用于临床可以有效改善患者自身的营养状况,增强患者的耐受能力,从而提升各项治疗效果,提高患者的生活质量,还能缩短患者康复进程,在一定程度上节省医疗费用。自2010年起,我国陆续出台了一系列特殊医学用途配方食品的国家标准,用于规范特医食品的生产和管理,旨在推动适合我国居民体质的特医食品开发。
特医食品的广阔前景正越来越广泛地得到认可,提供一种营养素配置合理且易消化吸收,有助于长期营养素摄入不足人群获取营养支持的特殊医学用途食品具有重大的意义。
发明内容
针对现有技术中的上述不足,本发明提供一种成人特殊医学用途全营养配方食品。
为实现上述目的,本发明解决其技术问题所采用的技术方案是:
一种成人特殊医学用途全营养配方食品,包括以下重量份的组分:
蛋白质类物质170~300份、脂肪类物质85~250份、碳水化合物450~770份、膳食纤维类物质10~155份、复合微量矿物质1.2~3.5份、复合宏量矿物质47~180份、复合维生素2.0~6.3份、酒石酸氢胆碱2.5~19.0份、牛磺酸0.1~1.0份、左旋肉碱0.05~0.5份、灵芝多糖1~5份、海藻酸钠0.5~5份。
进一步地,蛋白质类物质包括以下重量份的组分:
乳清蛋白13~43份、大豆蛋白33~110份和酪蛋白73~241份。
进一步地,脂肪类物质是以低芥酸菜籽油、葵花籽油、中链甘油三酯和可食用载体为原料,经微囊化工艺加工而成的植物油微囊粉;其中,中链甘油三酯15~53份、葵花籽油30~110份、低芥酸菜籽油16~60份。
进一步地,碳水化合物包括麦芽糊精250~780份和固体玉米糖浆70~220份。
进一步地,膳食纤维类物质包括低聚半乳糖3~95份和低聚果糖5~105份。

上述成人特殊医学用途全营养配方食品的制备方法,包括以下步骤:
(1)制备预混料
预混料a:由牛磺酸、左旋肉碱混合搅拌制成;
预混料b:由酒石酸氢胆碱、复合维生素、复合微量矿物质混合搅拌制成;
预混料c:由复合宏量矿物质、膳食纤维类物质、海藻酸钠、灵芝多糖混合搅拌制成;
预混料d:由蛋白质类物质制成;
预混料e:由碳水化合物混合搅拌制成;
(2)总混
将预混料a、b、c混合后,于转速25~50rpm,搅拌30~60min;再依次加入预混料d、脂肪类物质和预混料e,搅拌混合均匀后,制得成品。
进一步地,依次加入预混料d、脂肪类物质和预混料e时,每种组分均需在转速25~50rpm条件下搅拌30~60min。
以上操作步骤均在符合GB 29923《食品安全国家标准特殊医学用途配方食品良好生产规范》要求的洁净干燥环境内进行。
本发明的有益效果:
本产品配方严格依据GB 29922-2013《食品安全国家标准特殊医学用途配方食品通则》的要求,食品营养素配置合理,富含优质动植物蛋白质、脂肪酸、多种维生素、矿物质及水溶性膳食纤维,易消化吸收,可作为单一或者部分营养来源进行营养补充,适用于10岁以上进食受限、消化吸收障碍、代谢紊乱等需要补充营养的人群。
本发明的蛋白质来源于乳清蛋白、大豆蛋白、酪蛋白等多种优质蛋白,为人体提供不同形式的氮源,有助于消化吸收。同时本产品中添加了低聚果糖、低聚半乳糖等良好来源的膳食纤维,有助于患者胃肠道蠕动,预防便秘的发生。本品中多种营养素协同作用,可针对进食困难、消化吸收障碍、胃肠道功能不全等患者提供必要的营养支持,有助于患者补充营养及提高自身的免疫力,从而促进患者的身体康复。
海藻酸钠是从海马藻中提取的一种天然多糖,具有稳定性、溶解性、黏性和安全性的特点。可以降低血液的粘稠度,起到抗凝血的作用。另外,海藻酸钠还能够抑制脂肪糖和胆盐的吸收,从而降低血清中的胆固醇和甘油三酯等成分,起到降低血脂的作用。
灵芝多糖具有降血糖,降血脂,抗血栓,抗氧化,清除自由基,抗衰老,抗辐射,抗肿瘤,促进血流循环,调节免疫,调节核酸、蛋白质代谢,促进DNA合成,促进人体脐血LAK细胞增殖,促进肠道上皮细胞的增殖和搬迁,然后促进受损的肠黏膜屏障的康复。
本申请通过添加的膳食纤维类物质、海藻酸钠和灵芝多糖,在多种组分的协同作用下,获得了各成分之间相互促进、协同增效的作用,合理配伍的组方更好的与人体的需求相适应,具有显著的调理肠道微生物菌群,增强肠道保护功能,修复受损肠道屏障,降低血脂的功效。

其中,蛋白质类物质包括乳清蛋白25份、大豆蛋白80份、酪蛋白100份。
肪类物质是以低芥酸菜籽油、葵花籽油、中链甘油三酯和可食用载体为原料,经微囊化等工艺加工而成的植物油微囊粉。其中中链甘油三酯38份、葵花籽油80份、低芥酸菜籽油45份,其余为可食用载体。
碳水化合物包含麦芽糊精300份、固体玉米糖浆150份。
膳食纤维类物质包括低聚半乳糖20份、低聚果糖30份。
述复合微量矿物质包括硫酸铜0.02份、焦磷酸铁0.25份、硫酸锰0.03份、亚硒酸钠0.0008份、柠檬酸锌0.15份、碘化钾0.002份。余量为复合微量矿物质载体,主要为麦芽糊精。
复合宏量矿物质包括磷酸三钙12份、碳酸钙10份、碳酸镁4份、氯化钾7份、柠檬酸钾9份、柠檬酸钠15份。余量为复合宏量矿物质载体麦芽糊精。
复合维生素包括L-抗坏血酸钠1.3份、dl-α-醋酸生育酚0.4份、烟酰胺0.15份、D-泛酸钙0.06份、盐酸吡哆醇0.02份、盐酸硫胺素0.03份、棕榈酸维生素A 0.02份、核黄素0.02份、叶酸0.002份、植物甲萘醌0.001份、D-生物素0.0003份、胆钙化醇0.0002份、氰钴胺0.00003份。余量为复合维生素载麦芽糊精。

将预混料a的辅料转移至三维运动混合机进行混合,转速30rpm,搅拌10min,得到预混料a;将预混料b的辅料转移至三维运动混合机进行混合,转速30rpm,搅拌20min,得到预混料b;将预混料c的辅料转移至三维运动混合机进行混合,转速30rpm,搅拌30min,得到预混料c;将预混料d的辅料转移至三维运动混合机进行混合,转速30rpm,搅拌40min,得到预混料d;将预混料e的辅料转移至三维运动混合机进行混合,转速30rpm,搅拌40min,得到预混料e。
(3)总混
将预混料a、b、c转移至三维运动混合机进行混合,转速30rpm,搅拌40min;将预混料d转移至三维运动混合机进行混合,转速30rpm,搅拌40min;将植物油微囊粉投入混合机进行混合,转速30rpm,搅拌40min;将预混料e转移至三维运动混合机进行混合,转速30rpm,搅拌40min,得到成品。
(4)分装及包装
将混合好的成品在无菌条件下进行分装及包装。
以上操作步骤均在符合GB 29923《食品安全国家标准特殊医学用途配方食品良好生产规范》要求的洁净干燥环境内进行。

一种成人特殊医学用途全营养配方食品,包含如下重量份的组份:蛋白质类物质200份、脂肪类物质150份、碳水化合物520份、膳食纤维类物质45份、复合微量矿物质2.5份、复合宏量矿物质70份、复合维生素6份、酒石酸氢胆碱6份、牛磺酸0.3份、左旋肉碱0.2份、灵芝多糖1.5份、海藻酸钠1份。
其中,蛋白质类物质包括乳清蛋白30份、大豆蛋白40份、酪蛋白130份。
脂肪类物质是以低芥酸菜籽油、葵花籽油、中链甘油三酯和可食用载体为原料,经微囊化等工艺加工而成的植物油微囊粉。其中中链甘油三酯30份、葵花籽油50份、低芥酸菜籽油25份,其余为可食用载体。
碳水化合物包含麦芽糊精400份、固体玉米糖浆120份。
膳食纤维类物质包括低聚半乳糖25份、低聚果糖20份。
复合微量矿物质包括硫酸铜0.02份、焦磷酸铁0.3份、硫酸锰0.04份、亚硒酸钠0.001份、柠檬酸锌0.2份、碘化钾0.0025份。余量为复合微量矿物质载体麦芽糊精。
复合宏量矿物质包括磷酸三钙12份、碳酸钙14份、碳酸镁4份、氯化钾9份、柠檬酸钾10份、柠檬酸钠15份。余量为复合宏量矿物质载体麦芽糊精。

预混料c:包括复合宏量矿物质(磷酸三钙、碳酸钙、碳酸镁、氯化钾、柠檬酸钾、柠檬酸钠)、低聚果糖、低聚半乳糖;
预混料d:包括乳清蛋白、酪蛋白、大豆蛋白;
预混料e:包括麦芽糊精、固体玉米糖浆。
(2)预混料a、b、c、d、e
将预混料a的辅料转移至三维运动混合机进行混合,转速50rpm,搅拌10min,得到预混料a;将预混料b的辅料转移至三维运动混合机进行混合,转速50rpm,搅拌20min,得到预混料b;将预混料c的辅料转移至三维运动混合机进行混合,转速50rpm,搅拌30min,得到预混料c;将预混料d的辅料转移至三维运动混合机进行混合,转速50rpm,搅拌40min,得到预混料d;将预混料e的辅料转移至三维运动混合机进行混合,转速50rpm,搅拌40min,得到预混料e。
(3)总混
将预混料a、b、c转移至三维运动混合机进行混合,转速50rpm,搅拌40min;将预混料d转移至三维运动混合机进行混合,转速50rpm,搅拌40min;将植物油微囊粉投入混合机进行混合,转速50rpm,搅拌40min;将预混料e转移至三维运动混合机进行混合,转速50rpm,搅拌40min,得到成品。
(4)分装及包装
将混合好的成品在无菌条件下进行分装及包装。
以上操作步骤均在符合GB 29923《食品安全国家标准特殊医学用途配方食品良好生产规范》要求的洁净干燥环境内进行。
实施例4
一种成人特殊医学用途全营养配方食品,包含如下重量份的组份:蛋白质类物质280份、脂肪类物质124.5份、碳水化合物500份、膳食纤维类物质18份、复合微量矿物质2.5份、复合宏量矿物质65份、复合维生素5份、酒石酸氢胆碱4份、牛磺酸0.6份、左旋肉碱0.4份。
蛋白质类物质包括乳清蛋白40份、大豆蛋白90份、酪蛋白150份。
脂肪类物质是以低芥酸菜籽油、葵花籽油、中链甘油三酯和可食用载体为原料,经微囊化等工艺加工而成的植物油微囊粉。其中中链甘油三酯18份、葵花籽油50份、低芥酸菜籽油25份,其余为可食用载体。
碳水化合物包含麦芽糊精300份、固体玉米糖浆200份。
膳食纤维类物质包括低聚半乳糖10份、低聚果糖8份。
复合微量矿物质包括硫酸铜0.026份、焦磷酸铁0.32份、硫酸锰0.04份、亚硒酸钠0.001份、柠檬酸锌0.18份、碘化钾0.002份。余量为复合微量矿物质载体,主要为麦芽糊精。
复合宏量矿物质包括磷酸三钙11份、碳酸钙12份、碳酸镁5份、氯化钾7份、柠檬酸钾10份、柠檬酸钠16份。余量为复合宏量矿物质载体,所述载体为麦芽糊精。
复合维生素包括L-抗坏血酸钠1.8份、dl-α-醋酸生育酚0.5份、烟酰胺0.2份、D-泛酸钙0.08份、盐酸吡哆醇0.025份、盐酸硫胺素0.04份、棕榈酸维生素A0.025份、核黄素0.03份、叶酸0.003份、植物甲萘醌0.0018份、D-生物素0.00028份、胆钙化醇0.0002份、氰钴胺0.00004份。余量为复合维生素载体,主要为麦芽糊精。
上述特殊医学用途全营养配方食品的制备方法,包括以下步骤:
(1)准确称量原辅料
预混料a:包括牛磺酸、左旋肉碱;
预混料b:包括酒石酸氢胆碱、复合维生素(维生素A、维生素D3、维生素E、维生素K1、维生素B1、维生素B2、维生素B6、维生素B12、L-抗坏血酸钠、D-泛酸钙、叶酸、烟酰胺、D-生物素)、复合微量矿物质(硫酸铜、焦磷酸铁、硫酸锰、亚硒酸钠、柠檬酸锌、碘化钾);
预混料c:包括复合宏量矿物质(磷酸三钙、碳酸钙、碳酸镁、氯化钾、柠檬酸钾、柠檬酸钠)、低聚果糖、低聚半乳糖;
预混料d:包括乳清蛋白、酪蛋白、大豆蛋白;
预混料e:包括麦芽糊精、固体玉米糖浆。
(2)预混料a、b、c、d、e
将预混料a的辅料转移至三维运动混合机进行混合,转速50rpm,搅拌20min,得到预混料a;将预混料b的辅料转移至三维运动混合机进行混合,转速50rpm,搅拌30min,得到预混料b;将预混料c的辅料转移至三维运动混合机进行混合,转速50rpm,搅拌40min,得到预混料c;将预混料d的辅料转移至三维运动混合机进行混合,转速50rpm,搅拌60min,得到预混料d;将预混料e的辅料转移至三维运动混合机进行混合,转速50rpm,搅拌60min,得到预混料e。
(3)总混
将预混料a、b、c转移至三维运动混合机进行混合,转速50rpm,搅拌60min;将预混料d转移至三维运动混合机进行混合,转速50rpm,搅拌60min;将植物油微囊粉投入混合机进行混合,转速50rpm,搅拌60min;将预混料e转移至三维运动混合机进行混合,转速50rpm,搅拌60min,得到成品。
(4)分装及包装
将混合好的成品在无菌条件下进行分装及包装。
对比例1
在实施例1的基础上,将配方修改为:蛋白质类物质205份,脂肪类物质223.6份、碳水化合物450份、膳食纤维类物质50份、复合微量矿物质1.8份、复合宏量矿物质60份、复合维生素4份、酒石酸氢胆碱5份、牛磺酸0.5份、左旋肉碱0.1份、灵芝多糖3份。
对比例2
在实施例1的基础上,将配方修改为:蛋白质类物质205份,脂肪类物质223.6份、碳水化合物450份、膳食纤维类物质50份、复合微量矿物质1.8份、复合宏量矿物质60份、复合维生素4份、酒石酸氢胆碱5份、牛磺酸0.5份、左旋肉碱0.1份、灵芝多糖3份、木糖醇2份。
对比例3
在实施例1的基础上,将配方修改为:蛋白质类物质205份,脂肪类物质223.6份、碳水化合物450份、膳食纤维类物质50份、复合微量矿物质1.8份、复合宏量矿物质60份、复合维生素4份、酒石酸氢胆碱5份、牛磺酸0.5份、左旋肉碱0.1份、双歧杆菌三联活菌散5份。
实验例
1、以本申请实施例1制备的产品为例,检测100g产品中的有效成分含量,具体如表1所示。

2、降血脂功效验证
(1)选择50只SPF级别雄性C57BL/6成年小鼠,体重约为20-25g,随机选取10只小鼠作为空白组,给予普通饲料喂养,其余的小鼠均给予D12492高脂饲料喂养,即造模组,所有动物均自由饮水,每周分别从空白组和造模组随机抽取3只小鼠,尾静脉取血,检测TC(总胆固醇)、TG(甘油三酯)判断造模是否成功。6周后造模组动物TC水平约升高为空白组的2倍,视为造模成功。
(2)筛选40只造模成功的高血脂小鼠,随机分为4组,分别为高血脂模型组、低剂量组、中剂量组和高剂量组,每组10只小鼠。另外随机选取10只原空白组小鼠作为空白组,共5组。
空白组和高脂模型组给予等体积0.9%的生理盐水灌胃,低剂量组给予实施例1产品水溶液100mg/kg剂量灌胃;中剂量组给予实施例1产品水溶液200mg/kg剂量灌胃;高剂量组给予实施例1产品水溶液400mg/kg剂量灌胃;在灌胃的同时,空白组给予普通饲料喂养,其它组均给予D12492高脂饲料喂养,所有小鼠均自由饮水,每天灌胃1次,连续灌胃8周,断食12h,眼球取血制备血清。测定血清中总胆固醇(TC)、甘油三酯(TG)、低密度脂蛋白胆固醇(LDL-C)和高密度脂蛋白胆固醇(HDL-C),实验结果如表2。

注:与高脂模型组相比*表示P<0.05,**表示P<0.01。
如表2所示,与高脂模型组相比,对小鼠灌胃8周后,不管是低剂量组,还是中剂量组和高剂量,血清中总胆固醇和低密度脂蛋白均有所下降,其中高剂量组明显降低,有极显著性的差异(p<0.01),同时能够增加血清中高密度脂蛋白水平,可见,本申请制备的产品能够在保证营养的同时,可显著降低血脂浓度。
3、肠胃调理功效验证
随机选取250名临床症状涉及消化不良、便秘、倦怠乏力的志愿者,男女各半,年龄35士6岁。随机分成5组,分别口服实施例1、4及对比例1~3的产品,5~10g/天,每天早晚一次,口服14日检测调理结果,见表3。

由表3可知,实施例1的有效率达到了98%,而对比例1、2的有效率最高仅为76%,同时,实施例4的有效率则仅有64%,由此可知,在对方案中的组分进行了删减或替换后,都将显著影响本发明方案调理肠胃的功效。
最后应说明的是,以上具体实施方式仅用以说明本发明的技术方案而非限制,尽管参照实例对本发明进行了详细说明,本领域的普通技术人员应当理解,可以对本发明的技术方案进行修改或者等同替换,而不脱离本发明技术方案的精神和范围,其均应涵盖在本发明的权利要求范围当中。
Claims (10)
1.一种成人特殊医学用途全营养配方食品,其特征在于,包括以下重量份的组分:
蛋白质类物质170~300份、脂肪类物质85~250份、碳水化合物450~770份、膳食纤维类物质10~155份、复合微量矿物质1.2~3.5份、复合宏量矿物质47~180份、复合维生素2.0~6.3份、酒石酸氢胆碱2.5~19.0份、牛磺酸0.1~1.0份、左旋肉碱0.05~0.5份、灵芝多糖1~5份、海藻酸钠0.5~5份。
2.根据权利要求1所述的成人特殊医学用途全营养配方食品,其特征在于,所述蛋白质类物质包括以下重量份的组分:
乳清蛋白13~43份、大豆蛋白33~110份和酪蛋白73~241份。
3.根据权利要求1所述的成人特殊医学用途全营养配方食品,其特征在于,所述脂肪类物质是以低芥酸菜籽油、葵花籽油、中链甘油三酯和可食用载体为原料,经微囊化工艺加工而成的植物油微囊粉;其中,中链甘油三酯15~53份、葵花籽油30~110份、低芥酸菜籽油16~60份。
4.根据权利要求1所述的成人特殊医学用途全营养配方食品,其特征在于,所述碳水化合物包括麦芽糊精250~780份和固体玉米糖浆70~220份。
5.根据权利要求1所述的成人特殊医学用途全营养配方食品,其特征在于,所述膳食纤维类物质包括低聚半乳糖3~95份和低聚果糖5~105份。
6.根据权利要求1所述的成人特殊医学用途全营养配方食品,其特征在于,所述复合微量矿物质包括硫酸铜0.01~0.05份、焦磷酸铁0.1~0.6份、硫酸锰0.01~0.08份、亚硒酸钠0.0003~0.002份、柠檬酸锌0.05~0.37份和碘化钾0.0005~0.0033份,余量为复合微量矿物质载体麦芽糊精。
7.根据权利要求1所述的成人特殊医学用途全营养配方食品,其特征在于,所述复合宏量矿物质包括磷酸三钙5~46份、碳酸钙5~46份、碳酸镁2~16份、氯化钾3~29份、柠檬酸钾4~40份、柠檬酸钠6~56份,余量为复合宏量矿物质载体麦芽糊精。
8.根据权利要求1所述的成人特殊医学用途全营养配方食品,其特征在于,所述复合维生素包括L~抗坏血酸钠0.4~2.8份、dl~α~醋酸生育酚0.1~0.8份、烟酰胺0.04~0.3份、D~泛酸钙0.02~0.14份、盐酸吡哆醇0.01~0.04份、盐酸硫胺素0.01~0.06份、棕榈酸维生素A 0.01~0.04份、核黄素0.01~0.04份、叶酸0.001~0.006份、植物甲萘醌0.0003~0.0023份、D~生物素0.0001~0.0004份、胆钙化醇0.00004~0.00032份、氰钴胺0.00001~0.00007份,余量为复合维生素载体麦芽糊精。
9.权利要求1~8任一项所述的成人特殊医学用途全营养配方食品的制备方法,其特征在于,包括以下步骤:
(1)制备预混料
预混料a:由牛磺酸、左旋肉碱混合搅拌制成;
预混料b:由酒石酸氢胆碱、复合维生素、复合微量矿物质混合搅拌制成;
预混料c:由复合宏量矿物质、膳食纤维类物质、海藻酸钠、灵芝多糖混合搅拌制成;
预混料d:由蛋白质类物质制成;
预混料e:由碳水化合物混合搅拌制成;
(2)总混
将预混料a、b、c混合后,于转速25~50rpm,搅拌30~60min;再依次加入预混料d、脂肪类物质和预混料e,搅拌混合均匀后,制得成品。
10.根据权利要求9所述的制备方法,其特征在于,依次加入预混料d、脂肪类物质和预混料e时,每种组分均需在转速25~50rpm条件下搅拌30~60min。
