当汉方提取物形成为食物时,存在对舌头的刺激性感觉(诸如苦味和辛味)及其持久性的问题。因此,以其原始味道和原始形式服用汉方药是不舒服的。然而,如果它们的苦味或辛味消失,汉方药就可以大量服用。

项目3.根据项目1或2所述的食品组合物,其包含两种或更多种甜味剂。
项目4.根据项目1至3中任一项所述的食品组合物,其包含糖醇和/或甘蔗提取物作为所述甜味剂。

发明的有益效果

本发明的食品组合物包含作为主要组分的汉方原料药提取物。汉方原料药提取物(而不是单一生药提取物)是日本药典、非处方药(OTC)汉方产品的上市许可标准或者日本、中国过去的文献和其他医学书籍(诸如“金匮要略”和“伤寒论”)中描述生药提取物的混合物。汉方原料药提取物可以以液体、粘性提取物或干燥提取物形式使用。提取物的实例包括通过以下方式获得的那些:根据日本药典的用于制备甘草提取物的方法,用水萃取生药,然后浓缩所得物,并且通过添加特定量的乙醇、水或含水乙醇来进行过滤,然后进行浓缩;以及通过用水或含水乙醇低温萃取获得的那些。
从汉方原料药的可服用性的角度来看,本发明的果冻状食品组合物中的汉方原料药提取物的量优选为0.1至50质量%,并且更优选10至40质量%。
汉方原料药没有特别限制,只要它由用作食物而不是药品的起始材料组成即可。实例包括大建中汤、甘麦大枣汤、甘草干姜汤、桔梗汤和排脓汤。由于本发明的一个特征是保留适量的苦味和辛味,因此可以优选地使用具有苦味和/或辛味的汉方原料药,并且具有苦味和辛味这二者的那些是特别优选的。
例如,大建中汤描述于“金匮要略”(中国宋代临床书籍)。它被认为具有例如增强肠运动性、抑制过度肠运动性、抑制肠梗阻以及增加肠血流的作用,以及抗炎作用。大建中汤通常通过以下方式获得:使用由2.0g的山椒或花椒、3.0g的人参和5.0g的干姜(Zingibersiccatum)组成的生药混合物的粉末形式提取物(有时也称为Mukoi-Daikenchuto),向其中共混入粉末状饴糖(Saccharum granorum(koi),麦芽糖),该粉末状饴糖的量为提取物的量的约8倍。大建中汤通常由质量比为2.0∶3.0∶5.0∶20的山椒或花椒∶人参∶干姜∶饴糖配制。
甜味剂
本发明的食品组合物含有甜味剂,以进一步改善摄入感。甜味剂意指用于赋予食物甜味的添加剂。
甜味剂可以使具有苦味和辛味的产品(诸如汉方原料药提取物)更容易服用。甜味剂没有特别限制,并且实例包括葡萄糖、蔗糖、乳糖、麦芽糖、高果糖玉米糖浆、淀粉糖浆、果糖、异麦芽酮糖、赤藓糖醇、山梨糖醇、麦芽糖醇、还原淀粉糖浆、寡糖、海藻糖、甘蔗提取物、甜叶菊、安赛蜜、奇异果甜蛋白、三氯蔗糖、爱德万甜(advantame)、纽甜、罗汉果(Siraitiagrosvenorii)、阿司帕坦和木糖醇。糖醇和甘蔗提取物是优选的,因为它们不完全掩蔽苦味和辛味;并且三氯蔗糖、安赛蜜和奇异果甜蛋白也是优选的。甜味剂可以单独使用,或者以两种以上的组合使用。甜味剂理想地以两种以上的组合使用。
本发明的果冻状食品组合物中的甜味剂的量没有特别限制,并且优选为5质量%以上,更优选6质量%以上,并且仍更优选7质量%以上;并且优选30质量%以下,更优选20质量%以下,并且仍更优选15质量%以下。
更具体地,糖醇的量优选为1至20质量%,并且更优选3至15质量%。甘蔗提取物的量优选为0.001至0.1质量%,并且更优选0.01至0.05质量%。
按汉方原料药提取物的每一质量份计,本发明的果冻状食品组合物中的甜味剂的量优选为0.01至2质量份,并且更优选0.1至1质量份。
胶凝剂
本发明的食品组合物含有胶凝剂,以用于制备果冻状组合物,从而减少口腔中苦味的扩散并且使食品组合物更容易食用。各种已知的胶凝剂可以用作胶凝剂。由于需要适当的储存稳定性,除明胶以外的胶凝剂是优选的。胶凝剂的优选实例包括角又菜胶、刺槐豆胶、黄原胶、魔芋(konjac yam)提取物、聚丙烯酸、胞外多糖胶、车前子胶、他拉胶、阿拉伯树胶、支链淀粉、瓜尔胶、琼脂、果胶和海藻酸。胶凝剂可以单独使用,或者以两种以上的组合使用。
本发明的果冻状食品组合物中的胶凝剂的量没有特别限制,并且优选为0.01至5质量%,并且更优选0.1至3质量%。
按汉方原料药提取物的每一质量份计,本发明的果冻状食品组合物中的胶凝剂的量优选为0.001至1质量份,并且更优选0.01至0.5质量份。
酸化剂
本发明的食品组合物含有酸化剂,以进一步改善摄入感。酸化剂用于添加酸度,使得人可以容易地服用汉方原料药提取物的苦味和辛味。酸化剂没有特别限制,并且实施包括柠檬酸、柠檬酸酐、柠檬酸钠、苹果酸、乙酸、酒石酸、富马酸、抗坏血酸、葡糖酸、琥珀酸、乳酸和磷酸。酸化剂可以单独使用,或者以两种以上的组合使用。
本发明的果冻状食品组合物中的酸化剂的量没有特别限制,并且优选为0.01至3质量%,并且更优选0.1至1质量%。
按汉方原料药提取物的每一质量份计,本发明的果冻状食品组合物中的酸化剂的量优选为0.001至0.1质量份,并且更优选0.01至0.05质量份。
香料
本发明的食品组合物含有香料,以进一步改善摄入感。香料用于通过添加酸化剂和香料使得汉方原料药特有的气味更容易被服用。可以同时添加酸化剂和香料。香料没有特别限制,只要它再现酸果(tart plant)风味即可。实例包括果味或香辛料香料,诸如柑橘香料(柚子、橙子和柠檬)、果味香料(柑橘以外的水果,诸如苹果、葡萄和桃子)、酸奶香料、薄荷香料(欧薄荷和日本薄荷)、香辛料香料(姜和肉桂)和甜味香料(蜂蜜和糖)。香料可以单独使用,或者以两种以上的组合使用。
当甜味香料用作辛味和苦味很大的食品组合物中的香料时,人们将发现食品组合物在摄入后辛味和苦味更大;因此,需要稍微具有辛味或苦味的香料,并且基于柑橘的、基于薄荷的和基于香辛料的香料是优选的。此外,对于那些含有干姜的汉方原料药,成分的形象与香料匹配;因此,使用姜味香料是特别优选的。
本发明的果冻状食品组合物中的香料的量没有特别限制,并且优选为0.01至5质量%,并且更优选0.1至2质量%。
按汉方原料药提取物的每一质量份计,本发明的果冻状食品组合物中的香料的量优选为0.001至1质量份,并且更优选0.01至0.1质量份。
作为本发明的食品组合物中的汉方原料药提取物、甜味剂、胶凝剂、酸化剂和香料,可以使用市售的产品。
其他
除了汉方原料药提取物、甜味剂、胶凝剂、酸化剂和香料以外,可以将防腐剂添加到本发明的食品组合物中。防腐剂的实例包括但不限于苯甲酸、苯甲酸钠、对羟基苯甲酸乙酯、对羟基苯甲酸丙酯和对羟基苯甲酸丁酯。
本发明的食品组合物通常含有水,并且水没有限制,只要水可饮用即可。实例包括自来水、地下水、蒸馏水、纯净水和离子交换水。
如有需要,本发明的食品组合物还可以包括维生素、矿物质、黄酮类化合物、氨基酸、核酸、脂肪酸、清新剂、着色剂、稳定剂和表面活性剂。
食品组合物
本发明中的“食品组合物”涵盖健康食品、功能性食品、膳食补充剂、补充剂、具有健康声明的食品(例如,用于指定健康用途的食品、具有营养功能的食品和具有功能声明的食物)、用于特殊膳食用途的食品(例如,用于婴儿的食品、用于怀孕和哺乳女性的食品、用于病人的食物)等含义。
本发明的食品组合物的形式没有特别限制。食品组合物可以是半液体或凝胶形式,或者固体形式。本发明的食品组合物的形状没有特别限制。实例包括板、立方体、矩形、椭圆球形、球形、三角形金字塔、四边形金字塔等。
用于制备本发明的食品组合物的方法没有特别限制,并且可以根据常规已知的方法制备。食品组合物可以使用例如已知的生产设备制备。例如,食品组合物可以通过以下方式制备:在合适的温度下将胶凝剂分散在分散介质中,所述胶凝剂是用于将食品组合物制成果冻状组合物的基础;在调整温度的同时分散汉方原料药提取物;将所得物与甜味剂、酸化剂和香料进一步混合;然后冷却混合物以形成凝胶。
用于本发明的食品组合物的容器没有特别限制,只要容器容纳一定量的食品组合物即可。实例包括袋子、杯子、软包、罐和瓶子。
本发明的果冻状食品组合物具有这样的优异性质:易于口服摄入,同时保留汉方原料药独特的苦味和辛味。因此,使汉方提取物可用作食物允许甚至健康的人对其进行摄取;然而,由于汉方原料药独特的苦味和辛味适量保留,因此人们可以服用适量的组合物。因此,使用本发明的果冻状食品组合物使汉方提取物成为食物,这改善了健康的人的可得性,从而有助于实现预防医疗。
实施例
下面参照实施例详细地解释本发明。然而,本发明不限于这些实施例。
样品的制备
使用具有表1所示的配方的汉方原料药提取物,以表1所示的量添加组分,并且适量添加纯净水,以获得100g的混合物。此后,根据常规方法制备果冻状组合物,从而获得实施例1至3和比较例1和2的样品。表1所示的胶凝剂通过组合刺槐豆胶、角又菜胶、黄原胶和魔芋提取物制备。

感官评价
根据下表2和3所示的评价标准,由8名小组成员对获得的果冻状组合物(实施例1至3和比较例1和2)进行关于苦味和辛味的感官评价。结果是以这八名小组成员的评价评分的平均值获得。
“无辛味或苦味”意指没有或几乎没有辛味或苦味的味道,以及在服用多于一个规定剂量时人感觉舒适的味道。“适度的辛味或苦味”意指具有辛味或苦味的味道,以及人可以服用规定剂量但是在服用另一规定剂量时感觉不适的味道。“过度的辛味和苦味”意指人在服用规定剂量时感到不适的味道,而“极度过度的辛味和苦味”意指人在服用规定剂量时由于强烈的味道而令人不快的味道。

感官测试的结果显示于表4中。在实施例1至3中,发现辛味和苦味评分接近1,并且与比较例相比存在适度辛味和苦味。

本发明可以提供一种包含汉方原料药提取物的食品组合物,其中食品组合物易于口服,同时保留适量的汉方原料药独特的苦味和辛味,并且其可得性与汉方药物相比得到了改善。
Claims (5)
1.一种果冻状食品组合物,其包含汉方原料药提取物、甜味剂、胶凝剂、酸化剂和香料。
2.根据权利要求1所述的食品组合物,其中所述汉方原料药是选自由大建中汤、甘麦大枣汤、甘草干姜汤、桔梗汤和排脓汤组成的组中的至少一种成员。
3.根据权利要求1或2所述的食品组合物,其包含两种或更多种甜味剂。
4.根据权利要求1至3中任一项所述的食品组合物,其包含糖醇和/或甘蔗提取物作为所述甜味剂。
5.根据权利要求1-4中任一项所述的食品组合物,其中所述甜味剂的量为5质量%以上。
